Roots Gastrohub is officially on my list now I first stopped in for breakfast and tried the bison burrito with Rowdy Red salsa, green chilis , and mushrooms because I love me some shrooms. They are straight-up skilled at breakfast burritos. The eggs were cooked perfect -- just enough runny yolk magic -- and yes, I'll always pick runny yolk. I also grabbed Tyler a bacon burrito, which of course I had to "quality control" sample . Tasty too. You really can't go wrong either way. Then after hearing all the comments about their burgers, I had to swing back by downtown Grand Junction at 4th & Colorado . I went with the Tailwhip Bison flat-grilled burger and added jalapeños because, let's be honest, jalapeños make just about everything better. The burger did not disappoint -- great flavor, and the added egg was top notch. The spicy tots were also on point -- crispy, hot, and the perfect side Shout-out to Matt as well. Super nice and great customer service Breakfast burritos and burgers? Yep, Roots is definitely worth the stop. This is such a cute place for coffee, breakfast, and lunch! We got breakfast burritos with bison and grilled onions added, and shared a Cuban coffee. The burritos were huge! I was extremely stuffed after finishing mine, but it was so delicious that I kept on eating until it was all gone. The ingredients were all high quality, even down to the tortilla. I love that bison steak is an option to be added, and it was not tough. I chose the tomatillo salsa option and it was really yummy. The Cuban coffee was more of a brown sugar latte, not really a true Cuban coffee (my fiancé's family is Cuban and we've had plenty of real Cuban coffee in Miami) but it was still delicious nonetheless. The service was extremely friendly and also quite fast. The person working the counter to take orders was also bringing our food and drinks out. The ambiance was really chill and I love how much seating there is on the patio. I appreciated the shade at the large picnic table. It was an overall really lovely experience eating here. read more

Love the atmosphere! Very cozy and clean, service was wonderfully friendly and accommodating. My partner and I were passing through on a road trip, tired of gas station food and wanted to sit down for a real meal. We both got a BLAST sandwich and a tea latte. Our meals were so good that we ordered two more sandwiches to take on the road. I have a handful of food intolerances that make eating out difficult, but their menu made it easy with lots of options to choose from and very attentive, skilled chefs. I'm from Texas and we love our breakfast tacos. So when I saw the ingredients in their breakfast burritos I had to try one. Now BBQ with eggs in a burrito has to be done right. I'm not saying it was the intention of these guys to create a Texas speciality but they did. Super good. I got my breakfast burrito with pulled pork, potatoes, and eggs. I had the green tomatillo sauce inside and the red sauce on the side. The red sauce is on point. The burrito was super freaking yummy. Highly recommend you try it. read more

Stopped in for breakfast and coffees. We tried a latte and the mushroom tea blend! Both were delicious. The mushroom tea has a bit of a cinnamon taste, and in my opinion was much better warm than cold (although they do offer it either way). The latte was great and one where you could actually taste the espresso even with the addition of the milk & flavor. We got a breakfast burrito and a bagel sandwich. They have a variety of protein, cheese, and other topping options that you can build your own to your specific taste/style. They also did offer vegan options for those who prefer to do without animal products! Both the drinks and food were out quickly and served without styrofoam packaging! Yay! We ate out on the large patio area, they have a massive table that looks like it belongs to a Viking family--pretty cool vibe. Although they did have other seating too if a giant's table is not what you're looking for. The staff were incredibly friendly, and helpful in making our sandwich/burrito choices. I stumbled upon this place by accident and decided to try into for lunch. It's tucked away sort of in an alley connected to the back of a bike shop. It has super cool industrial vibes with plenty of seating indoors and outdoors. You order at the counter and they'll bring you your food to your table when it's friend. I got the bison cheesesteak and it was yummy! The meat was tender and ingredients were fresh. The guy working there was super friendly and helpful. I'm excited to try more of their menu. The hours are limited but this is a great casual breakfast or lunch spot right off Colorado Ave. read more

Not impressed. Roots is basically a food truck without wheels. 95% of the seating is outdoors, 5% is under a roof open to the outdoors. AFTER paying for two sandwiches we were told our order would be ready in 30 minutes. (It would be nice to know that before payment.) When asked for water, the cashier pointed to a water dispenser saying we could fill our own water bottles, or buy a bottle of water. A couple of dogs were walking around. Overall it is hard to call Roots a restaurant. read more

Super cute spot! The outdoor patio area was lovely, but we sat inside due to the cloudy skies. The gravel floor interior is a little bit inconvenient with the type of stools they use at their tables, they kind of tilt side to side depending on how you're sitting. Their menu is very reasonably priced! The avocado toast was great. I also ordered a london fog latte. I ended up sending it back to get extra vanilla syrup added, and then it was superb. Our server was so friendly and attentive. He was able to explain different menu items and gave us some background information on the restaurant since it was our first time visiting. Not super busy. People tended to take their food and drinks to go, but there were a couple other groups seated. That being said, there was practically no wait time as far as placing and receiving our orders. read more

I'm bummed I didn't take any pictures, but met my family here on Saturday morning at 7:30am because the coffee shop on Main happened to be closed. Lucky us, because it gave us a chance to check Roots out and enjoy their vast outdoor area while sipping on a few different drinks. The group of us ordered an iced mocha, a chocolate milk, drip coffee and an iced vanilla latte. The bill for 3 of those drinks was $9, which is very reasonably priced. Their outdoor space is also incredible! They have a bunch of high tops, a few tables, a giant community table that can seat a very enormous party. On top of that, they have games for the kiddos so the adults can enjoy their time there too. They serve food and coffee in the AM and beer and such as the day progresses. The outside is nicely shaded with lots of umbrellas and coverage to stay cool and out of the direct sunlight. read more

Love the vibe, decor and off course the food which we went there for. It's behind a bicycle store which runs by the same owner. The smoke salmon and bison cheese sandwich is savory, made with fresh ingredients. The owner is personal, he's the main server and he engaged with us. Highly recommended. read more

Matt the owner was amazing explaining the story and the passion behind has for his businesses and GJ. Ariel helped us navigate the order and all the menu. She was so knowledgeable and passionate about what they offer. Ok- the food. We went for breakfast and got two of the sandwiches and - a margarita pizza. All the flavors and freshness of the food was perfect. Bread and beagles were on point and Ariel's suggestion of the salsa was perfect. It to hot but just right. We will be back!! read more

We were passing through Grand Junction and were in search of a place with some good vegan options. Not only did this place have countless vegan options to choose from, Matt (maybe the owner, not sure) was so helpful and accommodating with all of our many questions and vegan requests we had. We've been to plenty of places where asking for vegan options/modifications feels like an inconvenience for the establishment, but this was not like that at all. Matt was so nice and helpful, and the food was truly incredible. Exactly what we were all looking for! We had vegans and non-vegans in our group and everyone was happy with their choices. The food was awesome! We had vegan versions of the breakfast sandwich and the breakfast burrito and were very happy with both, very satisfying. Service was good and the whole vibe is a bit quirky. Everyone is so kind and inviting! The environment is chill and the food is even better! Oh and the coffee..... eveeeeen better :) I love going in the morning before work for a everything bagel w avocado and sea salt and a iced vanilla/ lavender half sweet oat milk latte!
