Chef Robert brought grandpa's Kikuichi deba knives back to life! (Yes, it's the same famous kikuichi that you often hear as swords in anime!) They were dull as butter knives when they came down to our generation, so we wanted to get them sharpened and in good working order. Japanese Debas are also pretty rare stateside, they're for cutting through meat or fish, and ours are angled to one side (like scissors), and we didn't know where to turn. We'd tried to marathon YouTube videos on knife sharpening but we were just kinda scratching them and it was clear that we needed a pro. I don't know what sorcery Chef Robert used, but the knives are super sharp. He was also very thorough in answering all of my partner's questions about how to care for knives. Despite being so knowledgeable, he was super friendly in answering all of our noob questions. In Japanese we have this phrase called "shokunin no te" which means the hands/touch of a craftsman/artisan. That was my first and lasting impression of Chef Robert. I can't recommend him enough. Didn't realize how bad our knives were until this nice man spent several hours making them like new. Tried one out on a tomato which is my test and it cut so easily. Amazing. I was most impressed that he was able to salvage my paring knife that had a huge chip (from leaving it in the sink and my partner helpfully throwing dirty pots in the sink after dinner). I decided to give Chef Robert a go instead of using my regular knife guy and I must say I am so far impressed with his skills. My knives went from dull to extremely sharp and as a bonus he comes to you to get it done, making it very convenient. For a "trial" I had over 10+ knives and scissors that needed sharpening and this included knives I added after making the appointment not knowing he scheduled time based on # of knives needing sharpening. This was my mistake in not updating him on the number of knives until he arrived, and originally said he might not get to all the knives, but he made it happen. This is a plus in my books, but lesson learned in having an accurate count of knives when making an appointment. This was our second year having Chef Robert come out to sharpen our best knives for my spouse's birthday. A cook has to have good knives that are sharpened properly. This time we threw in a pair of kitchen scissors that were in rough shape. They barely cut anything anymore. He got them cutting thin paper beautifully and I was impressed that he was able to tell that I had tried to sharpen them myself a time or two...tee hee...not very well. As a culinary school grad, my knives are like my babies. Chef Robert and his "supervisor" Biscuit sharpened my and my neighbors' knives a few weeks ago. Between all of us, there were about 15 knives, and we are all very satisfied! I was a bit embarrassed to bring some of the cheaper knives my fiancé bought from Target a long time ago, proudly printed "stainless - China" haha... but he sharpened those too, as well as my almost 20-year-old Wüsthof 10" which now cuts as if I bought it yesterday. He fixed some damages done to the blade (one part was bent) too. He is like a Doctor for all of your knives that need some TLC! The nice thing is that he comes to you, instead of going to a location while fighting traffic, finding parking, drop it off, and repeat that for a pickup.
