The mozzarella--although not Italian buffalo de mozorella with its heritage from Campania-- had the right touch of mild flavor accentuated with the balsamic glaze drizzled over the top. The wood fire added a slight touch of smokiness in the thin, wonderfully stretched, dough. I can only describe the dough as perfection.

I ordered two cachete (cheek) tacos, and loaded them with lots of pico de Gallo, jalapeños, limes, cabbage and carrot slices. The cheek meat was a good replacement for the cabeza meat I usually get. It was so good that I returned for another taco, trying the barbacoa for my third taco. The meat had a bit of a smoky flavor and had a great taste. It made for a great quick lunch. I'll definitely support this new addition to Bountiful's culinary wasteland.
