    a diamond shaped cake

Gloria is such a sweet and hard-working lady, and it was a pleasure to work with her on the design of my wife's cake. It was the 2023 holiday season, which was a really busy time for almost everyone, and given her orders and schedule, she was able to come through for me with a beautiful cake that was delicious.

This cake is incredible!!! Georgina is a master of baking and sculpting. I can't believe how cool (and how sturdy!) this special birthday cake is. I can't wait for the next occasion to see how creative she will be with the next one!

The pan dulce here are amazing! They have all the expected varieties. My favorite is the Polvorones Guayaba.

Best tres leche cake! I've been here twice and got a cake the day of. They were able to decorate for me right there and then as well.

In short It's a quiet little hole in the wall. Okay, right?…read moreIt's also an influencer-driven phenomenon like Everett sees only rarely, if ever. Incredible lineup of breads and pastries in the Kurdish tradition. In long I must've driven by this place 50 times at the very least over the last few years. I never had the slightest idea what was happening back here. Cookies, Mexican, Central American, Filipino, taking my lovely bride to get her nails done, I've been in this parking lot at least monthly since they opened. It took influencer reels to finally get me in. Yeah, I'm dumb. It's the farthest-back corner in a sprawling strip mall, mixed in with at least a dozen other sprawling strip malls on a 6-lane road by the big mall. Lots of chain businesses. You can't assume that every place through here oozes character, but this one does. Inside, it's a couple chairs, a couple pastry cases, a little shelving, and hundreds of square feet of kitchen behind that. Multiple big ovens. Maybe half a dozen folks working away. Super friendly happy vibe, though I personally don't speak the language. Saturday afternoon I came in after a reel blew up online. Turns out they had a line out the door earlier that day. Gorgeous sunny weekend, everybody with free time came in. There were like 6 cookies left. In the whole place. Bakers were doing nothing but cleaning by that point. After I saw the video of dozens of people in line (on their Insta), I scrolled down a bit and saw that dude's baking videos with his kid get up to and beyond a million likes. For a little bakery. In Everett WA. Forgive me for not knowing this was even possible. Anyway, those cookies. Brownie cookies with a dollop of cream frosting in the middle. So damn good. A little crisp outside, soft and chewy inside. This isn't even something they list on their website and it's one of the better cookies I've had. Evidently they just throw it in the case as a special when the spirit moves 'em. This morning I thought I solved the puzzle. Went in right after they opened. On a school day. Nope. They had pita, croissants, and 3 pieces of baklava. I got some of each, including all the baklava. Expecting it all to rock at least as hard as those cookies. I had my eye on 3 or 4 other things from their website, but dude said they got crushed on a MONDAY MORNING and sold out of a bunch of stuff. Okay. Challenge accepted. I gotta keep coming back with my fingers crossed, I guess. lol

Although the pita and breads are hand made and are sold fresh (which I love), I happened to really…read morelove the croissant the most. Particularly the pistachio cream. It tasted like they used European butter, because it had a slightly fermented tang which I have only had in French bakeries in Seattle and I absolutely love. The croissants are also very buttery and heavy, beware, but such a delight. Also had an eggplant curry and flatbread - they were super fresh. But my favorite thing here was the croissant.

I tried their "Wild" coffee, and it has notes of watermelon that you can actually taste. I'd drive out of my way just for this coffee, it's that good. The staff are also great. My order got a little mixed up (switched the espresso types and put in to go cups), but the staff were super kind and righted it as soon as they realized. I only tried their cardamom ginger molasses cookie sandwich (delicious and not too sweet), but I'll absolutely be back to try some of their other gluten-free goodies!

Upon entering, i immediately noticed baked goods display and the drink menu. The case was filled with a bunch of interesting types of baked goods. On top of the rose cardamom latte, brioche tart and cardamom twist. We also got a savory scone and another item that escapes me. I enjoyed the savory scone the most. It had chives and bacon amongst other things. Great texture and not too dry. The brioche tart was a meal all on its own. Heavy and will put you to sleep. The cheese I think that was in there was gruyere but I could be wrong. I enjoyed it but definitely will splooge out if you down eat it on a plate with utensils. Eventually it does get monotonous for me. Recommend sharing it. Cardamom twist was the least favorite item. I'm not sure what it was but there was an essence of something in the background that threw the flavor off for me. I can't seem to describe it. The twist was slightly doughy/stodgy for me. Maybe part of an off batch. I typically do like cardamom centered things. This wasn't my favorite is all I can say. One suggestion I would hope gets implemented is cost of goods displayed for each item. I can say I was surprised at the total during check out. I do go to a lot of bakeries, cafes and artisanal shops. I always felt more at ease knowing what I was getting into from a financial standpoint. Tip is to look at their discounted items. They are a steal. They also have a rewards program that gets you a drink with every new sign up paired with a purchase I wish I had known prior to purchase as I was only able to spot signage at the register.
