Nylos was the most stunning, flavorful meal we have ever had. Paulina was gracious and attentive, while Jeremy pushed delectable foods from his one-man kitchen. We were impressed beyond measure with every bite. The atmosphere is calm and quiet enough for you to have conversations within your party and also connect with those at surrounding tables. Everyone is enjoying the same exceptional tasting experience! Our taste buds will never forget the superb abilities of Chef Jeremy, and we look forward to our next trip so that we can experience more of the chef's unique, unparalleled dishes! https://www.tripadvisor.com/ShowUserReviews-g60636-d12228598-r1068107748-NyloS-Paia_Maui_Hawaii.html# read more

My husband and I went for his birthday, and our experience was phenomenal. The food, presentations, ambiance, and service were all fantastic. Chef Jeremy and his wife, Paulina, were very hospitable and passionate about what they were serving. Each plate was so thoughtfully prepared and executed. Even though fine dining, we did not leave hungry. Wonderful experience! read more

If there were 10 stars nyloS would get it! Tiny restaurant in Paia on a side street only open for up to 14 people for 1 dinner seating Wednesday-Sunday evening, run by a husband and wife chef team who make spectacular food! Beware that because they are so small they will charge you full price even if you can't make it, which is fair considering it's a custom menu with fresh ingredients that won't save. We were celebrating our anniversary and they made a special treat for us at the end of the evening. It's pricy but definitely worth it for an unforgettable experience! read more

We made a reservation through Open Table at Nylo's Restaurant in Paia Friday 13 @ 6:30 pm which required a credit card to confirm the reservation. There was I think a 24 hour cancellation policy in affect. I called and told them the news said to stay off the roads and that we'd like to cancel. Also our electricity went out at noon! They said very rudely "you can't cancel if you no show you'll be charged $200. Each." I freaked a little and I said well try make the drive. As you know March 13th and 14th was a 100 Year storm!!! Up Kula it was CRAZY bad weather. We dressed and tried the upper road and there was a bunch of trees down, we drove down and there were trees and power lines down. We had to turn around. Had we got thru we surely would not have been able to get back home!!! They hit my credit card for $400. read more

In a small nondescript storefront in paia. There's a very special family restaurant that serves artisan quality food. we went to celebrate my partner's birthday, and she was extremely impressed with the experience. It has a evolved since the last time we were there, they have a multitude of local inspired courses with top quality ingredients. The use with smoke to flavor the items. The colors and the way the food is set up on the plates is special. The way they pace the meal with the courses, and the wine is definitely unique for restaurants that I tend to go to. When you book your reservation review the pricing, this place is expensive. Clearly lot of resources going to your meal and the price reflects that but for a special occasion or for doing something out of the ordinary, it's worth it. Jeremy and his partner pauline I've done such a great job at this place. I'm happy to have been able to check it out again years later and see where they've taken it if you're visiting MAUI and you have the opportunity I would check it out. read more

My fiancé reserved this place for us as our biggest food outing. It ended up being one of our absolute favorite experiences on the island. We were so giddy and excited for every dish, they each came with a different set of textures and tastes but somehow fit together perfectly into the 7 course meal. It was worth every penny. And we were so happily full at the end. Our experience was about 2hrs 45min and we enjoyed every minute of it. Truly, the food was magnificent, the ambiance was so calming and elegant and dimly lit, the music was perfect, and the service was the best we've ever had. You're not just paying for a meal, it truly is a journey + experience. Jeremy, the chef, gave us the low-down on the first and final meal, Paulina was with us through it all in between. She also chatted with us about Maui and gave us recommendations of other great spots around town. We're going to do this experience every-time we come to Maui moving forward. Cannot recommend it enough!! read more

I hate to write negative reviews for a family owned restaurants, but I thought it's important to give constructive feedback for growth of the business. My husband and I love tasting menus & course meals, and we were really excited to try this place as it seemed unique. I am not sure if we came on an off night in terms of menu items and selections, but we were quite disappointed with the food especially since we paid almost $900 for two of us. While the ingredients used were high quality and good selection, the combination of flavors didn't make sense at all. For instance, one of the first course meal came with small sampler of snowcrab, bluefin toro, tobiko etc but it included a side of chili water shot which was extremely spicy and extremely potent and overpowered the rest of the items on the dish and didn't make the dish enjoyable. Another instance was the foie gras topped with Ikura and served with picked cucumber. I love foie gras and I love picked cucumber, but I hated this dish. The ikura made the foie gras taste super fishy and the pickled cucumber tasted like straight up super potent vinegar, again the super potent pickled cucumber overpowered the balance of the dish tasting extremely sour. The dessert was the final dish where the flavor was too strong that it threw the dish out of balance. I love sour flavor in general and I actually did enjoy the dessert because it was really really really sour. But for the average person like my husband, the flavoring was too strong and out of balance. While the ribeye was good , it was unnecessary to pair it with tuna belly, which makes it a confusing flavor combination. The cherry tomato, corn and green bean were also not cohesive together, not to mention the green bean was uncooked. Also at $300 course meal, I'd expect attention to detail, but they forgot to include the cherry tomato for my husband's dish. Out of all the courses, we enjoyed the sparkling wine, shrimp risotto and the focaccia with homemade garlic butter. The overall experience took 3.5 hours which is too long in my opinion for 6 course meal (seems reasonable for 8 course), but I understand it was only the husband cooking hence why it took so long. Overall rating: -Quality of Ingredients: 10/10 -Taste, Balance and Cohesiveness: 2/10 -Creativity: 6/10 -Service: 10/10 -Ambience: 9/10 Overall, I'd say this establishment did not meet expectations at all and it was the worse the course dinner I've had at this price point for the lack of cohesiveness and the lack of balance of the ingredients and flavors. read more

Favorite food experience on Maui BY FAR. This place was delightfully unexpected...yes, the solid 5 star rating is entirely accurate, but the dishes we were served had some ingredients we were not normally fans of the my husband and I were committed to trying everything we were served and thus the unexpected part was that we LOVED everything. Chef's preparations were delicious, thoughtful prepared with beautiful presentation and full attention to detail. We enjoyed Nylos very, very much. read more

I was very lucky to be gifted a meal for 2 here by a friend for my birthday and it turned out to be a wonderful date night for hubby and I. It was very easy to book online and also include the fact that I don't eat meat, but eat seafood, fish and dairy in their comments section. Parking is street parking and can prove to be difficult if you book for the 5pm seating, but go up the hill a bit and you will probably find a park. Much easier than parking in the public pay parking and hiking up the hill. As this is a boutique restaurant there are very few tables so you receive very personalized service, with a description of each dish as it is served (you will have a menu to check each course too), you never have to ask for water, and you can watch the chef in the kitchen creating his masterpieces and enjoy the smells wafting over, making you salivate in anticipation. It is almost like a show and dinner ;) This is reminiscent of the Nouvelle Cuisine we used to enjoy in London and Paris, small plates of highly creative luxurious foods served in courses with time between each to converse and drink and relax over 3 hours. We loved every minute and every bite. From the generous shaving of truffles over the most amazing mushrooms, to the foie gras and trio of caviar samplers, to the delicious sparkling zesty champagne grapes Mushrooms were substituted for my foie gras which I was very pleased about as I love mushrooms. The surf n turf was subbed to surf n surf with prawns accompanied by fish. Delicious! The locally sourced and imported luxurious ingredients, the chef's amazing knowledge of how to tantalise your palate, his wife's impeccable customer service, the extensive wine list and the cozy ambience of the restaurant all add up to a perfect evening. It may be pricey but worth every cent. You won't find another place like this on the island. In fact you will be hard pressed to find somewhere as charming on the mainland either. A lot of reviewers are marking this restaurant down for the time it takes to finish the meal, by how small the plates are (but remember you are getting 5 so it all adds up to more than 2 plates you will get at a regular restaurant), and for the price. Perhaps they don't understand the concept of nyloS and aren't prepared to embrace the idea of slowing down and taking time to appreciate excellent food served in an authentically original way? read more

nyloS - Not a bad view in the entire dining room. It feels very cozy and friendly. Great vibes. - New American Near Me - Paia, Hawaii

Excellent experience if ypure ever in Maui. I found this place when looking for nice restaurants on the island. They do two seatings. One at 5pm and one at 8pm. I choose the 5pm. When making my reservation I requested dessert first (whuch they had no problem accommodating). I was a tad late for my reservation because I was driving from Hana. I called about 10times because I didn't want to miss out on my deposit. Although no one ever answered, when I arrived (about 20mins behind). The waiter let me know that he received my voicemail. They run a small operation. There was only the chef, one waiter and a dishwasher. The restaurant seats about 14 people but it helps with keeping the experience intimate. I was able to have conversations with the waiter, the chef and other people dining. Some even got up to watch the chef plate meals. For details about the menu for the evening please review my pictures. Some things I liked more than others but everything was great. I made the mistake of eating too much earlier in the day so I was already too full when I got there. The portions are comfortable so please go with an appetite. I do reccomend this place for a nice solo dinner or a date night. read more

We loved the chef and his wife. Love giving our business to a local family business. The atmosphere is really warm & nice with real candles in the sconces. The food was really great & presentation was super cool. Large portions for a tasting menu. We had the tasting at Spago a couple nights after this one - and there was no comparison - nylons was better.... Before the last dinner course (before dessert) at spago they brought us bread & butter - and I can see why. If they hadn't we would have left hungry. Spago had some very good courses - but nothing as creative or special as nylons. Thank you Nylos! read more

Simply amazing. A small gem in Paia that serves some of the finest in fine dining. Highly recommend and will hope to come again.

This place is amazing in every way! The couple that own it are fabulous and the experience and the food were magnificent.

This was o e of the best meals of my life--and I'm old! I've lived on the island for five years and never heard much buzz about this place. The wife and I celebrated our anniversary there the other day. It's a cozy 14 seat restaurant and prix fixe with several delicious courses artistically done. Irrespective of whether you're a foodie, you'll savor each one and come away well-fed. Service is attentive and personable with the chef participating and offering detailed explanations. There are two optional wine pairings so we each got one to maximize our tasting experience. Phenomenal! I feel I didn't really know true wagyu until this particular preparation offered explosive rich juiciness with each bite. NyloS is pricey but quite worth it! read more

Only come here if you're willing to ruin your perspective on what you thought a good meal was. NyloS redefined my understanding of what food and creativity can accomplish. The service was incredible, the food was absolutely insanely good and the ambiance was cozy and welcoming. I've cursed myself because now I know what I am missing. I don't think I'll be able to go to Maui without eating here ever again. Thank you so much for accommodating us and working with our pork restriction, especially last minute. The best restaurant in the world. This was my second time eating at nyloS, and I was worried it wouldn't live up to my expectations from the previous time. What happened was the opposite--I was blown away again. From the minute you walk in the door, you can tell how much care and attention are put into a meal at nyloS. The food is exquisite, the service is impeccable, and the experience is unforgettable (definitely the best you can get on the island). If you're visiting Maui, do not miss dining at nyloS. Umm, WOW. I must say that it's rare for me to be this surprised by a meal experience, especially if it's been recommended. But that was the case with nyloS. Such an intimate, delicious, wonderful dinner -- if I could give 6 stars I would! First of all, completely unassuming location in Paia. We had so many meals in west Maui on the water, so this spot definitely seemed...different. So let's get this straight: you're not here for the view, you're here for the food. The pre fixe menu was phenomenal, and I was even able to ask for some dietary accommodations! We added the wine pairings (worth it -- go big or go home), and ended up with the most delicious, invigorating meal of our entire trip to the island. On top of it, being able to ask questions and interact with the staff and Chef Jeremy (owner) in such an intimate manner was amazing. A literal culinary treat. Every bite was followed by an audible sigh/moan. It gave supper club energy, while being seriously elevated. I suggest making this the date night experience of any trip to Maui. Highly, highly recommend!!! read more

Maui has multiple tasting menus for upscale fine dining, and I believe nyloS is the first in the town of Paia. It is literally a mom-and-pop operation! A single dishwasher, mom working from-of-house (hostess, waitress, cashier) and pops doing cooking and plating for the ENTIRE restaurant. The menu changes frequently, so its a bit challenging to review since everyone's experiences are unique. They are receptive to food allergies/dislikes if you let them know in advance. SUMMARY Its a 3-star for me. Some hits but some misses as we found a majority of dishes on the saltier side. Portions were very small for $160/pp compared to say, Morimoto's Omakase or Ka'ana Kitchen Chef Table. Service was friendly and wonderful, but since you have only one waitress and one chef - expect a 3-hour dinner for a 5-course dinner including amuse bouche. LOCATION On the way to Paia town, take the bypass road that leads to Baldwin Ave and avoid the long line of cars headed to Hana, Mama's Fish House, etc. The restaurant is on the right-side and has a big sign and there are pay (or free if no parking attendant) lots on the left-side of the street. AMUSE BOUCHE First is a small bread topped with foie gras, caviar, and edible gold. If you dislike foie gras, they'll double the caviar. Next came this toasty focaccia bread with creamy garlic butter. Lastly, there's the pickled veggie platter with a nice assortment of tart veggies. Not bad, though mixing up the flavors would have been our preference. DISH 1 Our favorite dish - poached red king crab and Maine lobster. Cooked perfectly and sauce not needed. The soy sauce is super salty and doesn't belong on the plate, while the Chinese sweet-spicy mustard is okay. Excellent celery root puree, baconized enoki, and sweet corn. DISH 2 Surf and Turf dish with Ling Cod and black truffles (excellent, though a bigger piece would be nicer!) and three-piece lamb chop. The lamb was cooked rarer than I liked but it had decent flavor and was aggressively seasoned. Sides include shishito peppers and this nice, long purple carrot that tasted like a sweet potato! My wife who dislikes lamb got a roasted chicken thigh. She said it was okay but would have preferred a double-helping of that fish instead. DISH 3 Bite-sized dessert of a homemade profiterole with chocolate and edible silver. It had some lemon balm which are like salad leaves with a nice, intense lemon flavors. Overall, an A-OK dinner but again I think the unpredictable menu presents some challenges. I applaud the staff here in cranking out a tasting menu for 12-14 customers with just 3 people! However, this also stretched out the dinner to 3 hours. Portions are definitely small for the price. Food presentation and creativity are good. read more

Be prepared to spend your evening here if you decide to dine here. The food was extremely slow. We ate here from 5pm to 8:45pm in Feb 2022 (we even asked the lady server to have our dessert asap because we were so tired and wanted to go home, and we were the first table to leave the restaurant) for 6 dishes including one dessert dish. We were just exhausted and were full already because of the long wait; the gap between each dish was unbelievable long; Its like 40-45 minutes per dish or even longer. We were unlucky in a sense that there's no second seating the night we dined here, so the chef (only one chef who cooks for 14 people in the restaurant) really took his time to prepare our food. Some time marks: 1) The first dish didn't come out until we hit the first 80 minutes mark in the restaurant; 2) the entree (beef short rib) didn't come out until it was 8:10pm (3 hours+ after we got seated) Unfortunately, even for Michelin restaurants we had back in SF and other places, the speed shouldn't be like this. They should hire a second chef or think about another way to improve the efficiency. Now the feeling is like asking us to seat in a chair for 3.5-4 hours without getting up, unless you are heading to the restroom. If you are visiting Maui, be prepared to have entire evening staying at this small restaurant. Also, if you are here just with family and the goal is to eat / try some creative food, instead of having long chats with friends, charge your phone to 100% / your phone needs to have sufficient battery so you can have something to do while waiting for the food. In terms of the food, I liked certain dishes. The house noodles / spaghetti and dessert were really good. The 16-hour beef short rib was too rich for me. Tasted pretty greasy, and we hope there were more greens presented on the plate. Overall, I would love to try their food again, but given the lengthy time with 5 dishes + 1 dessert, I don't think I would come back again. read more

We had a great time! It was a unique experience in Maui to come to a small restaurant, probably about 30 seats, run by the chef and his wife, a very intimate atmosphere and great food and service. Not only does the chef have passion and playfulness in his cooking, but he is incredibly skilled already and will even get better. This is a unique time in a chef's career where they are still inventive, taking risks and looking to really delight rather than playing it safe. Getting this many dishes out on time, with perfect temperature is not easy, and his wife was serving everyone and pouring wine, not easy and yet it felt like the whole thing flowed and in fact not having a bunch staff was refreshingly nice. The spacing of the dishes gave us time to enjoy our wine, relax and get ready for the next one. It was a prex-fixe menu for $165, it changes daily depending on what he makes. They do ask about dietary requirements. We started with a little bite of foie, caviar and something else that was so yummy, I only wished for more. The salty and sweet flavors were in perfect harmony. The next dish was a vegetable showcase, this one was probably my least favorite. I guess I don't like eating ingredients separately and while they were nicely prepared nothing really stood out for me in terms of flavor or preparation. For me, this dish looked better than it tasted. The next course was the bread, this was also a bit strange as bread is not really a course, it was good and all freshly made but I would not do this as a course, and will admit I usually skip the bread altogether. The lobster and truffle dish was so good, the lobster melted in my mouth, the sauces were nicely paired and delicate to not overpower the flavor. The dish felt light and fun. There was a very nice portion of ruffles on there. Great sourcing of both exotic and local ingredients. Then the steak, perfectly cooked, nice portion. The sides were a bit too much, I'm not sure they worked for me but everything tasted good. I think the kimchi threw me off since his dishes tend to be more French-inspired and somehow there was this separation on the plate, and I favor more cohesive dishes. The dessert was chocolate with some crispy rice, all I know is we pretty much licked our plates. I'm not usually a dessert person and this was very nicely done and showed his skill on both savory and sweets. What needs to be improved is the decor. Charging this kind of price and creating an experience is both done through food and ambiance and the decor was just generic posters, which felt like an afterthought. read more

Quick Summary Fantastic tasting menu in an intimate environment. As mentioned in previous reviews, it's only staffed by the 2 owners (with an additional sou chef), so just be prepared to stay for the entire stay (3 hours) Food- 5 stars Every dish was delicious and well plated. As a tasting menu, and with the higher prices in Maui, definitely a fair price for the dinner. Just be prepared to not be starving when you go into dinner; there is a long period of time between dishes due to the small restaurant Service- 5 stars The chef and waitress couple were very personable, attentive and accommodating throughout the meal. Bottom Line Nylos is a must-try if you're in Paia. Just make sure you book reservations well in advance. And be prepared to stay for the entire 3 hours for your dinner (would recommend not setting up an early day if you have an 8pm reservation) read more

I did not know this place even existed and most definitely would not have had dinner here on a whim. We had our company holiday party at Nylos and I was so excited for this treat! We had a set dinner menu, beautifully composed dishes with wine pairings. We were the only group in the restaurant that night; Pricey. Small fine-dining portions. The service was great however the timing of the meal was very slow but steady, we didn't leave the restaurant until after midnight. The ambiance was sweet, it's a smaller restaurant and very dimly lit for fancy romance vibes. ;) A great place for a fancy date night, if you're into fancy food and wine. Lol. read more

Easily the best restaurant in Maui, and even among the best in the world. You may not be able to tell by my lack of reviews, but I have travelled all over the world and eaten at some of the finest restaurants out there. None of those, however, have warranted a review. nyloS absolutely does. Jeremy and Paulina Solyn provide an unmatched dining experience. The unassuming facade outside opens up to a cozy, intimate, and beautifully decorated interior. Once inside you are greeted by the lovely couple who make all the magic happen and serve as the conductors of the unforgettable experience train. Jeremy is a chef and sommelier whose creativity, attention to detail, and passion for each dish he creates go above and beyond even the most decorated chefs of the fine dining world. Of course, Jeremy is only half of the team at nyloS, as his wife Paulina ties the experience together by providing each table with impeccable service and a friendly atmosphere. Dining at nyloS feels as though you are invited to a private dinner party hosted by the most talented and amiable couple in Maui. Unfortunately, the Michelin guide has yet to make its way to Maui, but when it does, nyloS should be the first stop so that it can earn the three stars it deserves. read more
