The pizza crust was lighter than expecyed, a little bit more like focaccia than the pizza dough I'm used to in New York City. Still good, but not my favorite. The pastas we had were all wonderful. We had the seafood and mussels, the bolognese, and the pappardelle fungi. The pasta was clearly freshly made and had a nice spring to it. We started with the calamari appetizer, which was nice and light with a delicious lemon aioli sauce. It felt like the dish had more batter than actual calamari, which I did not prefer. I would have wanted more squid. Great service, lovely restaurant.

Before everyone arrived, I went in to ask if we could be accommodated. The first hostess said yes, as long as we split into two separate tables. Five minutes later when everyone arrived, another hostess refused to seat us, saying they couldn't accommodate relatively large groups on weekends. We explained that we were happy to split into two or three separate tables, with no more than 3-4 people at each table, and that no tables needed to be rearranged. The answer was still no. The biggest issue wasn't the policy--it was the way it was handled. The hostess rolled her eyes and treated us with a surprising lack of professionalism and respect. If this was truly the restaurant's policy, it should have been communicated consistently from the start and by all staff to all the other customers too. Our group has been dining together at restaurants around the area almost every day over the past few weeks, and we've never been treated this way anywhere else. We left and took our business elsewhere.

If you sit in a booth close to the arcade game, you can get a peek of the pizza chef kneading and spinning the dough in the air like a pro. The large cheese pizza took about 15 minutes to be served and was so delicious! The sauce:cheese ratio was just right, the crust was thin but not floppy, the sauce wasn't too liquidy that it slipped away between my fingers, it wasn't greasy, the crust was firm but not crispy enough to crumble at the first bite, and the large pizza is enough for two hungry adults. The root beer (Rookie's) was a great choice! It was freshly poured from tap and tasted so unique. It's worth the $4 mug. The interior is light, bright, airy, and full of windows. It was a wonderful, "old school" Italian American restaurant with some really awesome food (and service). Most everything we ordered was really tasty -- from appetizers all the way to dessert. Standouts included the Escargot and Burrata (apps), the Carbonara and Mushroom Fettuccine (entrées), and the Chocolate Torte and Tartufo (desserts). The only item I'd skip next time was the Manicotti. It was a bit too rich, and the duck wasn't very recognizable (overpowered by the other ingredients). As for service, it was really first rate! Our waiter was super knowledgeable about the menu and was very attentive. Final thoughts: If you're looking for a quiet, enjoyable experience, check out Trattoria. I know Caesar is a boring choice but sometimes the stomach wants what it wants, and this one was worth noting; I especially enjoyed the little nub of chewy pizza dough bread with it. I got it anchovy-less, because I don't love crunching on the little dudes, personally. Accessible entrance for wheels is around the back via a ramp in the alley--there's a doorbell for entry. It didn't take long to identify the state's core competencies: Producing world-class cheese Perfecting brick oven pizza Aggressively curating a very specific political vibe Curiously, only two of those things are edible, and unfortunately, you can't get pizza without being reminded of the third. Also worth noting: I'm not convinced any other style of pizza exists in Vermont. If it's not artisanal, wood-fired, and served on a reclaimed barn board, it apparently doesn't make the cut. So naturally, my brain locked in and I ate pizza two nights in a row like a creature of habit. Night 1: Pizzeria Verità Parking was...aspirationally convenient. After navigating downtown Burlington, which feels like a live-action sociology thesis, I made it inside. Let's address the elephant in the room: the price. With tip, I dropped nearly $30 for what amounted to a personal-sized pepperoni pizza that politely declined to fill me up. I assume part of the cost goes toward sourcing ethically massaged tomatoes or ensuring the mozzarella had a fulfilling upbringing. Now, to be fair, the pizza was excellent. Truly. Great crust, quality ingredients, clearly crafted by someone who cares deeply about their art. But the value? That's where things get a little...Vermont. Delicious? Absolutely. Filling? Not quite. Financially efficient? Only if you measure wealth in vibes. I went in skeptical, left impressed, and still had to consider a second dinner.
