Came back because they made a new line of tacos.
There were, fish, beef bulgogi, spicy pork, and korean beef short rib tacos.
All were $2.50 except the Short rib which was $3.00.
These pricings, for a food card aren't too bad at all. Kalbi is typically more expensive.
As always, service is nice, they cook/heat things up to order, and the van is one of the cleanest i've seen.
I opted for 1 kalbi taco, as I had already eaten my lunch, but really wanted to try their taco.
Check the picture. It was larger than I thought it would be. Nice chunks of tomatoes and some lettuce sprinked on top. The meat was fairly chunky and I'd say probably came out to about 2.5 ounces. Solid amount of meat for a $3 taco.
korean beef short rib, is a typical korean marinade of an acid/vinager (like rice wine vinager or mirin), deep salty sauce (soy sauce usually), GARLIC, onions, and sweetness from either sugar/brownsugar/ or even Pears or other fruits. The fruit helps to break the proteins down and make it super tender.
It's usually cooked on the bone to make it even more tender. It can be simmered in it's juices for a good while. Or usually grilled on a nice summers day.
Like I said, I was surprised at how much they gave for a taco. it was too much for the taco tortilla in fact.
The meat is SUPER tender. BUT, the flavor is slightly under par. It seems they use the simmering technique. It was awesomely tender.
BUT, usually there's sort of a nice crust layer. They may have even heated it on the flat top, but it would be nice to get some char on it to deepen the flavor. It was missing that crust flavor.
They also have a korean sweet and spicy red sauce on top called chojang. It's gochujang (korean red pepper paste) with some vinager, soy sauce, and sesame oil usually. It went well with the taco.
In the end, it was good, it worked well with the lettuce, tomatoes, tiny bit of cilantro. I'll ask for more cilantro next time. And I wish they used 2 tortillas, because my taco broke apart from the juices soaking it after my first bite.
All in all, it's not a bad korean taco. People seem to mess this up, but it's a simple fusion, and they do it well. I could see this easily being 3.50-4 just for the novelty of a korean beef short rib taco. But $3 seems appropriate, especially for a food truck.
Reflecting back, I now realize the reason they might not have put Kalbi taco instead of korean beef short rib, because kalbi usually implies grilled with char marks, but this is more of a kalbi jjim (steamed or simmered beef short rib with similar ingredients)
Follow them on twitter, check em out sometime! They're just a typical korean american family grindin' it out (reminds me of my parents). read more
