There's no doubt the ingredients were amazing and the creativity and execution were impressive. I loved the subtle, almost tapioca-like caviar with just a hint of saltiness, the langoustine where you could really taste the sweet, meaty lobster, and the jasmine ice cream with a thin nutty soybean layer and super light Belgian waffle. The raspberry mocktail with the chocolate cake was also a surprisingly great pairing. But honestly, I was a little disappointed that the food wasn't consistently mind-blowing for that price. Some dishes were too salty, while others had so many flavors happening that the main ingredient got lost. The scallop was just okay at first, but once I got some of the bourbon butter sauce in my bite, WOW. I also loved the lingering corn flavor from one of the appetizers. The langoustine was probably my favorite because everything felt so balanced--you could taste the ingredient itself rather than everything around it. What really made the experience special was everything surrounding the food. From the sliding doors and gorgeous presentation to the incredibly friendly staff, ingredient walkthrough, tour of the prep station, and chefs showing us little techniques, you really appreciated the insane amount of work and precision behind each dish. Watching chefs from around the world work together to execute each course was almost a show in itself. The visuals were stunning, with each dish looking like a little work of art. I especially loved sitting in the lounge for the appetizers before moving into the darker dining room with American oldies playing in the background. It created this interesting contrast of extremely elevated, technically difficult food in a surprisingly relaxed atmosphere. And then came the dessert finale. After the main dessert, they brought us back upstairs and surprised us with even more sweets--chocolates, candied pineapple, macarons and warm, super-light cinnamon-cardamom madeleines (my favorite). The yellow macaron had the perfect texture and wasn't overly sweet, and I loved that they replaced the madeleines when they thought they were getting cold. By then I was stuffed, but somehow hot tea helped me make room. Overall, definitely a top-notch experience and I'm glad I got to experience it. I just wish the food itself had more consistent "OMG" moments Still, experiencing this level of creativity, precision, hospitality and teamwork is something I'll always remember. I was celebrating my birthday there and there was no recognition of that except on the bill, which we found odd. Service otherwise was great. Lots of attention to detail. They served their famous French toast dish, but I preferred the truffle version instead.

Maybe lost in translation, and ended up with more a riff on a vieux carre, but what a riff it was! Michters Rye, calvados in lieu of cognac, a healthy dose of some kind of floral bitters, a few other bitters and a sazeracky absinthe spritz. Speceriet services mid size plates big enough to share but small enough to eat on your own. Dishes change frequently based on their farm to table ingredients availability. They recommend you to get 4 dishes if arriving in a pair, and they do not think you need more though most people would want to try to get more than 4 things of this incredibly assembled menu, as they are reasonable and each thing is unique. For this evening, things that piqued my interests were raw fish with juniper oil, cod with almond and salsify, duck and deer. But oh wait, how could I not order moose tartar? Add that please. It did not have elk but I had elk last night. So not too bummed. Given the current US politics, those of us in Blue States would not be caught dead in red states, leaving the only option to eat exotic game meat to Scandinavia. Last year I was fortunate enough to visit Alaska and Bergen, Norway back to back. I had finally got myself over the hump of reindeer meat and elk and moose. I was also incredibly greedy with the cod business, because when cod is fresh it tastes creamy and soft and without strong fish flavor, though oily, it's a treat if you can get your hands on it. None of the dishes were overly complicated but the dishes had all very distinct, nordic taste while being incredibly innovative in terms of seasoning, ingredients, and flavors. The combination of varies items in a dish was a bit of a surprise, but they all worked very well. Then there is the price point, everything on the menu were between $14 to $19. Dessert was less than $10 and it all comes with complimentary drinks before dinner. You can easily fill yourself with 2 things, and chances are you are going to pay for less than $40 per person because these prices already include tax. Stockholm, being the capital city of Scandinavia, often prides itself for being relatively affordable. Now with the USD SKR exchange rate favoring USD, it seems much more affordable all of sudden. I don't know if this is the norm in Stockholm or I hit the jackpot but the food was a bargain considering the quality and quantity. Make a reservation. Arrive on time. Be prepared to spend at least 2 hours here if you are into food. Now that I've done a tour (again) of this town's who's who restaurant business, all of sudden I don't feel so in dire needs of consuming true Scandinavian food in the Bay Area or New York. I can wait until I return here again.
