Coming from Chicago the food scene in Denver was underwhelming to say the least but there were always those few diamonds in the rough that truly showed through. Xiquita is one of those places. We started off the evening with the Pipian Verde which had a perfect variance of textures and the mole was incredible. We also got the Salsas Y Tostadas that came with a trio of sauces reminiscent of good Mexican food but with a special twist that brought more nuance to your normal chips and salsa experience. We ordered the Meijillones à la Veracruzana (mussels) and the Sikil Pak (vegetarian blue corn tostadas) both were absolutely perfect with just the perfect flavor combination in the tostadas and the richness of the mussels were to die for, the freshest I've had out here so far. We also ordered the Ceviche which came with luscious tuna that felt and tasted perfect. There were also these baked carrots in a beautiful verde salsa that changed my perspective on carrots. As for grande plates, we opted for the Asada de Pollo, Cochinita Pibil and Carne Asada. The chicken was ridiculously moist, melt in your more level soft and carried great depths of flavor through the bite when mixed with the rice and pico de tomatillo, this was my favorite thing to be consumed. The carne asada was a NY strip seasoned to perfection and included a beautiful salsa arriera which I wish I could get in a bottle and apply to literally everything I make at home, it had a touch of spice and a complex mix of flavors that evolved through the tasting. The Cochinita Pibil was my least favorite of the three grandes we purchased but still super good with tender shredded pork that incorporated a bit of the fat and included a great spattering of veggies and ensalada de frijol. As it was the birthday of a few friends present we received the Pan de Elote complimentary and that was awesome as well. The incorporation of corn into a dessert with the ice cream on top was truly the cherry on top of a great experience. Our server was super attentive with replacing plates, refilling water and providing explanations for each dish table side. We definitely felt that she exceeded our expectations on service we typically receive. Overall, 10/10 experience and I wish I took photos but I was hungry and plating made me want to eat right away. Will definitely be making this place a staple on my rotation when I'm looking to treat myself or a date to a nice night out. Huge thanks to the crew for putting on a meal that I won't be forgetting any time soon.

It was really tasty and fresh Gazpacho Michoacano - basically a cucumber, cotija cheese, onion, jalapeño, cilantro lime salad that paired really well with the ceviche. This was recommended by our waiter and it did not disappoint. I did think it was a bit pricey for what it was. As our main, we tried the sopes de suadero. These were two heavy loaded sopes. After these we did not have room for dessert. Green Salsa that came under the meat was so fresh and the right amount of spice. Sadly, we didnt have enough room in our stomach to try the desserts. We started with three shareable appetizers and the best one by far was the peach and ricotta with herbed oil. It was fresh and vibrant and played with the balance between sweet and savory in such a fun way. This was my husband's favorite bite. The next one was the cornbread and it was ok. The cornbread itself was sweet and a little gooey in the center but crispy on the outside. Not terrible by any means, but with the honey butter it eats almost too sweet. Then the jam it was served with was super tart and it just wasn't to my tastes. The last shareable was the charred broccoli with plums and Polenta. This was my second favorite but the char was intense and made it a little bitter. The polenta was delicious and creamy though and I loved the sauce and plums. Me and my husband shared two entrees and the first was the grilled pork. It had some really good flavors, especially the pork chop. In fact it was the best pork chop I've ever had and the peach and onion slaw went with it so well. Whoever was working the grill really knows what they are doing. This was definitely my favorite bite. What didn't work was how overcrowded the plate was. The potato salad also felt unnecessary and the curry flavor with all the other things on the plate was an odd choice. It was also unevenly salted on the cauliflower and some were bland and others super salty. The other entree we got was the salmon. The sauce was great and so were the crispy potatoes but the salmon was underseasoned and the skin wasnt crispy, so that was a bummer. The salad was really nice but we didnt enjoy the bagel chips as they were hard and in really large pieces. Dessert was good but the plum tart, wasnt actually a tart but more of a galette. I wasn't expecting Puff pastry but the cream and plums were delicious. The apricot sorbet was nice and bright and made a great way to end the meal. Overall the food had some real highs and lows, but the service was very nice. All the wait staff was very attentive and the restaurant is small but inviting. I love that this is a scratch kitchen and the menu changes daily but it can also mean that some dishes aren't as refined. I would definitely come back and try some of the other things cause when the food here hits, it hits good and is worth it to me to keep coming back.

Always exceptional food, beautiful presentation, with sustainable practices, this is the place to celebrate a special occasion. The current menu, which runs through June, is the final menu by the current chef and it highlights Costa Rican cuisine. The chef and staff have gone to great lengths to showcase this Latin American dining experience. The Barramundi was by far my favorite on the menu, although that is relative among the 7-course meal. Everything we tried was knock your socks off delicious. I love the quiet dining room, with a chance to visit with others sitting near you at the chef's counter. Their fermentation program is second to none. One thing that always makes a meal memorable is the service. The Bruto team takes care of everything and knows just about everything food or drink wise. Again, I counted the kitchen staff: The ration is 1 to 2, meaning you will feel like a VIP with the personal interaction. The kitchen, 18-seat dining area and foyer are all one open, neo-industrial space in which concrete and steel are somewhat softened by lighting and splashes of color from food or dishware. They have two groups of seating per evening, one around 5pm and the other at 8pm, which they stagger into 3 groups each so food can be batched and presented appropriately. Everything is thoughtfully curated and choreographed, from the beverage selection to the portions of the plating that you get to see between courses. But the choreography does feel a bit stiff and cold at times. While the maitre'd was lovely, it was harder to engage with the other staff. I generally avoid alcohol pairings (my taste buds get overstimulated after the first few rounds), but I did enjoy my cocktail from the a la carte menu. Through our 7 course tasting menu, we explored a fun fusion of local and Central American cuisines. The bread mentioned in previous reviews is gone, but we traveled from ocean, plains, and forest in various presentations of small plates. Some of the bites seemed less inspired (of course adding pate and caviar is going to feel fancy), but other courses like the red snapper ceviche and chocolate + papaya dessert were playful, tart, and funky. You can tell that sustainability is also a huge part of the consciousness here. Be open minded to different flavor and texture profiles and know that not every dish is meant to please everyone. We ended our meal with a copy of the evening's menu as well as a satchet of house-made spices meant to evoke the essence of this Costa Rican fusion. The wine experience was equally wonderful. Their sommelier was incredibly knowledgeable but also friendly and approachable, which made exploring the pairings fun rather than intimidating. What really stood out was how Beckon manages to deliver such an elevated dining experience while still feeling relaxed, personal, and welcoming. What impressed me most was the creativity of the menu. Ingredients that sound incredibly simple on paper--carrot, corn, potato, tomato--were transformed into sophisticated, beautifully composed courses. As the meal progressed, the menu moved into trout, sea bass, duck and lamb before finishing with several creative dessert courses. There were some combinations I never would have imagined ordering, yet they worked remarkably well. The Corn & Jimmy Nardello, Trout with Turnip & Tarragon, Sea Bass with Clam & Fennel, and Duck with Ground Cherry & Summer Squash were particular standouts. Even the Wagyu Fat Sourdough was memorable--which tells you something about the attention given to every part of the meal. The intimate chef's-counter setting is a huge part of the experience. You get to watch the kitchen work and see the precision and thought that goes into each course. The pacing was excellent, the service was knowledgeable without being pretentious, and despite the sophistication of the food, the evening felt relaxed and enjoyable. Beckon isn't inexpensive, and this isn't the place to go if you're simply looking for a great steak and a bottle of wine. You're paying for a culinary experience and putting yourself in the chef's hands for the evening. For us, it delivered.
