I have been able to upgrade a closet, open packages, soda bottles, and fix an award plaque, and more, all thanks for my trusty Victorinox Swiss Army Knife. I am of the age when many friends are getting married, and I often see knife sets on wedding registries. Here's a $100 cash and a tip that will save you $150 more: just get a good chef's knife, and keep it as sharp as reasonably possible. You may need a bread knife and maybe some steak knives if you plan to do some bbq-ing, but still cannot beat a trusty chef's knife. True to form, both my pocket knife and chef's knife get a fair amount of work. I have a pull through sharpener at home (though it technically hones more than it sharpens). This one is good for some regular 'maintenance' when the edge starts slipping instead of gliding through a tomato, but every now and again, having a professional but a proper edge does wonders. Now, as much as I would love to have a kitchen knife sharp enough to shave with, I also know this would result in a brittle knife that would break as soon as it met cartilage. At the same time, I have seen many reels of knives that can cut paper on the fly. While I found out there is a certain technique to do so, Northside Cutlery was able to get my knives sharp enough to glide through paper. The rates are reasonable at $7/knife, and the turnaround time is fast. Everyone working the shop was kind and friendly as well. Low and behold the reviews for Northside Cutlery are spot on! I was no disappointment! I highly recommend this place, it's a great location (although a wee bit of a drive from my place), and Kevin the owner is great! The prices are extremely responsible and street parking was easy. Japanese carbon steel knives are wonderfully sharp and precise, but, man, can they be brittle. Through plain carelessness on my part, I managed to gouge a 1/3-inch moon-shaped divot out of my gyuto knife's edge. I expected it would be unsalvageable or, if it could be recovered, then it would be shadow of its former self. But Kevin is a true craftsman. He reshaped the knife, keeping it's originally profile. He thinned the blade to maintain the sharpness of the new higher edge and polished it to a silvery gloss. While I know in my head the knife is smaller than when I bought it, my eyes and hands can't tell the difference. He even sanded out all the nicks and scratches in the wooden handle, going above and beyond what I asked for. In short, for $40 he restored a knife it would have cost me $450 and a flight to Tokyo to replace. Thanks Kevin. read more
