The chef and owner Kamal came by our table to thank us for coming in and tell us about a jazz club called Cellar 65 they have downstairs where they offer different cuisine experiences throughout the year. What they should be doing is turning the heat down and baking longer. Every oven is different. Experiment until you get it perfect and then do not vary. The top should be golden.
