    Very long wait, about 45 minutes for the pizza. The Margherita was very disappointing, all sauce . The mushroom pizza was delicious! That was worth the wait. The ricotta and the sweet carmelized onions with the mushrooms were very harmonious!

    The wait was about 20 minutes it was worth every bite. The presentation of the pizza was added a little of Italy Gazette paper. The size of the pies can easily be shared for 2 the Panzanella salad was perfectly balanced with almonds tomatoes arugula red onion and cheese. They offer a variety of gelato and SanPellegrino Italian flavored drinks. Outdoors seating with oversized umbrellas.

    This good truck is just outside the Oak of Boerne in the parking lot. We have had a plethora of their pizza and their delicious sandwich'. Today, Steve "chef" made me the meatball sandwich!!!! So good!! It can easily feed a family (or two hungry people. Nice to see another great food restaurant in Boerne!

    Our new favorite pizza spot. We drive 45 minutes just to enjoy this delicious pizza. Highly recommend the prosciutto and fig!

    As a rule, I seldom award a five-star review after a single visit. A truly exceptional rating requires consistency, something that can be judged only over time. However, every rule has its exception, and my recent experience at Pizza Volterra, a new food truck in Boerne, Texas, was so thoroughly impressive that I am compelled to break my own protocol. Manned by the focused and clearly passionate Chef Stephen and his assistant, this unassuming operation is producing some of the most authentic and delicious Neapolitan-style pizza I've encountered in Texas, all from what appear to be two small, fiercely hot wood-burning ovens mounted in their truck. A quick search on Yelp and Google reveals a smattering of enthusiastic but vague praise--often amounting to "OMG best pizza ever!!"--and while the sentiment is certainly understandable, it hardly does justice to the culinary skill involved and is another reason I felt compelled to provide a more thorough account. My meal began with the farro salad, a dish that immediately signaled I was in for a treat. Too often, a salad is an afterthought, but this was a vibrant, thoughtfully constructed bowl. The ancient grain was cooked to a perfect al dente, retaining its satisfying chew and nutty flavor. It was tossed with a medley of fresh, roasted vegetables, imported Castelvetrano olives and a light, bright lemon vinaigrette that enhanced the ingredients without overpowering them. It was a bright, refreshing start that cleansed the palate and built anticipation for the main event. The star of the show was undoubtedly the "Carne Diem" pizza. It arrived at the window looking like a masterpiece, and the taste confirmed it. The crust was the highlight--a perfectly charred Neapolitan-style base with the characteristic leopard spotting that indicates a masterfully managed high-heat oven. It possessed that sought-after combination of a crisp exterior and a soft, delightfully chewy interior. The foundation of San Marzano tomato sauce was bright and clean, with the perfect level of acidity to cut through the richness of the cheese and meat. Speaking of the meats (pepperoni, crumbled Wagyu sausage, prosciutto, and pancetta), they were not merely toppings but integral components, crisped and rendered in the intense heat until their edges became beautifully desiccated, concentrating their savory flavor into every bite. For dessert, I opted for a scoop of the chocolate gelato and a scoop of the peanut butter stracciatella. It was a superb conclusion to the meal. The gelato was dense, creamy, and intensely flavored, a world away from commercial ice cream. The chocolate was deep and rich, but the peanut butter stracciatella stole the show--a smooth peanut butter base interwoven with delicate, hardened shards of chocolate that provided a wonderful textural contrast. Pizza Volterra is a testament to the idea that great food doesn't require a brick-and-mortar location, just skill, passion, and high-quality ingredients. Chef Stephen is crafting something truly special, from the balanced salad to the exquisite pizza and the delightful gelato. It was a five-star experience from start to finish, and I wholeheartedly recommend a visit. A few things to keep in mind: --Seating is "al fresco" only at this point. --Chef Stephen prepares enough dough to make approximately 100 pizzas per day, so plan accordingly. --The pizzas arrive unsliced. You cut your own slices with a pair of shears that accompany the pizza. I felt like I was Marion Cobretti in COBRA. Extra points if you get that reference.

    Excellent! We had the Carne Diem & the Prosciutto e Fichi. Both were very good! All fresh ingredients and we loved the crust. Definitely will return!

    OMG! To say the pizza, salads and the Panuozzo is excellent is quite an understatement!! We've had the Panuozzo twice already and it's consistently delicious.... We've tried 3 of the pizzas and hands down the best pizzas ever! The crust is baked to perfection and the ingredients are so flavorful. We will will surely be returning. Next time I'll take more pics!! These are hand made to order so don't be in a hurry. They are worth the wait!!

    Volterra is easily the best pizza in Boerne. The crust is incredible -- perfectly crisp on the outside and soft in the middle with that wood-fired flavor that's hard to find anywhere else. I have a gluten sensitivity and usually regret pizza the next day, but not here. Zero issues. You can tell they use clean, high-quality ingredients. The sauce tastes fresh and balanced, and the cheese blend is just right -- flavorful without being greasy. Everything about the pizza feels thoughtful and well done. The staff deserves a shoutout too -- they were friendly, welcoming, and made me feel right at home from the second I walked in. You can tell they care about the experience. And the gelato? Unreal. Smooth, creamy, and the perfect way to finish off the meal. I'll definitely be back tomorrow. Boerne needed a place like this.

    Gorgeous pizza pie, all of the ingredients are top notch from the fennel sausage that has just the right amount of fennel to not be overpowering, to the fresh shaved cheese to finish. The crust was slightly crisp on the bottom, soft and airy at the crust. Can't wait to make a day trip back to Boerne with my family to share this awesome place!

We ordered a standard Margherita and a "build your own". Both were delicious. Crust was the ideal thickness. Another 45 seconds in the brick oven and they would have been cooked perfectly. Every staff member we interacted with was extremely polite, respectful, friendly, and professional--noticeably more than at almost every other restaurant. It's the Star Wars themed decor that was a large part of the reason to try Dark Side, and the collection truly is impressive. This is not something anyone would expect to find out in the country on a rural highway. We'll likely return again, hopefully when the breeze is from a different direction and without having to listen to a loud speech. If you're into really cool movie memorabilia, check 'em out.

Today, the delivery was received sooner than the promised time (yay!) The pizza is pretty good. Those wings fall off the bone and taste AMAZING! Granted I did see that they had a whole lot of orders coming in but we were the only ones in the dining area and it was just a longer than usual wait. We will still make our way back there next time we are in Boerne because the pizza is absolutely top notch!
