Chef Chris is amazing and one-of-a-kind. I love how he is a "scientist turned Chef." I've had the chance to attend a few of his dinners (one when he was with LittleMeats LA) and I've been so impressed each time. No two dishes have ever been the same. The dishes are so unique and flavorful, I've never eaten so slowly to appreciate flavors and textures before! Cannabis infusion is *optional* and he doesn't pressure you to try it, but the amounts are small and apparently good for a light buzz if that's what you're interested in (also it's flavorless). It's so fun meeting new people over a nice meal. Chef Chris will answer any of your questions and I love how he explains exactly what's in each dish before we eat it. A truly amazing experience that makes you appreciate fine dining on another level!! I highly recommend going to one of his dinners or speaking with him about catering an event. We had some food allergies at the table, and he was super accommodating. I am confident that you will be impressed and want more! I am still dreaming about the herb-crusted sous vide steak and carrot soup (most amazing soup you could ever eat..trust me)...*drool*

I appreciated being in charge of how much cannabis I put in my meal and even had some leftover to bring home!

The staff literally worked their tails off and even the owner Henry wasn't too good to help them out. Serving food, making drinks etc.... Being that it was phat Tuesday you want to get your debauchery on so in turn it was very busy. Some customers got upset but the staff handled it well and did the best they could.

I'll check this spot out again, whenever I'm in town and want a taste of home. I love that the owner is born and raised in new orleans, he brings NOLA to Colorado on a serious tip. The owner was so nice and down to earth. Mr. Henry was very welcoming; he felt like family. My friend and I started with the boudin balls, which tasted more like salmon croquettes, which would have been amazing as croquettes, but as boudin balls, we did not taste rice much at all, and no sauce was served with them. I was desiring some Crawfish ettouffe and they were completely out of that, so i settle for the pasta monica with shrimp, which looked nice, but was way too salty to enjoy. I tried to push through but if I had continue to, it would have burned my tongue. The po boys was great 10/10 the fried catfish was 10/10. fries was 20/10 perfect crisp and softness fillings. hurricane drink was a nice strong & sweetness, a ball was drop when salt was rim vs sugar, but nonetheless it was close to the best. I really want to try that sold out crawfish ettouffe next time i'm here. Thank you Josh for gifting me the blueberry cake that was very sweet!!! I love Mr Henry homemade signature dessert. (Not pictured) Rewards is offered here. military discount is honored here as well. I look forward to returning and exploring the menu; next Colorado visit.

The Bayou Boys are…read morepopping up at Skyline Pub this Saturday (5/10) from 1-5 PM, and trust me...you don't want to miss it. I tried them last month and everything we had was straight-up outstanding. Heads up: they do sell out, so make sure to pre-order at bayouboys.com! What we tried: Hot Boiled Louisiana Crawfish - Spicy, flavorful, and seasoned until the spirits say, "dats enuff." Served with corn, potatoes, and sausage. Hot Louisiana Boudin - If you know, you know. If you don't... Google it. You won't regret it. Jambalaya - Just like their mama made it, in a pot their grandpa used while helping build the Causeway across Lake Pontchartrain. It's giving flavor and history. Best bite: Crawfish has never been my go-to, but if all crawfish tasted like this, it might be. Spicy, full of flavor, and perfectly seasoned. And don't get me started on the corn because I'd take a whole plate of just that. The jambalaya also hit the spot (it's my NoLa fave), and for the record... I had my first and last pickle shot. Never again. So here's your weekend plan: treat your mom to a few pounds of crawfish and thank me later.

A couple friends and I ordered a 3 lb orders each and that was perfect. I was pleasantly surprised with the size of the crawfish. The flavor was nice, but on the saltier side. Not too bad, but as someone who grew up in south Louisiana with family owned seafood businesses, I thought it could have a bit more cajun flavor and seasoning. Crawfish was juicy though and not too tough to peel. I ordered some boudin and the links were a little pricey at $7 for about a 6"-8" link. I believe it was smoked as it was on the drier side. The flavor was there, but could use some more jalapeño and parsley in the filling. All in all, a decent place for cajun seafood in an area that lacks accessibility for it.
