    My stay in Cheyenne was unexpectedly wonderful. Stumbled into a Parisian/Western bistro. Extensive menu but decided on this Brie grilled cheese and French press w/ western flair! Tres bonne!

    From the street, this looks like a very small bar, but it goes all through the building once inside. Nice decor, warm and bright. They're new, so still training staff, adding tables, finalizing menu and have big plans. We ate from their limited menu (expanding next week) of gourmet grilled cheese and soup/chili and were not disappointed. There was a lot of table side finishing, usually torching brie, French onion soup. It wasn't necessary for me, but extra effort is there. Lots of speciality drinks coming as well. This is one to watch.

    I started lunch with the Tomato Bisque soup, and was advised that it was gluten free (it was). The soup was wonderful and I'd actually go back just for this, it had a great depth of tomato flavor, rich and creamy. My lunch partner had the French Onion soup and she loved it from the cheesy top, floating bread crouton and lots of onions. We both had the Spicy Ground Beef salad. It was just about the right servicing size with a very flavorful base of coconut rice topped with cucumbers, carrots, sliced peppers and spice ground beef along with fresh spinach topped with a spicy mayo dressing. I thought the ground beef was a bit too salty, at least for my taste. The menu has evolved nicely as the first couple times I ate here it wasn't the best. The waitress did a great job of making sure our water was topped off along with my coffee.

    I was really honestly hoping this place would be good. Unfortunately, it wasn't even remotely close. Just like the cucumber that came with my salad that was what is known in Culinary School as a door stop cut, my food was just as inconsistently cooked. The food in my opinion is at best mediocre and very inconsistent. To be fair about the ambiance the restaurant is undergoing some remodeling, so I'm not going to rate that portion for my review. I felt the service was not the greatest. The restaurant was empty upon arrival, and stayed empty for the remainder of my time there. The waitress in my opinion didn't seem interested in working there. And she lacked a sense of knowledge for good customer service. For instance if I ask what her opinion is on something, I'm looking to hear what she think about a product, not what is the most popular product is. I did leave her a $15 tip because I had a feeling that was about the most she was going to make for that night. I ordered the Coq Au Vin. At first try the mashed potatoes that this was served over were flavorless the Sauce was extremely peppery and the chicken was moist at least but the pepper over powered everything. I could also tell that the wine that goes into the sauce was not added. In my opinion probably the best thing out of this meal was the French Baguette. It had a wonderful crackle for the crust and was fairly close to being authentic French bread. For dessert I ordered a Crème Brûlée, this is a very difficult dish to get right, and unfortunately, they didn't get it right, it was bland and lacked that something special that crème Brûlée is intended to have. Overall, I left hungry because I just couldn't eat my food. I did however get a 50% discount on my order which seems more than fair to me. In my opinion if something isn't done quickly and this restaurant doesn't have some major changes especially with the standardized recipes it will be closed by the end of the year.

    My second time here, and it's continuing to impress! My husband ordered the Cowboy Grilled Cheese, which he LOVED. When I tasted it, I found it quite straight-forward and satisfying. Warm pulled pork and melted cheddar inside a perfectly buttered and pan-toasted envelope of thick-cut white bread. The real star was the bread: impossibly light and airy. Yum :) I ordered the Chicken with Kale Pesto Sandwich and specially requested it on a croissant bun. Wow. The grilled chicken breast was absolutely moist and juicy! The bacon was thick, the pesto fresh, and the croissant bun the perfect combination of crispy, chewy, and buttery. Since I'm a saucy sandwich kind of girl, I ordered extra mayo and hot sauce on the side, which I mixed together to slather on each bite separately. And yes, it was GOOD. The Padre's Hot Sauce, apparently made by a local man (whose daughter happened to be our server today), was a revelation. Both the mild "Yellow Jacket" and hot "Bodacious" are made through a lacto-fermentation process that results in a luscious, complex chili flavor without the harsh vinegar edge that you get with most hot sauces. My hat's off to Mr. Padre for your delicious and painstakingly created hot sauce and to Paris West for featuring this superior, locally-produced artisanal product! I'm actually grateful that their espresso machine was on the fritz today, because I would not have otherwise tried their drip coffee, which was a special edition small batch dark roast, whose name escapes me. It was fantastic. And we culminated our meal with dessert: carrot cake for my hubby and Orange & Sugar crêpes for me. I found the carrot cake unpleasantly cold, dense, and barely carroty, topped with uninspiring cream cheese frosting and untoasted pecans - pass. The crêpes, on the other hand, were wonderful. Perfectly thin, uniform, and tender. With a thin brushing of orange marmalade inside and, be still my heart, a syrup-poached orange slice garnishing each folded pancake. I think a nice dollop of homemade whipped cream would've sent this dish over the top, but then I can be an over-the-top sort of person, so maybe don't listen to me :) Long story short, it was a fantastic mid-week brunch, and we will be back soon! I hope you'll join us :)

    I gave Paris West Four stars because I didn't want to bring the ratings down, but the food wasn't the best. I had the chicken and waffles. I guess the waffles are frozen waffles and the chicken was probably from a freezer pack too, not as it appears in the photo on their website. Tasted OK but they need to improve the quality of their food. I appreciate what they're trying to create and hope their business does well. I would go for something else like the grilled cheese next time. I like the decor. I would encourage be able to try, but would not highly recommend.

    I feel compelled to leave a review. I was previously warned to stay away from this place, but we decided we would try it and give it our own review. I wish I would have listened. I ordered the regular grilled cheese. $14. I'm thinking this thing has to be decent for the price. Wrong. Two hard mini biscuits and some shredded cheese, smaller than my hand. That was all that showed up. Eventually I got my side of French onion soup- I'm pretty positive it was canned soup with some added burnt onions, some crunch garlic bread, and some cheese on the top that never even melted into the soup. My husband got the Cowboy grilled cheese, which had way too much bbq sauce on it and came with an entire skillet of additional bbq sauce. His side was chips (the chips were the only good thing out of this meal). He also got some super bland, sloppy chili that came with a quarter of a hard cinnamon roll. I just have to post pictures because words can't make you feel this experience enough. $64.66 later, we won't be returning. At this rate, I would honestly be surprised if this place lasts another 3 months in business.

    Never ceases to amaze and the menu just keeps getting bigger. Had the Amelia Airheart and Downtowner to drink, both sweet and strong. Tried the fried goat cheese discs which were so good they were devoured in just a minute. Had the soup flight which I'd been looking forward to for weeks. Hubby had the mine crust and chips which mysteriously disappeared within minutes. Daughter had the salmon and she even ate some veggies which impressed me. Son had the coq Au vin chicken which also disappeared in a matter of minutes. Server was attentive without being pushy. Seriously love this place. Cannot say enough good things.

    Came here tonight with my girlfriend for dinner to try something new. I'm giving it 4 stars because the service was friendly, timely, and overall great. And we really enjoyed the crème brûlée. But there could be some improvements. The food was good and it was well-presented. But we felt the food lacked flavor a bit and wasn't quite worth what it costed. The ambiance would be a bit better if they had softer lighting. And the tables/couch seating felt a bit awkward. Overall, I'd go back to try the charcuterie board with friends earlier in the day and/or for dinner once they've made some changes. We still enjoyed our night. Hope this review helps!

    Coffee machine is down. Crepes flavor cannot mix and match. Crepe is too thick , taste like a fajita! Wont recommend

    Nice ambiance but the food here is mediocre. I expected a good french baguette but my sandwich was made with crappy soggy bread instead.

If I owned the place the only thing I would change is not having my servers walk constant laps around the tables. I understand the concept but the restaurant isn't that large and it's a little distracting with a server walking circles around you. And, oh the food was soooooo good! The staff greets you and helps get you focused on the order. You order and pay and they bring the food to your table. We recommend the "surf and turf" combo we pulled together: - California burger, with avocado and more on top - Tuna burger, atop lettuce and tomatoes with special aioli sauce - and a strawberry shake with whipped cream and real berries Wow what a dinner! Then after we placed our order including their recommendations they told us they're not serving lunch for 20 more minutes if it's ok if we wait for the order to be put in. That was awkward and uncomfortable but we waited it out. Though my daughter ordered off the kids menu , the only menu provided to her and it was breakfast items. So her waffles came out first then she waited 15/20 minutes for our food to come out to eat with us. Her food said it came with strawberries and whip cream. It took 3 trips to get her order delivered properly. I will say the food was delicious. It was weird though when we got the check that we were up charged for regular fries with our burger and the bacon for my daughters waffles. The server asked her with her waffles if she wanted bacon or sausage without sharing it was an upcharge. That's my fault for not reading the menu. Though I do believe when you are offering an item you should tell the guest their is an up-charge for that item. Then when asked what sides come with the burger she said fries, salad or chips. I chose fries. Then when bill came I saw the fries were an upcharge. When waters were refilled it was spilled all over the table. Cup should have been removed from table to refill not pour over. Food was great ! Service was very disorganized though their personalities were good . The food isn't good enough to make me want to give them a second chance with the service provided
