hamachi collar

High highs and some misses at Regards. Definitely some bold dishes and some really worked, some were trying far to hard but were still "engaging" even if they weren't "delicious". Very chef-y menu and descriptions, felt like it needed a bit more restraint. I don't think every restaurant has to have a stereotypically accessible menu, and there's a place for somewhere that tries bold things executed with skill and balance but a couple of the dishes were over-complicayed and seemed ot be about showing off the skill rather than the careful balance of a small number of well chosen ingredients. Telling that the star of the show was a simple quesadilla and the hamachi collar which were probably the most simple dishes we tried. Service was good if a bit aloof. Ambience was nice. All that said, it was a very good meal, but for the price and the aspirations it was a step below perfection.

Small restaurant with a menu that changes constantly. Their fusion food is amazing, fresh ingredients and techniques. Food was flavorful and interesting. Service was excellent. I highly recommend to get a reservation.

Actual proof

So. I made a reservation for NYE and ended up having to cancel. When I made the reservation I read all the fine print and it stated in plain English "No-shows or cancellations less than 48 hours in advance may be subject to a charge of $0.45 per person." Then when I called to cancel, they charged me $45 PER PERSON! It cost me $90 to cancel when that was written nowhere when I made the reservation. I visited the reservation app on NYE day and they HAD CHANGED THE FINE PRINT TO REFLECT THE $45 per person. It's just such a terrible way to conduct business and it's beyond shady. I'm going to tell everyone who will listen about the terrible way that they conduct business. I have the screen shots from the day I made the reservation to reflect the $.45 cent cancellation fee (which I added to this review). Businesses like this don't deserve to operate.

Oysters.

Highly recommended by my date, thus it was settled. The plates are smaller and mostly designed for sharing it seems, tapas style. Yes, it's a bit pricey for what you get but it'll either be worth it or not worth it. First off we started with oysters. They have a lot of accouterment which added a nice sort of spiciness, perhaps counteracted by the ice shavings also put on? I think the ice was bit too much, but the flavors were there. The waygu razor clam tartare was absolutely to die for. It comes with really thin cracker-type stuff, falling apart in my hands like the papyrus scrolls. The combination of the raw fish, the meat, the spices... it was heavenly and worth the high price. I could have just ate a bowl of it and been happy. I was excited about the duck hearts. I liked the sauce and the rich iron-y flavor, but I thought they were slightly tough and rubbery. The date agreed but said the last time she tried them they were tender, so could have been an off day or an off duck. Still, this is the place I would definitely come back to on the strength of the tartare. Lots of the dishes looked wonderful and if you can spend a few bucks, then I would certainly recommend this place at least once.

This place is great. What a nice and refreshing change from what you usually get from New England fine dining. It was kind of a Mexican/Southwest inspired, small plate, but not exactly tapas offering. Everything was shareable. Can't wait to go back and show this restaurant to friends that haven't here yet. Atmosphere was really cool, too, and staff were very nice.

Ridiculously good corn icream w/ dulce de Leche

We felt so lucky to be in Portland, Maine when Bon appetit announced Regards as one of this years top 50 restaurants so we made a reservation right away. The restaurant does not have a lot of seating so I'm glad we got a reservation cause there would've been a wait, it was hopping! We ordered drinks & knew what we wanted so we ordered right away & everything came spaced out but pretty prompt. We got the margarita & caparinhia for drinks, then ordered oysters, scallop ceviche, tamale, duck hearts, & hamachi collar. Everything was really good & presented beautifully. The sauce that came w/ the duck hearts was really good but it was spicy. I think the tamale was our favorite. The scallop ceviche was really fresh & had a Smokey flavor, we both thought it could use another texture, a crunch of some sort, the portion was big too so we just got a little tired of the texture. Finally, we ordered 2 more drinks & dessert. We ordered the martini & margarita again. The martini was really smooth & refreshing. We wish the drink menu had a little more variety though, all of the drinks were on the citrus side. And it would be cool if there were drink/wine recommendations next to the dishes. For dessert we had the corn ice cream w/ dulce de leche. It sounds humble, but it was Michelin star quality, it was so AH-MAZING!! I'm so glad we got to try this place. I think with some tweaking it's going to be a great, really unique spot. PS: I heard you previous Yelp reviewer. There is in fact a hauntingly stinky server that made us audibly laugh reading your review. In person however it was not as funny. Please use good hygiene when you're in the service industry. I mean, come on.

Food was great! Favorite was the burrata. Service was pretty cold and unfriendly. With all the options in Portland, would not go back.

We didn't really look it up before hand and I think we were expecting more of like a dive bar and couldn't have been more wrong. As soon as we walked in the door, we were really digging the decor and overall layout of the place. We were seated right away at the bar and got a couple drinks pretty quickly. The bartender was a younger guy and super friendly. He was very approachable and was really knowledgeable about the gluten free experience (my wife has celiac), which got us excited to come back another day for dinner. My wife got the Short Story Long, which had a really interesting, herbal/vegetal flavor that she really enjoyed overall. I got the Pulp Fiction, which was a flavor bomb all the way with the hint of rye flavor but also a hint of fruit and other layers that was just really fantastic. We will absolutely come back here with the kids for dinner some night!

While I wasn't particularly impressed with the flavor of the martini, I did enjoy the olives. Next, we tried the mushroom & truffle dumplings and lobster dumplings. Unfortunately, the lobster dumplings were quite dry and lacked the flavor I was hoping for. The standout dish of the night was easily the baby corn, which was incredibly flavorful and probably the best thing we ordered. The cucumber salad, on the other hand, was pretty underwhelming. It lacked flavor overall but had a surprisingly strong spicy kick at the end. We finished the meal with bao buns, which were another disappointment. They were overly greasy and didn't leave a great final impression. Overall, I'd give the ambiance a 10/10 but the food a 5/10. The restaurant has a great vibe and beautiful atmosphere, but for the price point, I expected much more from the food. It's definitely a spot where the atmosphere outshines the menu.

The michelada was fresh and delicious, and my friend got a fresh-squeezed orange juice that was frothy to in a way I've never seen before. He said he could drink a gallon of it. Both sandwiches were perfection. The burger had an amazing bun and the perfect ratio of all the ingredients. The corn cakes on the breakfast sandwich were different, but in the best way. I love their decor and the lighting the space had, the theme was awesome. We cozied up at the booth. Our server left much to the imagination. He wasn't very welcoming and was quite short with us throughout the visit. My fiancé avoids black peppercorns as a sensitivity and this was met with a strange attitude. He denied that he could have anything, though he did end up checking with the kitchen. The kitchen uses a pre prepared mix of salt, black pepper and other spices. I mused that surely they must have plain salt, and could that alone be added to the burger he was planning on getting? Refusal and denial it was possible. So when I received my drink, sprinkled with salt on top, it was confusing. My friends both got the breakfast sandwich, which is also sprinkled with plain salt on top the corn cakes. So clearly it is both present behind the bar and in the kitchen. I myself ordered the hash which I thought was pretty underwhelming and lacked flavor (and I received the spice blend). I did really like the latte I got, it was straight up delicious. By the time we got our food, our server just about disappeared all together. My fiancé never received the only drink he ordered. Despite wanting to, none of us were able to order a second drink. The absolute cherry on top was when presented the check on the little electronic tablet, the preset tip options on a check over $100 was 20%, 25%, and 30%. Girl.... yall know yall are wrong for that. Very disappointing and despite really enjoying the drinks we did actually receive, I won't be back.
