We don't have a lot of veggie ramen options in Vegas so my wife and I were glad to find this location. Service was excellent and it's located next to Trader Joes and several other busy restaurants. We were quiet pleased with the dinner and here is what we ordered: Veggie Ramen: creamy and delicious broth! There were plenty of noodles and all of the veggies were fresh. Portions sizes were just right so no complaints. We prefer no ginger for next time since it was a bit too strong. Spicy Veggie Ramen: same as above but a bit spicer. Fuji Potatoes: crispy French fries with sour cream on top and drenched in sweet and sour sauce - what a great combo! Gyoza: can't go wrong here. The rice curry was authentic tasting Japanese curry, but it lacked having beef cubes in the curry. It would also be nice if there were different levels of mild to extra hot. Nonetheless, the curry was a 5 out of 5. I got a taste of the tonkotsu broth and it was good, but could have been slightly hotter. The Matcha Parfait was uniquely different, but good. Aesthetically, it looks good in the glass it's served in, but I would have preferred it in a bowl, so I could more easily mix the ingredients. We heard some good things about Ramen Ebisu, a new ramen shop, that recently replaced another ramen shop. Never went to the old place, but we decided to try Ebisu. Ebisu is located in the same strip mall as Trader Joe's, to the right, at the corner. Walking in, the place is nicely decorated, very clean, and cozy. We went kind of late, so it was not very busy with 2 other tables with diners. Looking at the menu, they mostly have the usual ramen shop staples, not complaining at all, because we just love good ramen. Our server kindly greeted us, very cute girl, and super sweet! Absolutely no complaints about our service. Ordered chicken karaage, 2 miso ramen, and a Shio Tonkatsu ramen. The karaage arrived, and at first, I was skeptical, looking a little dark brown. I was thinking that it was going to be dry, but nope, it was crisp on the outside, and super juicy inside! Very good! The ramen arrived! We all commented amongst ourselves, that this may be the best ramen we've had since we moved to Henderson, 4 years ago. We also go to Japan, and I really don't think anywhere can beat Japan ramen, but this was right up there! My tonkatsu shio broth was rich and flavorful! Can a ramen spot really be a hidden gem in 2024? I say yes, this one is. Ramen Ebisu is a little restaurant on Green Valley and Sunset in the plaza with Trader Joe's. It's really close to the original Mothership Coffee Roasters location. Still displaying some signage from the prior ramen business, they had fewer than half of their approximately 24 seats filled when I walked in for a late Friday evening dinner. The 2 piece Karaage ($3.95) was begging to be ordered due to being the smallest and cheapest non-edamame app. It was surprisingly excellent. The chicken was dark meat and retained plenty of tenderness, the batter was crispy, and the lemon and the presumably kewpie mayo were great condiments. I was toying with the idea of ordering their brothless mazemen, but I quickly steered back into the ramen lane after reading the enticing description of their three-day broth made "only of water and pork bones." That is a bold choice when the local ramen landscape is mostly full of intense flavors. I picked the namesake Ebisu Ramen ($17.89). That broth actually worked so well. They either added an inconsequentially low amount of salt or none at all, and the result is creamy, surprisingly subtle, and totally free from the issue of salt accumulation that wears out the palate. The thin noodle was cooked al dente, and the four slices of simple chashu were the right tenderness. Green onions, kikurage, bamboo shoots, and nori were all fine. However, the hard-boiled yolk of the egg had nothing to hide behind due to the simplicity of the broth, so I may have to pick a menu item next time that doesn't include egg. Henderson finally has a great ramen spot in Ramen Ebisu. I would go so far as to say that ramen connoisseurs from all over town would be well-served to make the trip to check it out. If you're gonna visit Ethel M Cactus Garden, this would be a great way to warm up afterward. read more
