One of the most unique is Tocabe, a Native American-owned fast-casual restaurant specializing in Osage cuisine. Open since 2008, Tocabe takes a page out of the Chipotle playbook, offering design-your-own entrees with local ingredients and Indigenous preparation styles. My fiancee and I were sad to miss out on the original Tocabe location, but we fortunately were able to swing a visit to the Denver International Airport outpost prior to a flight out of Terminal A. This brightly lit food stall features a deep purple color palette against a greyscale background of patterns and textures. The menu is illustrated across multiple colorful flat screens. Peer across the glass divide to see a swath of mix-and-match entree components. The diminutive kitchen windows offer a glimpse of staff crafting fry bread to order. We visited during weekend dinner and faced only a short wait. We opted for a Wild Rice Posu Bowl with Braised Shredded Bison, a cup of Iko's Green Chili Stew, and a cup of Wajapi with a side of Fry Bread. The entree was reminiscent of a Chipotle burrito bowl in composition and quality. Broadly, I was surprised that most of the components were cold. The bison reminded me of a saucier but less salty version of pork carnitas, and the Chili Beans were a more flavorful upgrade over either black or pinto. Of the optional toppings, I was most impressed by the flavorful Sweet Corn Salsa, while the others were forgettably standard. Surprisingly, the fixing-heavy stew was a hearty, chile-forward hit. The wojapi, served chilled, reminded me of sweet berry pie filling; it paired perfectly with the piping hot fry bread, which fell somewhere between pita and funnel cake. The service was efficient, but the location was out of many topping options. Further, the pricing was opaque; some toppings were complimentary, while others incurred an upcharge (and we didn't know which until after they were added to our bowl). Our total charge surpassed $40, but the portion and price felt reasonable by airport standards. While I wouldn't go out of my way to visit Tocabe in Denver proper, the airport location was convenient and generally satisfying; I'd return for a cup of stew if I ever face an extended Denver layover in the future.

This did not disappoint! Charlotte and Juliana helped me with my order and all of the many substitutions to make sure nothing had dairy or eggs. I was even able to speak with the chef so was very nice! All in all, the food was good! I especially liked the tuna bowl which I turned into a salmon bowl and the lobster! It was a bit pricey but I expect that from a restaurant at a hotel and connected to the airport.

Food took a while to come out. The burger was almost like a hokey puck, tater tots over cooked and almost like small wooden logs. But... the bartender was nice. It's a bit slow, almost gloomy place. So many empty chairs at the bar. Maybe not the best place to have a long layover, or maybe it was a fluke.

The salad came with tomato, cucumber, red onions, garbanzo beans, romaine, pepperoncini vinaigrette, and fried pepperoni. Even though it wasn't my first choice, it was still very fulfilling and packed with different flavors and textures. Adding the grilled salmon made it even more satisfying and turned it into a complete meal. I really enjoyed the pepperoncini vinaigrette, and the fried pepperoni was an interesting touch that made the salad stand out from your typical airport meal. I was disappointed that I couldn't try the Brussels sprout and bacon salad, but I was happy with what I ordered. The atmosphere was comfortable and inviting, and the location near the C Gates makes it especially convenient when traveling. Overall, Bar Dough was a nice surprise for airport dining. So after my husband ordered a $23 sandwich and a beer, I bought a burrito to go from the adjoined restaurant. When I came back over, the host stared at me but said nothing. I sat down and watched the host go talk to the server before the server came over and said they did not allow "outside food" due to being a health code violation. So I sat with my wrapped burrito while my husband ate lunch. After seeing staff from the adjoining restaurant go into the kitchen next to where we were sitting, I asked the server about it. He informed me that both restaurants had the same owner/management. So I asked why there was an issue with bringing my wrapped food over and he snarkily replied, "Are you kidding me?" And then said, "I don't make the rules; I just enforce them." He literally could not explain what the violation was and offered no one else (I.e. a manager) to help answer the question. On the food side, the Italian Hoagie was just okay so I would skip Bar Dough for a meal and go to the Mexican spot next door because the burrito was (eventually) delicious. Staff at Mister Oso was friendly as well!
