The quesadillas are especially delicious with melted mozzarella cheese on their large corn tortillas, your choice of meat (my favorite is their suadero), and topped with lettuce, sour cream, and cotija cheese. They're usually set up sometime between 6 and 7pm, but sometimes they're not there, so it's always a gamble to head over to see whether they're out or not (definitely worth it though!). We spent many weeks sampling food trucks and discussing our ideas with a few of them. When I heard Pasion Latin Fusion had recently acquired the taco truck I was ecstatic!! PLF is by far one of my favorite local eateries. We met with Elvis a few times before our wedding and he just gave us that warm fuzzy feeling you want when you're planning this once in a lifetime event. He is passionate about what he does and it definitely showed during the planning process. With his help we put together a fantastic menu that only cost us $17 per person. You really can't find that anywhere else when you're looking to serve fresh food in a timely manner to 100 people. They did a great display of appetizers, provided homemade aqua frescas, and managed to deliver the entrees in record timing. We heard nothing but wonderful things from all our guests! We offered bacon wrapped plantains and chips and guac for apps. For entrees we offered the pork arepas, fish tacos, and chicken stew. Everything was delicious. I'll admit I was leaning towards 4 stars because of a couple of small issues day of the wedding - But I have to cut them some slack, we were only the 2nd wedding they'd catered. With Miss B parkin' her tamale truck on the corner of Paseo del Norte and Universe up on the west mesa most Saturday mornings, you've no excuse for not gettin' your fix of this New Mexico staple year round, not just for holidays, festivals, or gatherings of the fam. Go Red! Go Green! Go Christmas! It doesn't matter. Her tamales are the best trad version I've found anywhere up to this point & are the bar to beat in my world. Her sauces are the crown jewel -- both red & green bein' plenty flavorful and bringin' plenty of heat. The couple little plastic cups they provide for each tamal are enough and then some. Good ratio of ground beef to beans to chile so you can get a little of each in every bite. Biscochitos are light, slightly anise flavored, and generously covered in cinnamon sugar. This two to three bite cookie is the perfect appetizer and dessert for your meal from B's. Enchiladas, tamales, and posole are also great here, the only item we haven't tried yet is the frito pie because the fry bread tacos are so good we always get them!
