Their cooked enough to where you get a crispy texture, yet it's not over-crispy. The carnitas are fried golden brown and have crispy exterior. The pastor is spicy, you get enough heat, but it doesn't take your head off. I saved the best for last and that is the barbacoa. Imagine the most tender, melt in your mouth pot roast, take that and multiply it by a 100 and you have the barbacoa at El Paisa. A touch of cilantro and grilled onions rounds out these beauties. You're served with 2 different sauces and slices of radishes to cleanse your palette. The stand is located in a parking lot with a discount tobacco shop.
