To the Owner- You damaged something that genuinely mattered to me. These knives carried me through my time as a professional chef and were returned in a condition that permanently altered them. I cannot replace the history attached to these blades. The refund does not change that loss. I brought several MAC knives in for sharpening and was quoted a two-week turnaround. They were ultimately held for over four weeks. During that time, I was told the delay was due to the owner's daughter being in town, which I understood and accommodated. Two days before pickup, I was told the knives had barely been started. The following morning, I received a call saying the work was complete. Later, I was told the sharpening had all been done the day before pickup, despite the knives being held for over a month. While the edges were sharp, the knives were returned with numerous dark, pepper-like surface marks across the blade faces, particularly near the heel and along the flats. These marks and pits were not present when I dropped them off. Washing with soap and water did not change them, and they appear permanent. I am a professional chef and take meticulous care of my knives, so changes in condition are immediately noticeable to me. Given the extended delay, the condition the knives were returned in, and how the concern was initially handled, I have lost confidence in the service. I had previously left a five-star review, which makes this outcome particularly disappointing. Took my Ken Onion Shun that I had for over 10 years to Seattle edge. The chef knife was in DIRE need for repair. It had suffered through a professional kitchen. Once somebody dropped it and broke the tip off. I was furious. I was really hesitant about getting the knife resharpened at any rink a dink place. Just amazing service and quality craftsmanship. Although it took nearly 2 weeks, my knives came back sharper than when originally purchased. I only use Japanese knives, and they use traditional techniques and whetstones. Knives that had some nicks on the edge were completely re-profiled. Ok, so the fact that this is my first review after using yelp for over 6 years says a lot. You need to know about Seattle Edge. I shave with a straight razor and get them honed by Albert, the owner, once a year. No one gives the same amount of attention and care into sharpening knives in Seattle as Albert does. Just go ahead and ask him what he does to your blade. He will go through each step with details that will reveal to you that he is a true artisan who is passionate about his craft. I was close to bringing my straight razor somewhere else closer to where I lived, but once they told me their methods and saw how they handled my blade, I knew they didn't understand as much about straight razors as Albert did. I very apologetically asked for my razor back and went straight to Seattle Edge. Albert is also very friendly and provides excellent customer service. I always get my straight razor back faster than what the other places say they will, so that really shows you how hard he works. We had an expensive set of Tojiro Flash Japanese knives that had dull and rolled edges as well as a small chip in one blade. Albert used traditional Japanese whetstones up to 8,000 grit to restore these knives to better-than-new with a gleaming mirror-finish on each blade edge. Now our knives are sharper and will hold their edge even better than when they were new! I've had various kitchen knives sharpened by over half a dozen different folks in the past decade. I've never been very happy with what any of them did to my stainless Henckel Four-Stars, and so I've ended up upgrading and buying new, better knives over the years. When I took my old Henckels and a cheap Victorinox to Albert, he did the unthinkable. He brought them back to life. It's not an exaggeration to say that they were much, much sharper when he finished with them than when they were brand new, and have held their edge better than ever before. My $20 Victorinox cut like a $300 knife when he was done with it. Because I was so happy I took in a Kershaw pocket knife I'd beaten to hell and a pair of old pre-WWII Sabatier carbon steel knives. He worked his magic again and they are all sharper than I could have imagined. My Takeda Gyuto is languishing on the block because all I want to use is my newly sharpened knives from Albert. Albert, is AWESOME!! His location is just perfect for a knife sharpener! He knew bad reminds me of going to visit Dexter or something. I've been a chef for 20years, but I've Changed jobs so don't work in the kitchen every day. But I still love to cook at home and still have my huge knife collection. Albert knows his steel, how to bring out the best in your steel and is happy to share his knowledge with you! I just brought my everyday Wustoffs because I just couldn't get that edge back using my own water stones. Man, they are almost as sharp as my Japanese steel. He also was able to show me a few techniques to keep my Japanese steel maintained by stropping so I wouldn't have to sharpen it as often and thus reducing the amount of steel on the knife. Thank you so much, Albert! In addition to his expertise and craftsmanship, I also appreciated that I could bring my knifes in directly to his shop and his turn around was very fast. Albert eventually sharpened every knife in my house, including a rusty old cleaver from the 1930s and a cheap cooks knife I bought in the Phillipines while I was in the Navy. Both came back brilliantly polished, razor sharp and useable. He had done such a brilliant job with my other knives that I gave him those two just to see if he could resucitate them, which he did. My current kitchen knives were a bit damaged and he made them sharp enough to use for shaving, as well as providing advice for keeping them sharp. I have known about Seattle Edge for years but just recently became a customer. I was on a road trip from Texas and decided to stop in to see if Albert was busy and if he could fit my knives in. My plan was to leave them with him and hit the road again to go home. I guess my timing was perfect as a slot had just opened up and he sharpened both of my Benchmade knives in less than 1 hour. They're not scary sharp, even sharper than they were from the factory. If you know Benchmade, you know they make very good steel. Albert is incredibly passionate about knives and we spoke for about 15 minutes afterwards about knives, he even showed me the qualities of various knives he had in the shop and I learned a few things that day. Albert is a pro. His craftsmanship is the reason I come here, but on top of that his rates are reasonable, he values his customers, and he is friendly. I had a Miyabi Chef's knife with a corroded edge that had to be completely redone. He stocks small batches of handmade knives from Japan that are very reasonably priced, as well as supplies for sharpening at home. His work does take time, but he lets you know that up front.
