Lives up to the hype. The whole tear and dip idea felt gimmicky to me but that aside- their bagels are so good. By chance I had to wait 2 minutes for plain bagels to come out, so I tried them piping hot. Unreal. Outside has nice crispy exterior, inside was so chewy and fluffy. It's not as dense as an average bagel. I would 1000% go out of my way to come here again. I got 6 plain bagels, scallion cream cheese, and whipped butter schmear. Immediately loved the scallion cream cheese, especially with the hot bagel. I thought butter was good but not good enough to get again initially but it grew on me- who doesn't like bread and butter. I would 100% get scallion cream cheese again and I'm undecided on the butter. Be warned: they're expensive for bagels. Interior is tiny, I get why a line forms quickly. No room to eat inside but few small tables for outdoor seating. There are napkins and knives on the window sill. It's Georgetown- parking is a pill. Popup happens to be right next to Georgetown Park Garage, but if you're picking up bagels then it feels like a waste of money. Try street parking first- sometimes I get lucky in adjacent neighborhoods. I stopped by around 10am during the week and there wasn't a line. DC is lacking good bagels. I was skeptical of the virality of PopUp Bagels, but they really are superior to most of the bagels I've had in this area. The ordering process is super simple and efficient, because they don't prepare anything and simply give you hot fresh bagels and the spread of your choice. The only negative is the price point, which is a little high in my opinion. But, with how difficult it is to find bagels of this quality in the area, I think it's worth the splurge every now and then. read more

The bagels are SO good -- literally my new favorite! The only thing I wish is that there was an option to buy just the bagels without the dip. Right now, it's $16 for 3 bagels whether you get the dip or not. I come here pretty often, and I usually end up with so much extra dip. Sometimes I just want to grab a few bagels to enjoy with the dip I already have at home from pop up, but I still have to pay the full $16 weather I have the dip or not. Solid bagel spot with quick service and fresh, chewy bagels. The order minimum of three bagels and one schmear is a bit overwhelming if you're solo dining especially since the bagels are best hot and fresh. Definitely recommend eating them same day, and planning accordingly on your carb load! The plain and salt bagels were really good, but I think the real star here is the scallion schmear which was delicious! And you get a nice little tub of it which is plenty for 3 bagels and then some. They have a few tables upstairs and outside, but if it's a nice day, grab your bagels and head down by the river. It's a great place to eat with a nice view. Now for the bagels. They don't have a huge selection, and they don't make breakfast sandwiches. They just make bagels, and they do them really well. The bagels are fresh, chewy, and honestly the best I've had in the DMV. My favorite one is the everything bagel and salted bagel. Wowww!! I was so excited to try this! Finally got to go this past weekend and it lived up to the hype. Staff were sooo helpful and sweet and the orders came out to quickly. The concept is simple yet soo good! The everything bagels were so warm and soft and paired perfectly with the spicy scallion schmear. Omg... Popup Bagel is SO good! I love the concept of the pull-apart bagels instead of slicing them open--it's different in the best way. The bagels were incredibly fresh, soft, and moist. And the butter? Absolutely delicious--I honestly wanted to take some home! The line was long, but it moved really fast. I was in and out in about 3 minutes. The service was spectacular--everyone was super friendly and welcoming. Just a heads up: you have to order at least 3 bagels. I noticed people heading upstairs, so I think there's seating up there. Got to try these bagels for the first time when a coworker brought them in to the office. I won't sugar coat this, these are probably the best bagels that I have had outside of NYC. I tried the plain bagel with salt and it offered absolutely perfect consistency. Soft interior with a flexible but harder outer shell, it was all you could ask for. Paired with this superstar bagel are the out of this world shmears. I tried the plain cream cheese, scallion, and their limited time Chipotle scallion. It's opening weekend for pop up bagels, they opened on Friday and I went the day after. I was already going to be in Georgetown and a bit skeptical because I saw how long the line was the day before. I went around 1pm and the line wasn't too bad. I waited about 10 minutes in line and it took 2 minutes after to receive my bagels. I got 1 poppy, 1 sesame, and 1 salt with plain cream cheese. I ate them right outside so they would still be hot. The bagels are good! No doubt about that, are they overpriced, yes. They give you an insane amount of cream cheese. It seemed a bit wasteful to give so much. I ended up throwing mine away because I knew I wouldn't eat it later. My favorite was the salt bagel, 10/10. The sesame bagel was a let down for me. I've had good bagel experiences at PopUp Bagels in Georgetown. And while I'm not a fan of their bagel minimums for online and in-store ordering, the bagels are delicious. The crispy crust and soft center of the bagels are what makes these bagels stand out. That said, they're not very shelf stable as they quickly dry out and harden if not eaten immediately. Consuming them fresh and hot out of the oven is the best part of the experience. They also have few bagels and cream cheese flavors (called schmears) to choose from, unlike your average bagel shop. For me, this is great as I'm a minimalist when it comes to bagels and cream cheese, but for others who might like novelty and customary flavors, you won't find those here. I'm shocked they don't have cinnamon raisin. They're plain and everything bagels are delicious. Since my last visit, I see they've added new schmears to their cream cheese lineup; most notably the Brown Sugar Cinnamon Butter. They had/have another sweet spread, which its name escapes me, but I recall thinking it wasn't the best flavor to complement their bagel lineup. Not that it wasn't delicious, but I thought perhaps there was another sweet spread they could offer that would be more fitting. I think the Brown Sugar Cinnamon Butter fits and I hope this is customer satisfaction business move. The last three visits I used my own sweet spread to complement the plain and everything bagels. I don't love that you can't you order single bagels and the sizes of the spreads don't vary. I think Popup is great to try once in a while if there's no lines. Pop up bagel is new in Georgetown and so much fun. I live about an hour outside of dc and it was well worth the trip. The line was out the door, but I didn't wait more than 10 minutes to get to the counter and my bagels were ready almost instantly! Some seating upstairs and we managed to get a seat pretty easily. Once we got to open our bag of bagels, they were so fresh that I couldn't even touch the bagel at first. When I was able to tear it, the steam wafted out like a cartoon. Everything was so perfectly baked and cream cheese so perfectly spreadable/dippable (if you do it their way). It was just a perfect bagel treat. I would not pass up an opportunity to get pop up. Been meaning to try this new stop in Georgetown and was definitely not disappointed. These bagels are served fresh and meant to be eaten immediately by tearing off bite size pieces and dipping them into a schmear flavor of your choice. We went with the special flavor of the month: rosemary garlic, and it was really good! More salty than expected but still good. They also had brown butter and apple cream cheese specials. The bagels themselves were hot and fluffy. The drip coffee wasn't bad either. If I go back, I definitely would opt for a cream cheese too. Also a good to know- you do have to buy a minimum of 3 bagels when you come lol. That shocked me and my friend when we ordered. The music inside is also pretty loud so try to know what you want when you get up to the counter so you don't look dumb and confused like we did when trying to place our order. The bagels are pretty darn good. Nice size that's not too big not too small. Great crisp outside and nice interior. Gets more chew as it cools though will not be your thing if you're looking for a really toothsome bagel like Bethesda or Yael. Super excited and friendly staff for the opening. Real star is the schmears though! All of them are delicious and the flavors not as overpowering as you might think from the banes. Unfortunately, can't quite get over pricing at $15 for 3 bagels or $46 for 12... So all in all a fun experience to try but not a replacement for tried and true DMV bagel shops. Salt bagel is the best one but could use more salt. Crispy outside and soft inside- well baked but I think for something so hyped up popup should have more unqiue/overall more flavorful bagels than salt, poppy, everything plain and sesame. Additionally the concept of three bagels and one tub cream cheese worked since there was three of us but we all had to get the same cream cheese flavor and I just find that concept unnecessary. I want to not like this so much because it's definitely overpriced ($15 for 3 bagels with cream cheese and no option to customize the number of bagels?), but it was delicious. I don't like toasted bagels because it dries them out and messes with the texture, but so rarely do you get truly fresh bagels served to you still hot. There's something magical about getting a bag of three piping hot bagels and scooping them into delicious spicy scallion cream cheese that just hits different than room temperature or toasted bagels. Fine, yes, I will be back. It's better to split with friends given the forced 3-bagel order, but I'm sure they would freeze well too. There's a second floor with seating as well as patio seating outside, but come early if you want to be sure to get a table; it was hopping by 9. Service was fast and efficient. Cream cheese flavors rotate weekly (and I can say spicy scallion was a great one). I wish they gave slightly more bagel for the volume of cream cheese, but really I enjoyed it quite a bit. read more

I thought this place would be overhyped but I actually really liked it. I got the Salt bagel. Very nice doughy aftertaste with a hint of salt. I also love that they give you a tub of cream cheese to yourself haha I always get upset when they spread it for you and it's not enough.
