My stay in Cheyenne was unexpectedly wonderful. Stumbled into a Parisian/Western bistro. Extensive menu but decided on this Brie grilled cheese and French press w/ western flair! Tres bonne!

I started lunch with the Tomato Bisque soup, and was advised that it was gluten free (it was). The soup was wonderful and I'd actually go back just for this, it had a great depth of tomato flavor, rich and creamy. My lunch partner had the French Onion soup and she loved it from the cheesy top, floating bread crouton and lots of onions. We both had the Spicy Ground Beef salad. It was just about the right servicing size with a very flavorful base of coconut rice topped with cucumbers, carrots, sliced peppers and spice ground beef along with fresh spinach topped with a spicy mayo dressing. I thought the ground beef was a bit too salty, at least for my taste. The menu has evolved nicely as the first couple times I ate here it wasn't the best. The waitress did a great job of making sure our water was topped off along with my coffee.

From the street, this looks like a very small bar, but it goes all through the building once inside. Nice decor, warm and bright. They're new, so still training staff, adding tables, finalizing menu and have big plans. We ate from their limited menu (expanding next week) of gourmet grilled cheese and soup/chili and were not disappointed. There was a lot of table side finishing, usually torching brie, French onion soup. It wasn't necessary for me, but extra effort is there. Lots of speciality drinks coming as well. This is one to watch.

I was really honestly hoping this place would be good. Unfortunately, it wasn't even remotely close. Just like the cucumber that came with my salad that was what is known in Culinary School as a door stop cut, my food was just as inconsistently cooked. The food in my opinion is at best mediocre and very inconsistent. To be fair about the ambiance the restaurant is undergoing some remodeling, so I'm not going to rate that portion for my review. I felt the service was not the greatest. The restaurant was empty upon arrival, and stayed empty for the remainder of my time there. The waitress in my opinion didn't seem interested in working there. And she lacked a sense of knowledge for good customer service. For instance if I ask what her opinion is on something, I'm looking to hear what she think about a product, not what is the most popular product is. I did leave her a $15 tip because I had a feeling that was about the most she was going to make for that night. I ordered the Coq Au Vin. At first try the mashed potatoes that this was served over were flavorless the Sauce was extremely peppery and the chicken was moist at least but the pepper over powered everything. I could also tell that the wine that goes into the sauce was not added. In my opinion probably the best thing out of this meal was the French Baguette. It had a wonderful crackle for the crust and was fairly close to being authentic French bread. For dessert I ordered a Crème Brûlée, this is a very difficult dish to get right, and unfortunately, they didn't get it right, it was bland and lacked that something special that crème Brûlée is intended to have. Overall, I left hungry because I just couldn't eat my food. I did however get a 50% discount on my order which seems more than fair to me. In my opinion if something isn't done quickly and this restaurant doesn't have some major changes especially with the standardized recipes it will be closed by the end of the year.

I gave Paris West Four stars because I didn't want to bring the ratings down, but the food wasn't the best. I had the chicken and waffles. I guess the waffles are frozen waffles and the chicken was probably from a freezer pack too, not as it appears in the photo on their website. Tasted OK but they need to improve the quality of their food. I appreciate what they're trying to create and hope their business does well. I would go for something else like the grilled cheese next time. I like the decor. I would encourage be able to try, but would not highly recommend.

I feel compelled to leave a review. I was previously warned to stay away from this place, but we decided we would try it and give it our own review. I wish I would have listened. I ordered the regular grilled cheese. $14. I'm thinking this thing has to be decent for the price. Wrong. Two hard mini biscuits and some shredded cheese, smaller than my hand. That was all that showed up. Eventually I got my side of French onion soup- I'm pretty positive it was canned soup with some added burnt onions, some crunch garlic bread, and some cheese on the top that never even melted into the soup. My husband got the Cowboy grilled cheese, which had way too much bbq sauce on it and came with an entire skillet of additional bbq sauce. His side was chips (the chips were the only good thing out of this meal). He also got some super bland, sloppy chili that came with a quarter of a hard cinnamon roll. I just have to post pictures because words can't make you feel this experience enough. $64.66 later, we won't be returning. At this rate, I would honestly be surprised if this place lasts another 3 months in business.

Never ceases to amaze and the menu just keeps getting bigger. Had the Amelia Airheart and Downtowner to drink, both sweet and strong. Tried the fried goat cheese discs which were so good they were devoured in just a minute. Had the soup flight which I'd been looking forward to for weeks. Hubby had the mine crust and chips which mysteriously disappeared within minutes. Daughter had the salmon and she even ate some veggies which impressed me. Son had the coq Au vin chicken which also disappeared in a matter of minutes. Server was attentive without being pushy. Seriously love this place. Cannot say enough good things.

What a fun little place!!! I came to eat by myself and felt comfortable the whole time. Food was really yummy, ambiance is great. Waitress was super sweet! Already looking forward to coming back!

The food was amazing. The taco salad was the best I've had. The help was fast and friendly. The location was downtown. Very clean.

We had the shrimp scampi and snakebite pasta. Yum! Really fresh salads. Friendly service. Definitely recommend.

Came out on a hot hot plate, which, I believe, is critical, since the prolonged higher temp keeps the fat rendering until you cut the meat. And a good ribeye has tasty fat which runs clear and full of flavor when it's served correctly. Garlic mushrooms were fantastic. Cream spinach excellent. Seth was my server. Good guy. Was covering another section and saw me sitting and waiting for an extended time so he came over to get me started. Incidentally, I ordered a Coke and water with a bunch of lemon wedges. He legit brought a bunch of lemon wedges with my two drinks. No one ever gets what a bunch of lemons is. He nailed it. Basically, if I ask for a bunch of lemons, when I'm done eating, there should be a few wedges left. Happy I stopped here.
