Pane Nudo opened two years ago in Downtown Hilo, taking place of another favorite bakery location. My friend told me about this place and said it was a must try here. Their store is only open on Wed and Sat, so you should definitely plan ahead to visit this store on those days in the morning to have a better selection of bread choices. I tried their Asian Pear foccacia and it was absolutely amazing; pear, honey, and manchego cheese was a perfect harmony of sweet and savory flavors akin to well-balanced charcuterie board. We initially didn't realize that this bakery was only open twice a week. Patrons were ordering a sizable amount of bread with one guy taking at least a half dozen mini baguettes and two big loaves. At the rate people were buying, this house of flour, water, yeast, and salt would be out of bread in no time. We got two focaccia slices: goat cheese roasted pepper basil and an ali'i mushroom garlic. Both were chewy but airy at the same time. The mushroom was spicier than expected requiring bites of the goat cheese slice to cool the palete. The roasted peppers and basil added extra flavors to the richness of the goat cheese. Both were delicious, large slices of bread, and you should absolutely make a stop here, just make sure they're open. And get there early. These Hilo natives love their bread and there may not be much left if you get there late! For those of you familiar with Honolulu's famous Breadshop in Kaimuki, this may be slightly better, but don't take my word for it. Parking in whatever street parking you can find. read more

Welcoming, charming, and tiny authentic focaccia shop in downtown Hilo run by a truly talented artisanal baker! Pane Nudo has the best focaccia in Hilo, hands down. I haven't tried any of her pastries yet, but they look so tempting, especially the pistachio cookies and fresh baked fruit scones. My favorite focaccia is the uala or sweet potato focaccia with caramelized onions/shallots, Kalamata olives, and feta. Perfect combination of sweet, salty, tangy, fluffy, crunchy, and oily (in a good way)! The fresh tomato focaccia was simple, bursting with fresh tomato flavor, and had the perfect crust. Also tried the pear and honey focaccia. A nice sweet, toasty, sticky treat after the savory focaccias. Pane Nudo has high quality focaccia and so many other scrumptious baked goods. Beautiful simple shop with delicious focaccia. It reminds me of the small bakeries in Italy. We tried a few different flavors (free tasting samples). We chose the spicy jalapeno garlic and the turmeric with squash and garlic. It was so soft, fresh and full of flavor! The owner and her Italian mother were very kind and welcoming. Vegan options exist here, too! The Barese is absolutely the yummiest bread I've ever had. This is one of Barbara's vegan options and I think she offers at least one more most times as well. I'm dairy free, not vegan but even if you're not either you will still love the Barese! read more

Simple clean bakery right behind the Main Street kamehameha ave shops. So glad I stumbled across this!! I ate my focaccia so fast I didn't get to take a picture but it was incredible. Light and fluffy but still crispy and so flavorful. The owner was very nice as well. Next time in Hilo I am definitely stopping by and buying more. read more

We stopped by just out of curiosity and walked out with an amazing piece of focaccia w pear, hwn chili pepper, and honey (delicious). Then with one step out of the door, asked the owner what the orange sauce looking thing was in her fridge. It's this amazing concoction of her sourdough bread with her home-grown organic tomatoes with some other fresh ingredients. We went back in and bought that too! What a gem of a place ! read more

Cute little fresh bread bakery in downtown Hilo! Shop was easy to find, owner was very lovely and put together our order quickly. The sourdough breads was with beautiful designs etched, the variety of focaccia was simply amazing! In her small fridge behind, she even had tiramisu in jars! Next time I go, I'll be prepared with a cooler bag and ice pack because I love tiramisu! We tried the U'ala focaccia, red peppers goat cheese focaccia and zucchini and chimmichurri focaccia. This is a wonderful little bakery on Furneaux Lane. Both the sourdough and the sourdough rye bread are comfort food yummy-ness. Don't let the word "rye" scare you ... the rye is understated rather than overpowering. More like a kiss of rye rather than a big slap or punch of rye.
