You can actually see they don't use any pre-packaged cheese because they shred it right in your field of view from real loafs of cheese. I have experience in a deli so I know my cheeses, and while I was talking to the chef, I got to know precisely what kind of mozzarella they would use to get the best quality on a pie (a low moisture type of mozzarella that doesn't affect the cook in the brick oven).
