Can't believe this spot had no Yelp page. It's good enough for me to use my old dead Yelp account to make one. Way better food than I'd expect from a food truck, and the pricing is on point too. Tried the red beans and rice and the "cheesy" grits and would get both again.

The Sauvage truck came to Improper City last Friday and boy am I glad we tried it! It was a cold and windy day and the Shrimp Po'Boy and the Bayou fries absolutely hit the spot. Everything was well seasoned, crispy, and came out piping hot!

I was desiring some Crawfish ettouffe and they were completely out of that, so i settle for the pasta monica with shrimp, which looked nice, but was way too salty to enjoy. I tried to push through but if I had continue to, it would have burned my tongue. The po boys was great 10/10 the fried catfish was 10/10. fries was 20/10 perfect crisp and softness fillings. hurricane drink was a nice strong & sweetness, a ball was drop when salt was rim vs sugar, but nonetheless it was close to the best. I got it to go (UberEats if being honest) and the to go container was packed to the brim with bourbon chicken over rice with two sides. I chose the spicy noodles which are spaghetti with a spicy sauce (maybe ketchup based) and cabbage. They were both very tasty and the cabbage gave the plate a semblance of health (does have Vitamin C). The chicken is ridiculously good cooked grilled and charred. The sauce from the chicken gets onto the king sized bed of rice and is just divine. One portion will last for two meals in most cases. Can't wait to go back.

I'm going to have leftovers at least for the next few meals. My total came out to around $28. My boyfriend got the same thing as me except he got the cabbage as a side. Crawfish was juicy though and not too tough to peel. I ordered some boudin and the links were a little pricey at $7 for about a 6"-8" link. I believe it was smoked as it was on the drier side. The flavor was there, but could use some more jalapeño and parsley in the filling. All in all, a decent place for cajun seafood in an area that lacks accessibility for it.
