A wonderful five-star experience at Nobu at the Grand Wailea. We sat at the sushi bar, which made the evening even more special. Our server, Kelly, was extremely knowledgeable and helped guide us through the menu and sake options. Our sushi chef, Hong, was exceptional. She was warm and engaging, explained the fish when we had questions, and let us know which sauces best complemented her creations, which made the experience feel very personal. The sake selection was also excellent. We even tried the "musical" sake, which had Bach playing while it aged and during its shipment from Japan to the mainland--such a fun and memorable detail. I do agree with the other reviewer that the menu could have more detail in order to know the specifics of the rolls. All in all, it was a lovely five-star experience. Highly recommend. read more

Took the family for two weeks in the islands and had chance to try Nobu in the hotel we were staying. We had an early reservation due to our lack of planning but it allowed us to see the sun go down over the ocean which was a nice surprise. The staff was excellent and probably better than I had expected. I would say though that the server was much more excited about being at Nobu than we were. He was pretty juiced about it. Overall our experience was good and not great. I think it entirely centers around how the menu is laid out. The menu isn't descriptive of the menu items and it it's a fairly large menu. I'm quite sure if we asked the server to detail us the large menu he would have but we weren't in the mood for a ten minute run through so we made our choices without as much information as we probably needed. There were a few things that were very nice and a few things that were just ok. We are pretty experienced diners but probably less experienced in Japanese so that could be part of it. Staying down in Wailea Maui and had to have a meal at Nabu. Our seating was at 5pm, and the 3 of us in family stayed till 730p. Great service by a team of 3, very attentive. Eat outside if you're looking for a sunset view, just know it gets cool after sun goes down. As for the food, I would say good not great. They charge between $30 and $100 for small plates. Well for Nobu this one was not on the same level as expectations. Strangely at the end I can hear the guy apologize in a sarcastic manner that he had to process a gift card( that was us) The service was a little slow. Once we finished our first Sake it sat empty for call it 10 minutes before we had to flag the server back down to order another one. The guy serving water and cleaning plates was on point. The food definitely not as we experienced at other Nobu's. Makes me hesitant to go back to a Nobu period. Went to Nobu for a dinner while on our honeymoon! The restaurant was in a beautiful hotel- the Grand Wailea and it was truly stunning and palatial! The restaurant itself was also very stunning with super tall ceilings and very nice decor! Our waiter was super knowledgeable and helpful ! He explained and went over the menu with us as this was our first time ! I really enjoyed the food here and I thought all was very tasty! The standout was of course the cod that that tasted absolutely delicious!!!! Basically like butter but also sweet and savoury! Every bite was great! The maki's were great as the fish was very fresh! Our waiter really wanted to give us the "nobu" experience and offered that he pick out the meals himself and we come up with a total price of what we would spend. By far one of the best restaurants with a view. It's hard to beat the view here. The setting is true eye candy. Our waiter was attentive and made sure we were taken care of throughout the night. We let the server and chef guide our dining experience and they did an amazing job. One of the top meals I have ever had. The bad part is I don't know the names of all the dishes that were brought out. They were all so good. I do know my son doesn't eat fish but he had 5 pieces of seared salmon that night and loved it. I personally would've never chosen to dine at Maui's first Nobu, but I'm glad my spouse and friend decided for all of us! ATMOSPHERE: Open-air and located in the Grand Wailea Resort, the former Grand Dining Room/Ikena space has been moderately renovated, mainly with new lighting and decorative materials adorning the ceiling and uppermost windows. While it looks nice, it impedes the signature ocean view you used to see when entering the resort's lobby. Choose from sushi counter, bar, low top and lanai seating. A private dining room is available. MENU: Hot and cold Japanese apps, sushi, seafood, meats, poultry and desserts. The menu lacks descriptions which is trying. FOOD (expertly curated by our server, Sherry): Yellowtail Jalapeño Slivers of buttery fish in a pool of sweet-savory sauce, with mild heat from the sliced peppers. Very nice app. White Fish Sashimi Dry Miso Slivers of delicate white sashimi with citrusy notes. The dry miso topping gave a pleasing crunch and saltiness. Nobu Tacos We chose wagyu. They're tiny. One-bite tiny. But, freakin' delish with savory & sweet elements. Highly recommended. Salmon Sashimi Partially-cooked salmon slices finished with a salty and citrusy sauce, crisp green beans and sesame seeds. Highly recommended. Rock Shrimp Tempura (Creamy Spicy) Bite-sized pieces of crispy, battered shrimp drizzled with a tart & creamy aioli. We found some mushrooms underneath as well. Mainstream but good. Black Cod Miso The celebrity chef's specialty dish. Good-sized cut of flaky, tender, boneless fish done in the traditional way. Mainstream but excellent. Beef Tenderloin Toban Yaki Tender & flavorful sliced steak on a searing hot plate, with thick brown gravy, enoki mushrooms and asparagus. About the size of a chicken thigh and heavenly. DESSERT: Date Cake Super moist cake, not overly sweet, with crunchy nuts and a scoop of vanilla gelato on top. Highly recommended. Whiskey Cappuccino Served cold, the whiskey foam was a unique touch. Very good. SERVICE: Host greeting was smiley, immediate and professional. Our server, Sherry, was top notch! Bubbly, friendly and passionate, she was on top of it all. I've been to multiple Nobu locations and hate to say it, but this was by far the worst one I've experienced. The location itself is absolutely beautiful, which is really the main highlight of the visit. Unfortunately, that's where the positives end. The food was surprisingly not good, especially by Nobu standards. Portions were extremely small, even for a restaurant that's already known for higher prices, and the quality did not justify the cost at all. Everything felt insanely expensive for what ended up being very underwhelming food. Hours are also very limited, which makes it even harder to justify coming here. It's especially disappointing because this location replaced what used to be a great breakfast spot, and this feels like a major downgrade. For such a prime space, the experience was completely subpar. We also told them it was a birthday and they did nothing to acknowledge it which is sad when you are paying hundreds per person. Was really excited to hear that we were getting a Nobu on Maui so I booked a reservation and started saving. Overall would say it's alright and really expensive. For me I wouldn't go back. But for more detail below... Starting with looks the restaurant is so cool and stylish the interior is so pretty. We also got an umbrella seat outside with had a great view of the hotel. There's also seating by the sushi chefs/bar Service was great coming in we were greeted with a welcome in (in Japanese) by the staff. Our waiter was also really nice. Food is were things start going down. Drinks overall really pricey. The tea we were served was just warm and when asked they said they only had one temperature. Got grapefruit juice it was really sour. I probably should've got something else. Fried mushroom salad really good solid crunchy mushroom and a good dressing. Spicy seafood soup also good a good kick of spice. When asked for small bowls to share they said they didn't have any. But then they were able to find some. Nobu never disappoints. The black miso cod was rich, and every bit as incredible as its reputation promised. I'll be dreaming about it for a while. The green beans were crisp, cool, and perfectly tangy. The tempura shrimp with butter ponzu sauce was light, and somehow still packed with flavour. Truly unforgettable. 1) Expectations = high for a restaurant of this caliber. With its high price point and heritage maybe I expected too much, but it did not meet those expectations. 2) Ambiance = Stellar! Beautifully designed with breathtaking views. 3) Food = At the time I went, they've been open for only two weeks, but they are not yet up to the standards of a fine dining restaurant. The food was fine and competent for a hometown restaurant priced at $25/person, but it was insulting for a $150+/person fine dining experience. The sushi rolls are similar to those that come with a typical lunch bento box. The rolls were poorly & loosely rolled and the sushi rice felt overcooked/too mushy. Of five signature dishes we tried, none were exemplary - meager portions of "okay" dishes that were competently prepared. 4) Drinks = Signature cocktail drinks were watered down, oddly flavored, and one lacked alcohol altogether My friend ordered a "Skinny margarita" and was served a "virgin margarita" with a argumentative "that's what you ordered" response. There was no urgency to correct this mistake. 5) Lastly, Service = we felt she was reading off a script. We carefully listened how the point of the restaurant was to "take us on a journey" with influences from Japanese and Peruvian cuisines. Odd combo - and a jalapeño slice in a sushi roll doesn't count. After contemplation, we decided to order a few things a 'la cart first then order more later, but was told we didn't order enough. ?!?! Also, advised to order sushi as a finisher as it's the Japanese's way (side note: I lived in Japan for 4yrs...it is not a specific cultural way). Also, she asked about dietary allergies. There's a mild dairy intolerance...and this where she showed her true ignorance of culinary fine dining. We had to explain eggs are not dairy. Skip this unless you are staying in the hotel and want a beautiful atmosphere and don't mind spending a ton of money for very unimpressive cuisine. We decided to try Nobu to celebrate a birthday. It was surprisingly casual, more of a resort atmosphere. The music was also interesting (think models walking down a runway). The service was stellar. Everyone was friendly, from the hosts to the servers. The food is served family style, one dish at a time, and meant to be shared. We ordered the miso eggplant, tempura rock shrimp, squid pasta, miso black cod. Rice does not come with the meal so it has to be ordered separately. The presentation for the eggplant was impressive and it was very tasty and savory. The rock shrimp was on the spicy side and tangy. The squid pasta actually had no pasta in it. The squid is cut to look like pasta! It was also very tasty and savory. Of course the star of the show was the miso black cod. It was the best misoyaki butterfish I've ever had! It was a generous portion and cooked perfectly. So yummy and definitely my favorite. They also had a dessert menu but we were too full to eat anything else. Open for 3 months in a beautiful Grand Wailea space, I visited for their much advertised "Omakase" experience. This became a "one and done" experience for me. I'm glad I tried it, my wallet is a lot lighter for it and I do not feel like it was an enlightening experience for the money. I've never dined at a Nobu restaurant so I have no way to compare this to any of the other acclaimed locations around the world. I have to think that this was not up to standard. The best things I can say about the evening were that the food we were served was of good quality, tasty for the most part, and over our 2 hour time period, it was more than we could finish. And although the $200 per person price tag is quite expensive, if you were to order the 8 items we were served a la carte off the regular menu, it was a significant savings (A win if you want to try a lot of things here but the inverse of this is that this means that their menu is simply overpriced for just about everything in my opinion.) Here are the detractors: 1) It is billed as and price pointed like a very fine dining restaurant. It is a beautiful space and certainly looks to come off that way but it does not operate as such. When we arrived on time for our reservation, there were perhaps 20-30 people standing around at the check-in waiting to be seated. The hostesses could not keep up. It felt like Disneyland which is ok if I was at Disneyland and expecting a Disney experience which I was not. This type of feel persisted throughout dinner service. 2) We had no less than 7 different servers (possibly 8) attending to our table but not in a fine dining way. We were welcomed by 1, frenetically served our courses by 3-4 different people, and cleared mainly by 2-3. These same 7-8 were flying all over the room helping about 10 other tables as well so while it sounds good to have 7 attendants, they were not attending only to us and it felt very rushed and inconsistent as they would spend only a few seconds with us and scurry off to another task for another table. It simply felt unpolished, understaffed, and time-pressured. 3) "Omakase", to me, has always been a very personal, almost private type of experience with the chef who will showcase what they are most enthusiastic about from the day's available ingredients. This was not that. We essentially got items that everyone else in the place ordering a la carte could also have gotten if they elected to order them. There were not special courses or tidbits reserved only for the Omakase guests and I never saw a single chef. There was nothing wrong with the food. It was more like there was nothing special about it either to set this experience apart from what others in the place could also get. That and the mass numbers of servers running food out from an unseen kitchen made it feel like a mass-produced event, almost like an upscale predetermined wedding dinner or a cruise-ship. I get it, this is at a large resort so the cruise-ship en-masse feel is probably unavoidable but then it should not be touted as such a special experience and charged as such. 4) Lastly, it was an odd set-up with the Grand Wailea. I belong to their elite member loyalty group that charged me a buy in fee and $325/yr dues for discounts around the resort. At every other restaurant on property, I get a discount except here. The explanation involved a lot of hand-waving to state that it was an "administrative and logistical partnership" and not a resort run restaurant so no discounts could be offered. Hmm, sounds like BS to me since the hotel can make your reservation for you and you can charge the whole thing to your room. It is on property, clearly in a hotel space and being advertised everywhere around the hotel to its guests as the premiere place to dine. Grand Wailea management, if you are paying attention: It is made out to be a lovely hotel dining option and being pushed hard to your club members. If you are looking to make it seem like part of the hotel, than make it part of the hotel. Anything less seems like a scam. In the end, I'm glad I have been there, seen the space, and tried the food but I wouldn't do it again. read more

I have been to Nobu in California before and have had a great experience. I had high hopes for Nobu in Maui and booked for my husband and my last night of our honeymoon trip. Maui recently had a storm that left the place riddled with gnats. I had to hover over/cover my food so I didn't eats bites full of gnats. My drink had so many gnats at one point that I had to ask for a new one. I totally understand that natural disasters are unavoidable, but for how much you pay for a dinner at Nobu, they should have a better pest control system in place, like fans on the table to deter the gnats. On top of all that, our waitress charged us the wrong bill which was higher than ours. Only when we pointed it out did she realize and void the first charge. I wanted to ask them to send it through a strainer because of how many spicy bits kept getting stuck in my throat causing coughing fits. The lilikoi martini is good but nothing outstanding. We didn't order any food and I was shocked to hear it's the most expensive Nobu location. There are countless of other nice restaurants with seafood that is priced more reasonably. I've only been to one other Nobu, so not much for comparison. The setting itself is stunning. The ocean views, wide terrace, beautiful outdoor setting is hard to beat. Service was very attentive and thorough as you would expect for this price point. Drinks were excellent and I felt that they really allowed us to have an enjoyable leisurely meal. Hot items were delicious and what I recalled from a prior Nobu I've visited. Sushi was extremely disappointing for the price point. I will provide the caveat that we went to Tokyo a few months ago and I think I'm forever ruined when it comes to sushi in the states. At this price point I expected much more flavorful fish and larger cuts. We were excited to end our Maui trip here, and instead left feeling like this was just not it. Hostess was nice enough but didn't ask about any allergies, or if we were celebrating. Again the venue is stunning, beautiful views, lively, and puts you at ease. Drinks were good, and a full breakdown of off menu specials were given and recommended drinks. First set of food came and rolls were good, cucumber was delightful. We were then recommended the squid "pasta" and came highly recommended. It was ordered and about 10 mins later it came - full of mushrooms. Not at the hostess stand, nor at the table were we asked for any allergies or sensitivities. We did get a nice apology but it really ruined the experience. He then went into overdrive and cautioning us against any dishes that might have the mushrooms but I felt very crestfallen. We ordered one more thing- and we never got to try it. We waited 25 minutes - no one checked on us, our food never came and our appetite disappeared. Only once we flagged down someone else and asked to cancel the order did they try to get us more refills or attempt to see the status of our food, While beautiful, it leaves a lot to be desired. Near every one of my favorite hotels around the world is a Nobu not too far away... Not intentional, but apparently is a thing. But I have to say that this particular Nobu location is gorgeous. It has an urban/beach vibe that somehow works? My husband and I came here and enjoyed wine, a few cocktails, and pupus in their bar area, which is also great for people watching. The staff is very sweet and accommodating. The place is a chain restaurant, so the element of it being a local Hawaiian business is not present, yet overall it's not a bad spot. read more

Surprisingly filling and diverse, we truly enjoyed the food and would rate this spot 5 stars if that's all restaurant ratings hinged on. But at $200 per person, you expect service to be excellent. We knew this was a newer location though so figured a few bumps on the road were expected... the whole damn ride was bumpy. Wendle, dude, I appreciate you answering negative comments. But what is going on?! The management team needs a serious come to Jesus style boot camp with their servers or this restaurant is closing in less than a year. Tell me why our server comes to the table and he also has no clue we're celebrating our anniversary until we point out that we pre-selected omakase in our reservation. He goes oops, I forgot to read the ticket. That should be the first thing you do! It was pretty much downhill from there. We were staying near Kaanapali Beach and ate at various restaurants like Monkeypod, Maui Brewing, Star Noodle, and Leilani's in our week here. We also went to Mama's Fish House. All of these restaurants cost almost 1/2 our bill at Nobu but at each of these establishments, our water/drinks were refilled and our server checked in at the appropriate times. Each course that dropped off during omakase at Nobu had hurried, mumbled descriptions of whatever the heck it was we were eating. My water was empty unless I asked for a refill and the bottle of sake we ordered was poured 75% of the time by ourselves. This place suggests a tip of 18%-22% as their default. For what?! Wendle, I highly recommend you come and poach some talent from the west side because you've now been told by hundreds of reviewers that this level of service for the price will not cut it. No more "this is being shared with management" blah blah blah. You will all be out of a job if you don't get serious. This all being said, I'm looking forward to trying Nobu Malibu. A little background up front: I've been to multiple Nobu restaurants spanning decades, from Matsuhisa on La Cienega in LA in the 90s to multiple US Nobu locations in LA and NYC. So I am very familiar with the menu and the service. The verdict first: stay away from this Nobu until they are ready. They are NOT ready to serve you. Details: my family and I booked a 8 pm dinner here when we arrived in Maui. The location and decor are amazing and one good thing was that we were seated right underneath the moon and the stars of Wailea. Truly the best table. But it took over ONE WHOLE HOUR before any of our food arrived. Mind you, we are drinking cocktails on an empty stomach as there's obviously nothing like bread service at Nobu. The restaurant was about 40% occupied so it was bewildering that the operations couldn't make sure orders were fulfilled? Perhaps they need to hire a manager from In N Out. The waiter felt bad so he brought out complimentary tuna "tacos". But it was still an interminable wait until our food. Gets worse. I ordered some sushi up front and specified that the sushi be served before the hot dishes, because who eats sushi after plowing through warmly sauced fish dishes and short ribs. Guess what. The black cod and sea bass come out first. I complained to the waiter, wtf sir. Nothing you can do. So not only the dinner timing but the dinner itself is off the tracks. The food: sushi was not up to par with other Nobu restaurants. Think upper-midrange sushi from a good suburban sushi-ya. The warm dishes were more successful. The signature black cod and the sea bass - seemed bigger in portion than the identical dishes in Nobu LA I went to a few months ago. With diners still at tables, though, sushi chefs were noisily and unprofessionally packing stuff up like they couldn't wait to get the hell out of there. The manager never showed his or her face. No apologies whatsoever. Obviously, wasn't surprised that not even drinks were comped as a gesture of apology or courtesy. A wretched experience in paradise. Avoid like the plague until the management and the operations team figures out how to run a restaurant. I had made reservations ahead of time. It's a new restaurant so I was excited to try it during our visit. It's located at the beautiful Waldorf Astoria resort. As you drive in you see that beautiful little trees that lead you to the valet. It's very convenient. I checked in with the beautiful hosts at Nobu. She was very welcoming and invited us to have a seat while our table was prepared. She then walked us through and sat us at the beautiful outdoor terrace. They have Comfortable seats with a beautiful view of the grounds and the ocean. The stars were so bright out that night. Definitely added to the setting. The restaurant itself is aesthetically pleasing. Our server was very pleasant, patient and knowledgeable. He gave us a little background about the drinks. Once we ordered, he asked what order we wanted our plates and we kind of left it up to him. Glad we did. The plates came from a different server. Each time they dropped off the dish, they gave us a little Background on the dish and the flavors, which was really nice. Very professional. We started off with the cold dish then a hot dish, then the sushi. It was what "chef recommends". We loved every minute of it. I highly recommend getting the seafood ceviche. It was very flavorful, great texture and tasted really fresh and fulfilling. We then had the calamari pasta which is not pasta, but each bite was amazing. As for the sushi, it was really fresh and simple. I asked for their hot sauce and he brought me a Peruvian purée and warned me that it was spicy so use it sparingly. It had the perfect kick and it was my type of spice. Overall, we had an amazing experience as soon as we walked in to when we walked out. We were acknowledged and thanked by the sushi chefs. So service was 10 out of 10, location 10 out of 10, and food and drinks were 10/10. read more

I love Nobu and have dined at a few of his restaurants and have even met him once. I know this just opened in May and so it's still working out the kinks. We were so excited to try out the Nobu in Wailea Maui since we have been to several of their locations such as in Malibu & London. We wanted to celebrate our friend's 40th birthday. He Was very nice and welcoming, and made the best recommendations- food and drinks. He came by just the right amount of times to check on us. Nobu never disappoints. Great food and service. Nice views of the ocean from the dining room. Server was fantastic explaining the menu and suggesting selections and quantities. Drinks were good with some nice sake and house mixed specialties. Food wise everting we fantastic as expected. Had the special soft shell crab karage and started with string beans which we fantastic. Had the hamachi Kama, yellowtail jalapeno cut rolls, dry sea bass miso and salmon special. Overall great experience and service. Everything fantastic as expected of a nobu. read more

I've been to Nobu before (Las Vegas), but first time at this location. Beautifully decorated. Our server was excellent. Food was actually amazing. I will be dreaming about the king crab tempura, which was my favorite dish. The regulars like the cod still tasted great. Was very pleased with my meal and the overall experience. read more

Terrible. They don't know how to make sushi at this Nobu. It compares to a Sushi-Stop. After they messed up 2 hand rolls and a cut roll, the server replaced them but only deducted one hand roll from our check. When you are spending $400 (including tip), you would imagine they would deduct the rolls they messed up. Stay away from here. Save your money and get poke from the market. read more

This was our first dinner with Nobu and it did not disappoint. We and 3 other families came at different times and each experience was excellent! Our table was on the terrace overlooking the water at the Grand Wailea. Go before sunset and watch the sun go down. The food was a delicious blend of Asian and Peruvian influences, each executed perfectly. Our server was very experienced and really helped us to curate a variety of complimentary dishes. "Nobu Light but Full Price - and No Water?? 1 star" If Nobu Malibu is the gold standard, Nobu Maui is the knockoff you find in a gift shop and regret buying the second you unwrap it. Let's start with the most ridiculous part: they ran out of bottled water. Yes, you read that right -- no aquaponic bottles, no voss, no Fiji, no anything. So instead, they offered sparkling or ice water from the kitchen. Not the end of the world, sure, but when you're dropping serious money for a premium dining experience, that kind of basic oversight is embarrassing. They did comp a round of drinks, which is appreciated, and I'll give credit where it's due: the staff was incredibly friendly, and the manager I spoke to -- who transferred from Malibu -- was a total pro. Which only made it sadder, because Malibu Nobu is top-tier... and this version was barely a shadow of that. Let's talk food. Where were the fire dishes? No spicy miso chips with tuna. No albacore with Meyer lemon. No seared toro with truffle. No roasted baby corn. Like... are you even Nobu without those staples? It felt like "Nobu Lite" -- but still full Nobu prices. Every dish we ordered -- except the spicy tuna crispy rice -- went back half-eaten. Half-eaten at Nobu? That says everything. It was a string of "meh" bites in an overpriced setting. Want sushi on Maui? Go to the pool restaurant. Seriously. Grab the ahi nachos and a roll for lunch -- you'll save money and your taste buds will thank you.
