After ~20 years with an Ilocano family always around traditional Filipino and Hawaiian foods, Fil Up is an extremely nice detour from the traditional Filipino dishes into a mouth-watering binge of flavor that we didn't expect, didn't know we needed, and now will continue following. The Pork Belly Sliders have a perfect balance of spice to flavor that made us want more until we tried the Sisig Tacos, which are easily our favorite with the right amount of crunch (without being overdone). It's difficult for some people to enjoy Sisig, but even my non-Asian friends loved these and we ended up getting two more orders of them to share between us. This food truck obviously knows how to take traditional Filipino dishes that people might not like and create something that everyone will enjoy! Being an adobo traditionalist that's very picky with the flavor, I have tried many people's adobo over the past 2 decades and found that I typically only like mom's. So, when my friends ordered the chicken adobo plate, I wasn't planning on having any. When they liked it, I tried one bite and was shocked, then tried again to make sure it wasn't a fluke. It was slightly different than mom's, then my eyes widened as a thought crossed my mind: I actually really enjoy someone else's adobo! The Mac Salad is extremely tasty, beating a fan favorite in Vegas and 2nd only to a Hawaiian comfort food staple. The lumpia is what I came up calling Shanghai since it's the smaller variety. The chef must put a lot of love into these because each and every one is uniform, tight, and filled with delicious flavor. I like that they serve their own homemade sauce on the side for the extra balance, a great addition every few rolls. We also tried their Ma Loko Moco, a tribute to the Hawaiian favorite. The best part: they drown it in gravy! Mo' sauce, mo' betta! This is another good flavor twist, but come hungry if you want to try more than just this plate because it's filling. Last, but certainly not least, their mango sago was AMAZING, especially because it was so hot outside. Sorry (not sorry) no picture because it was so hot we each devoured our dessert. In short, it was refreshing and very yummy...a must buy! The bar is so nice, and I'm not sure there was even a bar before. This is definitely one of the better bibimbap I've had in the U.S. The flavors combine perfectly. The kimchi and gochujang were generous. The rice is just slightly crispy every couple bites as long as you mix right away. If I had to complain about something, the texture of the bulgogi could've been even better. The wings are fantastic. Sometimes, the drumette part gets dry, but these were still so soft and juicy. I also got to try the tom kha. Obviously, it's not that spicy, but I found the creamy flavor to be really well-tuned and addictive. A very pleasant surprise. Five stars.

They wrap it in banana leaves and then thin tinfoil before they steam it. The masa got mushy 'cause I drenched it in salsa, but that's on me, and it was still spectacular. The tacos really shone through, too. Huge flavors on the pork, nice fresh onions and cilantro, and plenty of juice in the lime wedge. It's clear that everyone here loves serving good food that they would want to eat themselves. Best of all, I was out the door for 3 items plus a pop for $14. Not many places are running prices like those anymore.

Pretty much the same interior, no overhead music, and straightforward table service. There were three others dining onsite, but also later overheard phone orders taken followed with brisk takeout pickups. They also have the capacity for catering with product, prices, and serving pan sizes posted on the wall. The Homie ordered the loco moco with overeasy eggs, plus their standard cheeseburger. He was pretty happy with the outcome. Consistent to his previous experience, but also took note of the quality and reasonable cost for the cheeseburger. I opted for the laulau plate which came with the requisite two scoops steamed rice and one scoop mac (Hawaiian style macaroni salad) with a sizeable laulau. I unwrapped the outer ti leaves and cut into the taro leaves (steamed like spinach) to reveal succulent pork and tender butterfish inside. This was great with a little added shoyu. Spot on delicious! The ice water also hit the spot. Perfectly chilled without any aftertaste from a pitcher. None of that tepid water in a stoppered top glass bottle or carafe. Refreshing!
