The young woman working immediately acknowledged us before we even finished writing our info down and asked how many were in our party. You grab a bowl and tongs, then walk through the different sections choosing your ingredients. They had a good variety of veggies, noodles, meats, seafood, tofu, etc. Pricing is by weight at $15.99/lb. Once you finish building your bowl, you head to the cashier where they weigh it and you choose your broth and spice level. The broth selection was surprisingly huge, around 15 options if I remember correctly. I got the Tom Yum broth mild spice, and my girlfriend got the Organic Miso mild spice. We also added jasmine green tea and white rice for $1.99 each. After ordering, they give you a table number and you can head over to the self-serve sauce station while your food is being prepared. The sauce bar had ponzu, sesame oil, soy sauce, sriracha, Tabasco, scallions, cilantro, red onion, satay sauce, shallots, minced garlic, chili powder, chili oil, and more. The soups came out quickly and were served over a live flame at the table, which was a nice touch. Both broths were excellent. Even at mild spice, there was still a pleasant kick.
