After a short wait, Eddie, the night manager, welcomed me and took great care of me. I asked for his recommendations on chicken ramen and a cocktail--and he absolutely delivered. I ordered the JINYA Chicken Ramen with egg, Impossible gyoza, a salad, and the Smoky Wokashi Old Fashioned. Everything was flavorful and perfectly prepared. To top it off, Eddie suggested the matcha tiramisu for dessert. It was my first time trying it, and wow--I loved it! From the food to the service, everything was exceptional. Some of the first include included the Kinilaw, the Lumpia, and the Laing. The Kinilaw is a yellow tuna dish. The tuna melted in your mouth and the flavors from the coconut-leche dressing, ginger, and jalapeño, as well as the fresh mint, added to the flavor palette. I didn't try the Lumpia because it is skinny spring rolls made with ground pork. My wife and youngest said they were great in really enjoyed the taste. The Laing was a vegetable dish involving creamy brace kale with garlic, ginger, and coconut milk. Of course it sounds different and it was, but in a really good way. Again, the way the flavors worked together was really great. The last dish we got was the Curry. It is grilled red snapper with braised, mung beans, tempura sweet potatoes over coconut red curry sauce and rice. It was so good. Again, the flavors in this dish were amazing. The fish was cooked just right. And the way the dish worked together was a piece of culinary art. They also had cool cocktails, good beers, and even mocktails for our teenager.
