    Phamish! Scooting though Darlinghurst you could easily miss this gem. But you need to visit. We went here on Sunday afternoon at 5:30pm as they opened and got seated immediately. Staff are definitely not the friendliest faces in the Sydney restaurant scene but they are busy! So I will excuse that in this review. The food is delicious with every single dish we ordered 5/5 stars. Just go up and order a table full of food and enjoy! Try the specials they were a real treat :)

    Great value for sure. Love this spot. We spent $25 a person on our dinners here and shared plates among four of us including an entree. It's a couple dollars for BYOB and we grabbed a bottle of wine from East Village Hotel (around the corner). The salt and pepper squid, soft-shell crab, duck salad, vegetable curry, beef ragu and rice paper rolls are all amazing. You order at the counter and it comes out super quick. I like that too. The only bad thing about Phamish can be the wait, especially if you're really hungry. Go early if you want a table right away. Otherwise I'd say it's well worth your wait.

    You know those times when you mention to a friend that you will be coming to visit several weeks in advance... And they insist that they must, simply must take you to this ONE place? That was the lead in for Phamish, and I did go in with a juxtaposition of high expectations and previous experience of Vietnamese food that left me thinking I'd be likely to enjoy my food, but not necessarily love it. I have previously found Vietnamese food to be lovely and light but without a lot of depth or variety. Ok, so this place doesn't take over the phone bookings apparently, and you need to put your name down when you arrive and wait (fortunately there are pubs around). Be aware that some people will however show up at lunchtime to reserve their dinner spot and as such the evenings can mean a significant wait. It's a vibrant little joint, good ambience but so noisy. Keep your conversations close and be prepared to leave hoarse. We some salt and pepper calamari, ginger and lemongrass chicken, crispy skin chicken, caramelised pork, some vegetable dish... I feel like there was more but I can't remember what it was. Everything was deeply flavoured and clearly unique to the other dishes on the table. The consensus on our table was that the crispy skin chicken was the best any of us had ever had. The pork was a close second. I wish I could have tried everything. We BYO'd wine, and between six people only had to pay 20ish per head for a very satisfying dinner. One for the memory banks for sure.

    My friends LOVE Phamish....I don't... why because I don't eat meat or calamari or whatever other animals Phamish serve up.... basically what I'm saying is if you're vegeterian you're going to have a very poor expereience at Phamish. The veggie options are bland and you kind of get the feeling they needed some greenery on the menu to counter all the meat dishes.... Those of you who know me, know that I don't have a problem with people eating meat - I just have a problem with restaurants forgetting that there may be customers (and an increasing amount of customers) who don't eat living creatures...

On entering I was greeted enthusiastically by one of the staff and ask if it was my first time here. He spoke with conviction about the menu and the options. Definetly one point of difference from standard pork roll spots where they usually shout at you "what you want, what you want?". I decided to go with the beef roll. The beef roll contained succulent beef eye fillet with your standard salad options and chilli. I was given the option of the white or whole meal roll. I went for whole meal. The roll was really good and was packed with salad and plenty of meat. They sell the roll for $10 which is a little steep considering that the roll was smaller then the standard bread rolls most bakeries sell. Did taste great though and other options looked really good. Just feel they need to adjust the price down.

And the chicken meat was dry and lacked flavour. Not sure what happened in the space of mere weeks, but they're now the same as your local banh mi bakery - just a lot more expensive. There is certainly no differentiator anymore. Such a pity as this place used to be fantastic.

But if a big night is not what you are looking for, do not let this restaurants setting deter you from a meal that your stomach will thank you for. If you're looking for a meal you won't be cooking up yourself at home, this is the place to go. Great chefs cook up exotic and authentic food that they refer to as "the nouvelle cuisine of Asia." They serve up delicious meat and seafood dishes and wonderful vegetarian meals that do not skimp out on any of the flavorings. If you're planning on going with a few friends or just looking for a table for two, there are a lot of dishes to share. If you're like me and think to yourself after looking at the menu "there is no way I can choose one dish!", this is the perfect solution. Grab a few entrees, salads and platters and get a taste of everything this place has to offer. Saigon Bay has been open for more than 15 years and has established a name for itself in the Darlinghurst area. It does not boast a modern and decorated interior but it is homely, warm and friendly. This just adds to the authenticity and allows the food tospeak for itself. A little bit about the food; Vietnamese food does not shy away from rice and legumes and the dishes have a hefty supply of delicious vegetables, some of which you won't find in your average supermarket. The use of salt and oil is kept to a minimal, the flavorings largely come from fresh and dried herbs that season the food in a healthy and tasty way. There are well priced banquets that serve a minimum of four people and all other meals are reasonably priced for dinner, unfortunately no lunch time special deals. It is not open for lunch on weekends and it is recommended you book a table a couple of days in advance due it's popularity, especially Friday and Saturday nights. They are open until 11 pm all week and you can B.Y.O. Other nifty details; they home deliver, takeaway is available, they are renowned for their sizzling dishes, e.g. sizzling duck, the chefs specials are a must try.

Pho which is a vietnamese cuisine that is cooked with rice noodles, a few herbs, and a choice of meat, really depends on the flavor of the broth. However, the broth here tasted like water and was salted at best. I used hoisin sauce to add flavor. The few cilantro pieces which were cut sooo tiny that you couldn't even tell if they were fresh or not, tasted terrible. The bean sprouts were already soaking in the broth and the beef was already chewy. I don't even want to describe the Asian meatballs that were added. I didn't even touch it because you never know what random cuts of meat or additives are put into the meatball. In addition, while there were only a few other customers, only the chef/owner was available. Toward the end of my dining, another employee arrived at which point I asked for water. I was never even asked what I wanted to drink. I do not recommend coming here.

Its not close to my work, about a 15-20 minute walk from the CBD, but figured the walk would be nice and it'd be a bit of exercise. So in the span of maybe two months, I ordered these rolls for lunch. First tried the veggie ham roll, which was really good. They have the option of brown or white bread and they put loads of coriander, carrots and chilies that are delicious but burn your mouth. The staff is super friendly and if you call ahead you can get the roll pretty quick. It does get busy around lunch time. I tried the chicken roll - yummy, the traditional vietnamese pork roll, also very tasty and the recovery roll - which is a bit "australianized" as it is a chicken breast with avocado. It's a very "subway" kind of sandwich, but they do add the coriander and chilis, making it better. Tried to get the shredded pork roll once but they ran out. Definitely like this place, would probably get it more if it wasn't so out of the way.
