We are pizza snobs to start out. It takes a lot to impress us, and the first way to our heart was that Proto offers HALF BAKED PIES!!! So you can finish them on your own stone when you get home or are actually ready to eat. This is the first place we have ever come across that has allowed this. We ordered 3 medium pies so we could try a variety. They are super thin and crispy and just amazing. Honestly, my least fav out of the 3 was the Angel pie just because it was so plain after I tasted the other two. We happened to show up during happy hour 4pm, so we ordered drinks while we waited. It was a $1 off all alcohol drinks. The bartender was super nice. read more

Great wood-fired pizza, but the pricing is a little wild if you ask me. I ordered the Hula pie and my husband got the Margherita DOCG. He's a huge fan of Margherita pizza and this easily landed in his top 3. I think the authenticity made it perfect. As for my pizza, it was pretty good. I didn't have any life changing experiences eating it. It got the job done: fed me without making me shit my pants later. One thing I will add is that it's not very filling. You could nearly eat a whole large by yourself before realizing what you've done. Another thing is they added an "employee benefits" charge to our to-go bill. I wish we noticed that before tipping because I absolutely hate when restaurants try to shirk their responsibility of paying their workers a living wage and instead make their customers pay. Here's the thing. I grew up in a big East Coast city where many Italians owned pizza shops. They were the best in the nation. It seems impossible to find the same quality of pizza anywhere in Colorado. I've tried. Some are pretty good and others are terrible. My wife and I went to Protos the other evening and it was the worst ever. The worst. Not even a contest. In fact it didn't resemble a pizza at all. The crust was like a saltine cracker without the salt. There was hardly any cheese on the pizza and there were globs of tomato. WTF?? I normally wouldn't write such a review because I like to give a place a chance. We used to eat at Protos once in a while, maybe twice a year, and this is the first time we've been back in at least a year. It was the worst ever. If you know what real pizza should look like, taste like, smell like, and feel like then this will be the biggest waste of time and money ever. Whole Foods, which has so-so pizza is a million times better than this joke of an excuse for pizza. Just TERRIBLE!! I was reminded of that guy who gives pizza reviews on the internet, Dave Portnoy. He would have taken one look at it and then a courtesy bite and given it a minus 10. read more

Pizza pizza!! This place has a wood fire grill and is mmm mmm good! We came and got the margarita and the ruby pie. Both were absolutely on point! Take out was SUPER easy. Mask required to enter. They had it exactly on time today for us (Monday evening) and the foot traffic was light. They had some signs up saying that no mask was required if you were a dine in guest - but i didn't see anyone seating in the restaurant. Has the quality of Proto's pizza gone down hill? When you pay $25 for a large pepperoni mushrooms onion and cheese pizza and the topping are very scarce something has changed? I know that it must be getting harder to keep a restaurant profitable with inflation, but cutting back on quality is not the way to do it. Maybe it is the person making the pie? One can get a Safeway pizza with better quality. Roma pizza is charging a surcharge to cover more costly ingredient costs maintaining quality. Quiet little neighborhood pizza place. Menu has a few diverse options but really its just the basics every pizza place has. The crust was thin, with a small floury crunch to it. It held up nicely against the sauce & cheese and didn't get too soggy. They don't offer kids menu choices so we just got a small cheese for our son. They do have high chairs & boosters but no crayons or other table doodads. My husband tried the unusual pizza of sauerkraut & sausage and I made a create your own. He liked the pizza ok enough, and so did I but its not something I would go out of my way to eat. The location is in a bit of a strip mall business office deal, with parking just in the general lot. Service was ok & basic. Don't know what could be different and we were the only ones there at the time. I wish I could say more but it was overall just ok. read more

Great wood fired pizza. We ordered two pizzas, The Goombah and a Hula Pie for take out for lunch. They were ready in 12 minutes for pick up. The toppings were reasonable for the size and type of pizza. The pizza was hot and baked as a wood fired pizza should be. The crust was thin and the edges were crisp. If you are looking for the heavily topped regular or thick breast crust style pizza, this isn't your style of pizza. This is well made, thin crisp crust wood fired pizza. read more

Got some take out and really enjoyed it. Nice thin crust pizza with plenty of toppings. Cheese pizza is good too. Nice beers available on tap so I enjoyed one while waiting for my pie. They were fairly busy but we still got our pie on time. Very friendly staff. Pizza prices are up there so don't expect the Hut or Domino's prices. But then you are getting WAY BETTER pizza. We have been LONG time Proto's fans and we were really sad to leave our Westminster Proto's when we moved but Longmont Proto's does NOT disappoint!! Great atmosphere and awesome service! And the food was the same great menu and quality we have grown to expect over the years. Westminster will be missed but we are glad to find that Proto's Longmont is just as awesome (and closer)! There is Napoletana pizza, and then there is Proto's. I don't know where to start. The DOCG Margherita is a lush playground of crushed San Marzano tomatoes and airy buffalo mozzarella with fresh basil dotting the topping. The crust is thin, yet firm and spongy, and quite tasty by itself. With every bite my heart quickened and every mouthful was a a cascade of fantastic flavors perfectly comingled. "D.O.C.G." stands for Denominazione di Origine Controllata e Garantita, and is a statement of compliance with specifications unique to a product's origin. This is the standard by which any pizzeria claiming to serve "Napoletana" (Naples-style) pizza is judged, and Proto's sets the bar so prohibitively high, it almost isn't fair to other businesses :-) We also got the Pontiff Pie on gluten-free crust, which was a pizza with fresh spinach with cheeses and roasted tomatoes layered on a crust brushed with extra virgin olive oil, and was intoxicatingly delicious. I also pay close attention to the quality of the sides: the mixed greens salad with balsamic vinaigrette had crisp, fragrant baby greens and was adorned with two slices of delicious fresh tomatoes, all on its own so perfect and unadulturated I'd have sworn they picked the ingredients moments before they served them. A bonus: they serve San Pellegrino Limonata also! Descriptions heard at our table: "Shockingly good," "I can't talk about how good it is, I'd have to stop eating for a second," "oh my, I have no words," and "wow Daddy, this is nummies!" The last one was a kid. They're very kid-friendly here. Well-sourced original ingredients, perfectly prepared and executed, and friendly, attentive service. Sloppy with take-out!!! Ordered a large pontiff pie ($20), one of my favorites, got home with no feta cheese (pretty much the ingredient that makes this pie interesting). The proto pie was soggy and drenched in sauce. Caesar salad is literally a box of chopped romaine, sour dressing and stale crust. To top it off- they were out of canollis upon arrival-still charged us and sent us home with gelato-ON A TAKE-OUT ORDER. Incredibly disappointing. Spend less $$$$$ at Babette's and avoid feeling violated. read more

Proto's is simply great wood-fired pizza at an affordable price. We went without reservations on a Friday night and only had to wait 10 minutes to be seated. Our food was great - their crust is really good; thin, crisp and tasty and not at all "cardboard-y". Our server was friendly and attentive. The only negative I have to report is that I ordered a glass of the malbec and I'm 99% sure that I got the wrong glass of wine...but I didn't want to insult her by questioning whether or not she brought/poured the right one. Otherwise everything was really good. If we lived closer, we'd come much more often. read more

The pizza was freshly prepared in front of us. We had the Low Rider, which was quite brilliant. The bacon had a nice kick to it. The pizza, as promised, is made within 3-4 minutes of cooking in the oven. It looks great, tastes great and feels light and airy. They offered some nice spices to top it off as well. Ask for The FlatIron spices, which are quite hot, but delicious. The ambiance is exquisite, and it gets quite busy during the weekend. read more

A great local place for date night. It's a little on the pricey side for everyday, but it's the perfect place to treat yourself. The food was delicious, ambiance was great and the staff really sweet. I love this pizza. It is fancy pizza -- so if you're looking for a big NY-style pie go elsewhere (I would suggest Anthony's on Hover). This pizza is pretty thin-crusted and they have lots of fabulous topping combos. We have tried many and haven't been disappointed yet. Some examples of Proto pizza deliciousness: The Atomica: mozzarella, tomato sauce, garlic, oregano, red pepper, olives, and italian sausage. The Goombah: mozzarella, tomato sauce, capers, prosciutto The Ruby Pie: pesto, mozzarella, feta, kalamatas, artichoke hearts The space is nice. I love how casual the place is, and that you can have a nice glass of wine or a cocktail to go with your pizza, making the meal a bit more elegant. It definitely loses a star for the bad service that Derek M. mentions. It is super slow and we've been given the wrong pizza (which they did fix fairly promptly). They just seem a bit... inept. However, I have fairly low standards for wait service in Longmont, so it doesn't bother me much. read more

Fresh. Filling. Fantastico. I am a sucker for Proto's Pizza. I live so close I can walk my carb craving bellly over to indulge myself every few weeks. I do typically order to-go, because while the food here is fresh... well, fresh takes time. Protos, therefore, is not pronto. If you're in for a relaxing meal, maybe with a salad to start and a glass of wine to sip, this is the place. The pizza is wood fired to a thin crust and topped with savory marinara (or olive oil, or white sauce) and the freshest ingredients you will get from a pizza place in Longmont- or Colorado for that matter. I'm a fan of the Goombah and Pontiff, but lately I've stuck with the good ole Traditional (cheese). Understandably, the salads are also fresh and paired with a balsalmic reduction that is complimentary. Don't forget to grab a pint of gelato for the road! It's even made here in Lomo! Really? When we came in there were two people nearly done eating - otherwise totally empty. We sat a few minutes before anyone acknowledged us and after ordering sat another five or ten before the pizza was even started. The manager (?) had to actually go in back and tell the guy to you know, start making our pizza? Our pizza came fairly quickly once the reluctant pizza guy got moving but was really disappointing. Our half and half prosciutto/caper and Italian sausage tasted totally pre-fab. Italian sausage not particularly Italian and looked like it came out of a can (how is that even possible??) and the prosciutto/caper combo wasn't very good. The crust also needed a few more minutes in the oven. All in all, mediocre food, bad attitude toward service, not worth the wait. read more

YUM. We went here for the first time recently on a weekday to celebrate our anniversary in a low key fashion. Proto's completely fit the bill. We tried the Savory Pannini, which was great with the olive oil and balsamic vinegar on the table. At first we were unsure about the little bit of char on the bottom of the pannini, but quickly got over it. We ordered 2 small pizzas, the Pontiff and the Low Rider. The Pontiff was very good, but not really anything to write home about. The Low Rider was amazing... Between the pineapple and the honey tomato chipotle sauce, we were a little worried it would be too sweet, but the chipotle and cilantro really kept it plenty savory. I have daydreams about this pizza and can't believe we haven't been back to have another one yet. For dessert we got the Cannoli and the Chocolate Tartuffo, both which were just the right size (I hate when dessert is too big or too small) and both delicious. Drinks were also well made, and the limoncello we had with dessert was perfect. Service was personable but not pushy. Decor was on the nicer side of casual. I absolutely love this place! Their Napoleon-style, wood-fired pizzas are the best around. Their toppings are fresh and they make it right in front of you. This is more of an upscale pizza place, so please do not expect to come in here and gorge on cheap Pizza Hut style pizza. They only serve appetizers, pizza and desserts - all of which are amazing. They offer a pizza special every day, but my personal favorite has spinach, tomato, feta and pesto as the sauce. I order it every time and try a different pizza too. Proto's Pizza is a great little place to have a pizza and a drink (if you drink that is). From 3-6pm they have a happy hour that includes selected $3 appetizers and $5 pizzas along with cocktails and beers. It's a great way to get an inexpensive after work meal in with friends! The pizza is excellent. The crust is thin and tasty, but not so powerful as to overwhelm the toppings. I tried the Atomica, which has red pepper, Italian sausage, and black olives. It was very good, well presented, and the medium filled my wife and I up without leaving us with leftovers or feelings overfull. The group next to us ordered the Little Mozz Salad. Fresh red tomatoes topped with mozzarella and an oil and balsamic vinegar dressing. It looked fantastic and will certainly be on my next tab when I return to Proto's. read more

I eat in or take out from Protos about once a month. This is a civilized place to enjoy drinks with friends and some really delicious, contemporary thin crust pizza - if that's the kind of pizza you like. If you are seeking a heftier slice and a more "family" atmosphere, Protos is not the place to find it. LOVE: the casual ambient atmosphere, the caprese salad, Friday clam pizza and the GREAT "Low Rider" with its surprisingly delicious flavor combo - the cilantro is an inspired touch. HATE: the often patchy service, occasional "attitude" from servers, sometimes total screw-ups with orders, sometimes burnt pizza they actually serve ( ! ) instead of starting again, erratic approach to toppings...sometimes just right for a Neapolitan, other times famine-struck ( "trendy" is no excuse for extreme sparseness when customers are paying $17-21 for a large pizza). The extra toppings can also seriously add up. Despite my mediocre three star grade (marks off for inconsistent food quality and patchy service), I keep eating at Protos because I like the classy-pizza-joint atmosphere and no one else in town does such a great thin crust. If a competitor took the Protos formula but delivered better service and more generous toppings, I would swap allegiance in a New York minute. read more
