My husband and I both got the bun thit nuong. The portion was huge and could easily have been shared. The meat was really flavorful, and the fish sauce was also very good. The pork spring rolls were ok, nothing special. As for the ambiance, it definitely had more of a hole-in-the-wall feel. It's like a 4.4 but I'll round up to five. They got the most important parts right. First one being the broth. It was clear, yet rich, umami and flavorful. I ordered the combination pho, or dac biet. While it doesn't look like it in my photos, they provide an ample amount of meat, it seemed almost never ending when I was eating. All the meats were quality, cooked perfectly and tender. The herbs and veggies provided were the typical bean sprouts, basil, jalapeños and lime. The chili sauce on the table is supposedly made in house based on other reviews, however I did not verify that. It's more vinegar based vs. oil based like sate is. It has a similar flavor profile to sriracha, with just a tad more heat. While it does have a decent kick, adding the amount to reach the spice level I desire changes the flavor of the wonderful soup a bit too much. I asked for Thai chilis but they don't have any. Had this placed bookmarked for a while now to take my parents since they had 5 stars and was not disappointed, cute little mom and pop restaurant, I believe it was the owner that served us and she was very kind. We all ordered the build your own bowl of pho and a couple of our proteins were mixed up, but it was quickly reconciled and the meat we actually ordered was brought on a separate plate. Can't complain about having extra! On that note, I would've been upset if our orders were wrong and the food was bad too but everything we got was really good!! Rare steak, flank, tendon all tender, meatballs could've been a little fresher but not off-putting at all. Noodles were cooked perfectly and side veggies all super fresh. They also give you the option of raw or blanched bean sprouts without you needing to ask. The flavors were clean, comforting, and honestly 10/10 delicious--one of the best bowls of veggie pho I've had. Their menu has a great variety, and I appreciated seeing tofu spring rolls as an option. I'd love to also see them add a vegetarian and a chicken egg roll (no pork or shrimp) option as well as a vegan Pho option in the future--it would give them an even stronger edge. Strolled in on a Monday at 11am, and it already had people in seats. This is a good sign. If a Pho place has people so close to opening, it usually means people were craving it and came in. Pho broth was good. A bit on the saltier side, however I do prefer it that way. Good portion of meat in the Dac Biet (Steak, Meatball, Brisket, Tendon and Tripe). I appreciate that they put a bit less sprouts etc. on their plate to reduce waste, you can always ask for more. They use the same bowls my friend's family uses... I don't know how much more authentic you can get! The Iced coffee was good too. Pretty standard. A good pho place that is open late that isn't in Westminster/Garden Grove. My continued visits to this location are a testament to their food quality and service. My first time having Pho Lab was actually delivery through UberEats. I never get noodle soups delivered because it never hits the same (you know what I mean lol). When I had that first delivered bowl though, I just knew I needed to come in to enjoy a fresh bowl in person. The broth is deep and flavorful, the ingredients always so fresh. The menu is not as big as some places I have been, but everything I have tried has been delicious. Also the service is always great! I've been here too many times to count by this point, both alone and with company. This place hits every time, with all my people too.
