The process will take 30 minutes, so keep that in mind. You will also have the rest of the beans for 4 to 7 days before being able to use them. I also grabbed a 12oz bag of their Ethiopia Yirgacheffe Natural. It took about 20 minutes for them to complete the roasting process. After 4 days, I grinned the beans for a pour over and could tell this was already going to be a decent cup of joe. I did not see any significant bloom but the draw time was great based on my grind size. Cons: This shop is too far and too small so if there is a line and you don't have time, you might have to skip the experience. While I don't anticipate Mameya expanding, I would come back in a while.
