July 21, 2026 - Silverthorne, CO…read more One of the reasons we chose to stop here was the large, dog-friendly outdoor patio. We entered through the patio entrance, found a table right away, and our server quickly brought us water. She also pointed out that water bowls and fresh water were available for our pup, which was a thoughtful touch. I ordered one of the house specialties, the Chilled Tuna & Salmon Poke Bowl ($24), and I'm so glad I did. Every bite was fresh and delicious. It had just the right amount of spice--enough to add flavor without being overwhelming. My husband ordered the Summit Mushroom Burger($20), and after stealing a few bites, I can confirm it was excellent as well. The fries were exactly how I like them: crispy on the outside, fluffy and tender on the inside. Great food, attentive service, and a dog-friendly patio made this a wonderful lunch stop.

The building is a bit of a mess but we will hold our judgement for the service and food. It appears that two people are running the entire business. HUSTLERS. We looked over the menu and selected the spicy fried cauliflower with green onions, micro cilantro, sweet heat, sesame seeds and a lime cream sauce. The cauliflower was crispy, well flavored, and a good taste. We shared the Summit mushroom burgers with goat cheese, wild mushrooms, spicy pepper jelly and roasted garlic aioli. The burger was delicious, juicy and a real treat. We were pleasantly surprised. The staff was helpful, engaging and working hard to service the crowd. Eclectric Bar and Grill is not fancy, but a solid option in the burger scene. Give them a chance and judge them for yourself.

Love the decor, and the unassuming location....part of a strip mall. BUT don't let that fool you! If you want fresh, not your normal Mexican fare restaurant, this is the place for you. Starting margaritas put huge smiles on our faces, so you know they weren't watered down. The salt on the rim was also sprinkled with a red spice. I don't know what it was, but I do know that I like it! We ordered the seafood enchiladas and the Mazatlan taco salad. This isn't your ordinary taco salad. Think shrimp fajitas, with the perfect cook, seasoning and portion. Each bit was succulent. My husband said that he'd never had so much yummy seafood inside a seafood enchilada, and mind you, he's eaten lots of enchiladas. We were able to see other entrees that people had ordered and all were so beautifully prepared, a feast for the eyes for sure.
