Very delicious. I did not know what to expect but my husband really wanted pan roast so we went to this Oyster Bar in Durango hotel. The wait time is supposed to be not as long as others but we waited over an hour to be seated. If you know you're going to wait, it's probably not that bad, but I didn't know. There are not very many seats so it takes a while to go through the line. However, once we got seated, the staff were very friendly even though they were so busy. We got our orders taken right away and you can watch them cooking right in front of you. I got the Durango pan roast and it's so creamy and delicious. First off, as a Las Vegas local, I know that Palace Station sets the bar when it comes to pan roast but Durango Station will scratch that itch with a lot less of a wait time. Besides the pan roast, you need to try the shrimp scampi but make sure Brian is cooking it. For sure a 5/5 just on the sauce alone. We love the Station Oyster Bars and the pan roast is always incredible, seriously one of our favorites!! Unfortunately, the Durango location was a horrible experience and we will not be back. We arrived around 5 PM when the bar was mostly empty. If you aren't seated at the bar, you have to walk around the corner to a register awkwardly located in front of the seating area and wait there to order. Even placing our order took about 10 minutes because the staff seemed extremely disorganized. We repeatedly watched them start one task, stop midway, turn around and begin something else instead of completing what they were doing. There was no cohesive flow or sense of prioritization. We didn't receive our food until around 6:30, an hour and a half after arriving, and then had to pick it up ourselves at the register. One order was missing its rice, so I had to go back again and couldn't get either of the employees' attention until another employee finally helped me. I also had to repeatedly go back for disposable trays, extra napkins, refills and other items... Everything is served in to-go containers with plastic cups and prepackaged silverware. Even the wine came in a plastic cup. We also weren't allowed to order oysters because those are apparently only available if you're seated at the bar. Meanwhile, a pan roast is around $37. At that price point, essentially receiving food court service is ridiculous. They did get extremely busy by the time we left. There was a line around the corner. The frustrating part is that the food itself is excellent. The pan roast is absolutely delicious and something I would highly recommend at another Oyster Bar location. We love Oyster Bar, but this particular setup, service and experience were unacceptable for what we paid. We will never return to the Durango location. read more

I was really looking forward to trying The Oyster Bar at Durango casino since it's one of the newer locations. I've been to the original Oyster Bar at Palace Station many times, and although the wait there can be absolutely ridiculous, Palace Station hits every time. The food and flavors there are the standard I compare the other Oyster Bar locations to. I've also tried the Oyster Bar at Sunset Station, and personally, I don't think that location comes close to Palace Station. The food at Sunset Station just hasn't had the same depth and consistency for me. So when I heard about the newer Durango location, I was hoping this would finally be an Oyster Bar that could deliver something closer to the Palace Station experience--without the insane wait. I also wanted my boyfriend to experience what I had been telling him about. The beginning was promising. We only waited about 15 minutes to be seated, which was fantastic compared with the crazy waits at Palace Station. I had two glasses of white wine, my boyfriend had two beers, and we started with the Kumamoto oysters, which were sweet and delicious. Those were definitely a highlight. Unfortunately, things went downhill when I ordered the bouillabaisse. Since you're sitting right there at the bar, you can literally watch the chefs preparing everyone's food. I watched plate after plate come out and eventually noticed that people who had been seated about 20 minutes after us were already receiving their dishes while I was still sitting there waiting. Finally, I asked about my bouillabaisse. They had forgotten to make it. That was incredibly frustrating. I had basically been sitting there watching the chef make everyone else's food while my order wasn't even being prepared. Another chef on the opposite side eventually took my order ticket and made the dish. I appreciated him stepping in, but unfortunately the bouillabaisse itself was still a major disappointment. The broth was watery and lacked the rich, savory depth of flavor that I associate with a good Oyster Bar pan roast. I ordered it medium spicy, but it came out considerably hotter than I expected. Between the watery broth, lack of savory flavor, incorrect spice level, and having my order completely forgotten in the first place, the dish was mediocre at best. That's what made this experience particularly disappointing. I've now tried the Oyster Bars at Palace Station, Sunset Station, and Durango, and for me there is a noticeable difference between them. Palace Station is still by far my favorite and the most consistent. Sunset Station didn't impress me, and unfortunately Durango didn't give me the Palace Station-level experience I was hoping for either. There were definitely positives at Durango: the short wait was great, the Kumamoto oysters were delicious, and we enjoyed our drinks. But forgetting my entrée and then finally receiving a bouillabaisse that was watery and underwhelming really overshadowed the experience. For me, Palace Station Oyster Bar is still the one to beat. I'll deal with the ridiculous wait if it means getting the Oyster Bar experience and flavor I'm actually craving. We have been loyal fans of Palace Station Oyster Bar for over 20 years, and this trip we decided to give the Durango location a try. Let me just say, it did not disappoint! My friends and I came to the Durango location to avoid the longer lines at Palace Station but still had to wait a bit over an hour at 10 PM before we were seated. As the name implies, it's a bar so seating is minimal. I would avoid coming here with a large group because it's likely that you will be seated at very different times. We ordered: 1. House oysters (5/10) -- these were just ok and too large without much flavor 2. Shrimp scampi (7.5/10) -- delicious but nothing out of the ordinary 3. Alaskan clam chowder, dirty style (9.5/10) -- SO GOOD and full of seafood, maybe even my favorite clam chowder of all time? 4. Durango pan roast (8/10) -- this was the last item so maybe I would have rated it higher if it came first, but this was still delicious and full of seafood, chicken, and sausage Our server had forgotten to input our 3 pan roasts and we had waited so long that we digested and were full before we realized they had forgotten. Her culinary artistry was a sight to behold, with each entree freshly and masterfully prepared. For the Pan Roast, she really accommodate a highly spicer (lv 12) and the Bouillabaisse (lv 7). Both came with sourdough bread, butter, and a bowl of rice. Both our entrees were the highlight of the visit; the spice levels were perfect, the flavors were a delicate balance of sea- and sweet. All seafood from shrimp to lobster were CRISP. Now, there ain't anything fancy about those counters or decor, but when you're sat, that service was top tier. Oyster Bar has definitely made it to my list of "must visits" if I'm ever in town - one of the few spots where hospitality and taste are well worth the price. Let's get straight to the point: The Pan Roast is the star of the show. If you're coming here and not ordering this, you're doing it wrong. The sauce is velvety, rich, and packed with a deep, savory complexity that lingers. It's that perfect balance of cream, tomato, and secret spices that makes you want to ask for an extra side of bread just to soak up every last drop. It's easily a 5-star dish on its own. Did I mention the bread dip already? Worth the extra words.... I also tried the Dirty Alaskan Chowder. It's a solid, hearty bowl with a nice kick. It's definitely "dirty" in the best way, but it's a "lumberjack" type of dish. Beyond the food, the steam kettle setup is a high-pressure, double-walled cooking system that uses indirect steam heat to cook your meal with incredible speed and precision. Wow! By far the best oysters, shrimp and clam chowder In Vegas. I was so skeptical because it was inside of a hotel/casino but the chef that helped us was so nice and the food was amazing. We sat at the bar and it got full quickly. The chowder was Not overloaded with celery, carrots, or other fillers many restaurants use. Just straight up with a creamy broth, perfectly done potatoes and lots of clams. read more

What can I say about Oyster Bar?? Show up early as the wait times could surpass over an hour!!! Once we survived waiting in line and were seated, we were greeted by Chef Brian. He's the magician behind the stove, cooking and entertaining you as you're waiting for your fabulous meal. I ordered the Combination Pan Roast (Shrimp, Lobster, Crab) with a #4 spice level. After tasting the first spoonful, the roast was still bubbling as it was just poured from the pan. I had to add Chef Brian's "Lava Sauce". (This is a must and you have to request it before you place your order). This is served as dipping side dish for your bread. But I added some into my pan roast which brought more heat and elevated my pan roast to the next level. You can also choose the spice level of your Lava Sauce. But with a name like Lava Sauce, you know you have to bring the heat! Chef Brian was fantastic. He was entertaining, funny and just carrying a normal conversation while he's putting together the perfect concoction of delicious ingredients and spices to make your order. It's like magic. One minute, he's adding everything into the pot, and before you know it, he's handing you a piping hot bowl of delicious pan roast yummy-ness that hypnotizes you with bold flavors and aroma coming from the dish. I just wanted to show some love again to Durango Casino's Oyster Bar! This location has become our go to Oyster Bar now. Yes, it's off the Strip, but Durango is one of my favorite off strip locals' casino. Compared to the other Oyster Bar locations inside the Station owned casino it has less wait times especially in the early hours. It's 24 hours and we come early in the morning to dine or grab it to go when we're about to drive home. The staff has always been kind and welcoming here. The chefs are very good at making their kettle bows for patrons. They constantly make sure the tables are very clean and presentable. We've never had a bad experience dining at Durango's Oyster Bar. Recently, I had the Durango Pan Roast and my wife loves the Gumbo. I got mine at level 4 since I don't wanna pay for it later with too much spice. Lol. The food is always nicely presented and the bowl of creamy goodness always pops with its vibrant color. I try my best to save the pan roast for later because it's one of my favorite dishes of ALL TIME! The way Oyster Bar makes these Pan Roasts is different from the rest. Their flavors, the aromas, the perfect amount of spices and all their seafood inside the bowl has them as the BEST in my book when it comes to kettle style cooking. They live up to the hype and always deliver a quality product! Vegas knows it and out of towners know it too. That's why they have so many reviews and so many people lining up to eat here. The linguine with clams was so tasty and delicious! I really enjoyed it and would definitely come back just to have it. I just think they should add more linguine to the dish. Arrived before midnight and there was only two people in line luckily for us. Right afterwards a long line formed. There was a long wait to which was annoying but it was worth the wait. read more
