This place was super busy on a warm summer Sunday afternoon. They serve their drinks in red solo cups so definitely a casual brewery. For a 16oz of beer it's $7 which I think is reasonable but you can also get smaller oz for cheaper so if you're not a heavy drinker or just was a little bit of one of their new beers they do have that option. They had a great patio with a live band when we stopped by so we know this place is a popular spot in the summer. My first brewery stop on a quick marathon stop in town on Saturday. Cap was my beertender...let me tell you. She wasnt good. Not even great. She was...freaking... phenomenal!! So helpful and just kind. Catapulted to the top 10 of Fab Beertenders ive had. Rebellion is a stunning setting. On a little river(?) A little gushing "falls" when you step under the building. Then a fun, chill vibe once inside. Instead of telling me her current go-to, Cap touted the Florida Fever. Not an IPA fan i opted for a taster. Let me tell you!! Like Cap, this beer wasnt good. Rude staff. Only care about regulars. Kicks people out who did nothing wrong because the personal woes of the bartenders or regulars comes over revenue and fair business practices. Beer is mediocre. Thought I would try this place because it is close to my home and I love beer. What a disappointment! First time I went, there was an older female bartender. Besides her being slower (given the lack of customers) she also smelled like a box of cigarettes. Thought it could be an off day and decided to go a couple of weeks later. The staff was faster; however, appeared to care more about their friends/people they knew. I waited 10 minutes to try one of their IPAs. It was horrible. Rebellion needs to learn to be more attentive and make better beer. Will I go back, maybe. For the time being, I will stick to Fermentorium or Sahale because their beer is drinkable and staff is friendly. read more

As we walked out, we noticed in the brewery tank area "Let's go Brandon" and other pro Trump stickers. Our Hop Passport took us to Rebellion this afternoon. Our first time visiting. What a unique taproom they have here. It is in a former grist mill. The water running through the taproom and outside area make for a relaxing experience. We were welcomed warmly and each tried a couple of their ten ounce pours. I really love this place! There is nowhere like it. The owners are so fun and attentive. If you don't know it's there, you won't find it. It is located by this scenic river and has this cool patio. I was there when they did the ducks and it was SO fun! I am not a huge beer person, but the SANGRIA's (Yes, 3 kinds!) are outstanding! it's so nice to go to a "beer place" and have other things as well. I especially like the BLUE Sangria. I'd give the beer, customer service, pricing and experience a 5/5. Very cool & unique place to check out! Tucked up along the river, you enter this building feeling like you're underground- and then it opens up to this really cool brewery! Staff was very friends, and informative. Almost all beer is $5 a glass (finally!) and very tasty... they also did have wine/spirits for non beer drinkers! My only negative review is that the staff did not wear masks.. at all. I understand not enforcing some civilians if they don't want too, but to have the workers who are interacting with every customer & handling the beer/food not wear masks seems hostil to me. We tried the Rebellion again. Patio on a beautiful Thursday night. Had one table full of people. When going in to get drinks,we had to go past the foul mouth "comedian" to get our drinks and we're told to go outside immediately. Unfortunately, they decided to have the speakers outside, playing the same foul mouthed comedian. Saw several people pass on taking a seat. Many many more left the bar. On top of that, their beer is just plain bland. What is wrong with these people? It should be a gem in Cedarburg. Sure miss Silver Creek. read more

The rudest bartender. 5 women on a girls weekend, we stopped in on a Friday night - as soon as we approached he turned around & ignored us. Was surly when we asked questions about the beers. Practically threw the glasses as us. Not sure what his problem was but he was an ass. All 3 of the IPAs were terrible - didn't taste even remotely like IPA. Ordered the beer with mini bloody chaser. He instead made a full bloody and when we said we wanted the minis he claimed we didn't order that. I visit craft breweries as a hobby & had a chance to return to Rebellion Brewing after several years away. Actually, the last time I visited was prior to 2018, so it was likely Silver Creek Brewing at the time. This is a beautiful and unique location with much history next to the creek. I would recommend a visit just to see the building and appreciate its age and history. The taproom really presents as a bar with the most prominent feature being the bar itself. There was a loud group of patrons present and one child doing laps. On top of the loud patrons, the music was loud like a bar. Generally. I appreciate the music being audible but not so engulfing. That felt like a tavern and not a craft brewery. The other negative for me was that the free Wi-Fi didn't work. I was able to connect, but no internet. That was disappointing. On the positive, my bartender was both super friendly & super knowledgeable about the beers. He answered my questions to my satisfaction & helped me with my flight. Additionally, he provided two free brewery stickers for my collection. I really appreciate it when breweries care enough to provide this perk. I liked my flight which included some unique selections like a banana ale & a rhubarb wheat. All four were tasty; the banana ale (and all four in fact) had good mouth feel and flavor profile. Everything was smooth and had a measured sweetness. While I wish the Wi-Fi worked and it was not so loud, I would still recommend a visit and encourage sampling of their beer! read more

Awesome setting along Cedar Creek. Enjoyed sitting outside until the way too loud karaoke started. Really ruined the atmosphere in my opinion. Beers were good but not great. Inside bar was a real dungeon and bartenders were not friendly at all. We asked to sample a couple before ordering but the bartender seemed annoyed and could barely say two words. He had no interest in discussing their beers. This is the polar opposite of what we experience at most craft breweries. When I asked about merchandise, he just pointed at the ceiling where they had a couple of shirts hanging. Really didn't seem interested in selling anything so we left. Weird. This place has tons of potential, but isn't worthy of a repeat for us despite the awesome setting. read more

A river literally runs through it. The kids said it's like the line for Pirates of the Caribbean. Totally pleasant sitting out on the patio by the river. The blonde root beer was equally pleasant. I had probably the worst experience ever at rebellion. I came in at about 10:00PM at night and was greeted by the bartender. He has shorter blonde hair with a mustache. He carded both my girlfriend who was from the state of Wisconsin and me, from the state of Michigan. He let her right away without any question get a drink, but me on the other hand had to scan my ID and ask me what the state bird of Michigan was. Which I got correct, Robin. Instantly he said, he "couldn't serve me because my ID was smudged," and that it was out of state. Also, claimed that I was "being aggressive and he couldn't serve me because he didn't want to lose his license." So, Rebellion you lost another two customers who are locals now. I will never return to an establishment that treats people like that. Customer service was poor, beers on tap were gone, and I was considered "aggressive" when all I did was listen and obey all that the bartender asked. Absolutely love this place, right on the river in downtown Cedarburg. It is in a cool, historic, old mill building, with a river right through it. The new owners are great, friendly, and fun. Also fantastic bartenders that are nice, funny, and very attentive. Prices so far have been reasonable, with most beers available in 5, 10, or 16 ounce pours for sampling and enjoying. Great place to stop in for a beer, or interesting craft cocktail, any time of the year. Especially nice in warm weather, to sit and enjoy a cold beer on the relaxing, large, patio. Great stop before or after events at Cedar Creek park, such as Summer Sounds, or any of the many festivals in Cedarburg. Went here on a recommendation from a friend and it didn't disappoint. American themed bar that honors military personnel and first responders. If you're patriotic and love America, this is the bar for you. Buy one get one free on Wednesdays for military and first responders. It's also a cool bar with outdoor seating next to the river. It's really a hidden gem in Cedarburg. If you like Martini Pete's and North 48, then you'll like this bar. On a side note...you should really ignore the review from Doc S. I happen to be sitting at the bar when this extreme douche bag decided to confront the bartender about his song selection "Proud to be an American." He made that moment very uncomfortable for myself and my date and the rest of the people at the bar. He argued with the bartender about what it means to be an American and expressed his disgust about the numerous American flags in the bar. He didn't get the point that these flags are displayed because we live in America and this is an American themed bar. He then left the bar in a rage and said he's never coming back. Quite the display of douche baggery. Here's some advice...if you hate America this much, then move to a different county. read more

This is a very cool place. They have amazing beer that they brew and also have others from around the state. I tried everyone of the craft beers that they had on tap that they brew and I enjoyed every single one. Which rarely happens. It is a very neat location next to the river and inside an old mill. The bartender was very nice and took the time to talk to my girlfriend and I. Was willing to answer all the questions we had about their operation. One reason that I personally like it, is because of their appreciation for military and first responders. They have a Bogo offer to military and first responders on Wednesday, which is a great deal. Beautiful location with a ton of potential. Beer is okay at best. Carry a number of Wisconsin beer taps, but it just makes me dream of their taproom. Feels more like a local dive bar than a brewery. If it was not for the outside seating along the river, I would give it half a star. With so many other options with quality microbrews, I would recommend going elsewhere.
