Tucked away behind the Tapped beer bar, The Dingle is a haven for anyone who might want a quiet, welcoming spot to chill out with a whiskey taster or cocktail (or two...or several) after the work day ends. The interior has a warm, comfortable feel to it, and the staff are welcoming and extremely knowledgeable about their inventory, so don't be shy asking them for recommendations. Thanks to a combination of covid and Google (wrongly) listing them as permanently closed, business has gone way down from where it used to be a couple years ago, but I can't emphasize enough that The Dingle is still very much alive, and I'd HIGHLY recommend dropping by during opening hours (which I think are just Thurs/Fri/Sat afternoons right now).

Sunday's after mass in the Dominican church, Paddy Dunnes's became for Brian and me a place to go, for an extension of the "Spirit". While still drinking coffee or a beer, the spirit of our hearts were lifted or we could just BE. No pun meant. We met genuine people, who welcomed each other and us and vice versa and we enjoyed each other's company and "genuine Irish Craic". We cared about each other, genuinly cared. Within a very short space of time of finding this 'Hub', there was a sudden serious illness and death of a woman, Mrs. Dunne, [we never had the privilage of meeting her]. We felt 'At Home' in Paddy Dunnes. It was never dull, the craic, the banter, winding each other up, the rows, god there were some mighty rows, difference of opinion, GAA, Athy, Castlemitchel, the ggs's ............We never came across so many men named John or Jo, but not young enough to have been called after JPII, but not old enough to have been called after John 23rd or John Kennedy. My Brian, my husband Brian, got cancer and died very suddenly in August 2012. Both Brians family and mine were around me. But we had another family, "The Paddy Dunne's Family". They were there at the church, they helped lift his coffin up the steps. Brian would have been chuffed. I was chuffed. Our families came back with me to Paddy Dunnes for Soup and sandwiches. Yeah did us proud. So for a Really Good Pint of Guinness or whatever you're having yourself!! Well, we never made it. On our way, we saw a small sign that said, "Whiskey room", and we both were pulled by magnetic forces into the small room. When I tell you that the 2ish hours we spent here were some of the best memories of our trip, I am not exaggerating. The bartender Dillon (Dylan?) was amazing. He knew his stuff and recommended some wonderful whiskeys that we had never tried before. Our favorite was Dunville's. (Thanks a lot, Dillon/Dylan, we can't find it in the states!!!! lol) Also, he poured the first Guinness of our trip, and it was 10/10 the best Guinness I've ever had in my life. (After drinking LOTS of them over the month we spent in Ireland, it's still the best pint I had.) The bar/room is very small, and there were only 5 or 6 seats around the bar. It was cozy, quiet (until the small group that had assembled there bust out into a rendition of "Tom's Diner"), and exactly what we were looking for. My recommendation is to skip Temple Bar, and make your way into this gem. It was absolutely amazing.

Well, firstly because they have the most incredible range of wine from all over the world. They even stock my favourite label from Western Australia, Vasse Felix, which I've not found ANYWHERE else in Ireland. Secondly, their staff are wonderful. They are not the haughty, pretentious types you might expect to find in such an establishment. Oh no, they take the time to talk to every customer who enters the store, ask about their wine preferences, suggest future purchases for the expansion of the customer's palate, and discuss wines previously purchased and liked/disliked. Chris, a lovely guy from the UK, spoke to me while I was in store, and while I'm by no means a wine connoisseur, or a bulk-buyer, he still took the time out to find out about the kind of vino I like to drink. From there he formed a kind of 'career trajectory' for my wine tastes, based on what I drink now and what I should be trying. I found him incredibly helpful and not at all dismissive of my 'bargain bin' level of wine knowledge. While I was in the store I heard the other sales assistant speaking to a woman who'd had a less than amicable experience with her last purchase. They discussed the reasons for her not enjoying that particular bottle (these things happen, everyone has different tastes), and he made suggestions on wines that might provide her with an experience more to her liking. The fact that she came back to the store and trusted these guys to advise her on her next purchase really says something about the level of service provided here. So you see, at The Corkscrew, wine, as life, is about the journey, not the destination, it's about branching out and trying something new and it's not about sticking to the tried and true (although, in fairness to these guys, they have tried nearly every bottle in store).
