There is one particular roll called a Bolillo that we've looked for in several Mexican neighborhoods; in the northeast. It looks like a small French bread; very popular in Mexico City. Spoke to the owner and it was a little late in the day for them. Most are sold to restaurants. I have to be back in Poughkeepsie Monday. She's going to save a half a dozen for me. The place looks very clean and well organized. I noticed that they had off to the side, the tongs and pizza serving trays. Go to any bakery in CDMX, and you'll see the same thing. It kind of gives the place authenticity. The weekend has passed and we're here for the Bolillos. The owner had a 1/2 dz. of them aside for us. 6 for $6. very reasonable. Can't wait to turn one into a torta, Mexican sandwich. : )
