The ingredients are pretty good, they have lamb, lettuce, onion, all of the usual things you would get in a salad. I like these ingredients but only a couple I don't use, these are the jalapeño and the beetroot I am not a big fan of these two ingredients. But even though these ingredients I don't use, the food is really good quality and always taste amazing, I would recommend this restaurant.

Lebanese aromas of hommos, falafel and grilled eggplant waft through the air, beckoning visitors in to the restaurant that is wall-to-wall packed with people on weekend nights. The cozy, one-room eatery has a convivial vibe, with lots of happy chatter amid the delicious smells. There's also some sparse patio seating, as well as a little bar area near the entrance. Make a reservation on weekend nights to get a seat right away. When I went there a couple weeks ago, it was only about a 10-minute wait, but I watched as parties continuously walked in all night to get their fix of the tasty offerings this restaurant features. It was easy to see why this restaurant, which underwent renovations this year, has been going strong since 1976. I was greeted immediately by owner/chef Fadi Constantine, from Beirut, who had a giant smile and mingled with tables throughout the space. The BYO menu (you can bring wine only) is full of dozens of shared plate entrées and larger mains, and I'd recommend ordering a bunch of smaller plates to try for the whole table. I could get a whole new order next time I go -- everything I had was delicious, and there were so many more mouthwatering dishes I can't wait to try next time. I started with the hommos ($7 AUD), which came with a thick stack of pita bread and was the perfect thick and creamy consistency. The bread was soft, not soggy, and the starter was really filling. The falafel ($12) was another classic and stellar choice, drizzled with tahini and served with pickles. The patties were thick and moist. I loved the generous topping, and everything went well together. Haloumi is always a must-have in Australia, so I was delighted there was a haloumi dish that came with another one of my faves, kalamata olives ($14). Wrap the haloumi in pita, and it's heavenly, or eat it on your own, which I loved. An order of batata kezbarah ($12), diced potatoes with spices, lemon and garlic, perfectly rounded out the meal. The dish was filling, and I loved the Lebanese spices that covered the potatoes. Pair your meal with a speciality cocktail, beer, cider or glass of wine -- again, there are dozens to choose from. Besides the menu that was a knockout with everything that was ordered, the service was swift, attentive and friendly. You really feel valued and at home in the restaurant, which made for such a fantastic experience.

I went into Calibrate mainly seeking a public restroom, a tourist lost in Manly, but I came back when I spied their Finca la Bella. A gentleman working spotted my interest in the beans and offered to make my partner and I a fresh batch of hot coffee using the beans. The notes were amazing--white nectarine, honey, and chamomile--truly a well-balanced cup of coffee. My partner who doesn't even enjoy coffee loved it black. I enjoyed my conversation about their methods and sourcing of beans and appreciated his generosity. If there were any coffee place I'd tell you to stop by in Australia, it's here. The vibe of Calibrate was a clean, minimalistic coffee shop. The aesthetic is pleasing for pictures; from the latte art to the cups to the very machine that produces your coffee. Staff is well-informed with their coffee knowledge as well as accommodating. When I come to Australia again, this will be on my top places to revisit.

Inability to manage the tables (which includes basic clearing away of finished meals and coffees) means that in the space of 30 minutes I watched 4 groups of people give up and go elsewhere. That would have been 13 meals/orders. Next time, clear the tables and inform people wasting time that there are other people queued up and waiting to dine. If I was the owner I would be very disappointed with 3 staff sitting around, chatting, and customers going elsewhere because of basic tasks not being done. A quick review of your dockets for Saturday 12/09/2020 will likely show a pretty meh/average day.

Shhhhh The weather was terrible. Water was falling inside and out but we weren't put at that table ;-) The place was very busy as they also do a deal with the theatre next door and quite a few of the nearby restaurants weren't open. Our meals were great and even the macchiato had improved from the last time I was there. Our waitress was excellent, with a sense of humour too. Part of our entertainment was a large group had ordered a whole pig...very cool..then proceeded to take selfies with it before eating it. It was a very interesting meal.

This is what I had (or tasted from others in my party) on the night. Let's start with what I thought best to paint the restaurant in the kindest light: Dessert: Basil panna cotta with fresh strawberries. The taste and texture of the panna cotta were both gorgeous. Taste balance... fantastic. Loved the refreshing basil flavour in the panna cotta and it was an awesome idea to consider the ingredient. Dessert: White chocolate creme brulee with a dark chocolate mousse with berry sauce. The tastes went together perfectly - particularly between the berry sauce and the mousse. In fact both desserts we ordered were well worth the visit. Entree: Lobster tail cooked at a constant 50 degrees: the soup could be a little more acidic, and personally I prefer that soup to be served a little warmer. The lobster, taste-wise was ok, but the texture was good. Entree: Snapper chowder: the taste of the soup was fine and held its own. The only comment I had is that the soup could have held better on the spoon - meaning that it could be a little thicker by being creamier, and a creamier flavour would compliment the fish taste better too. Entree: Crab spaghettini: good crab taste, but could do with a little more meat for a dish at a fine dining restaurant. Main: Pork belly in a bed of pickled red cabbage: the cabbage tasted great, the pork was juicy... but, the crackling should be a lot more crumbly. Something achieved with more prickling of the skin. I liked the white, almost lemon-buttery fennel puree - along with the pickled red cabbage they balanced out the fat of the pork belly. Main: Seafood Bouillabaisse: Tasted alright but... I was expecting a little more wow in a dish at a fine dining restaurant. Main: Corned beef: wasn't my favourite to be honest. But I won't comment much because I don't exactly consider myself to be a corned beef connoisseur. If this was an "interpretation" of corned beef then I'd probably expect something quite different. Atmosphere-wise, it was great but possibly bordering on being quite loud. But that's not something the restaurant management could fix, perhaps try putting on some jazz music to temper with customer mood as they enter? But I won't go further because I don't really know. Staff attentiveness and friendliness was fantastic.
