First off - amazing roastery. Loving the coyote themed vibes in the store and merchandise and the coffee map of the world and (I think I saw someone) buying coffee bean bags! The sticker was hilarious - I knew I had to get it (thanks for not being AI generated!) I don't like cold brew but after sniffing I had to sip it - that was easily the cleanest cold brew I ever tasted. No surprise they won an award in 2016 for best cold brew. I got the honey nut latte and that mix of espresso/honey/vanilla bean syrup/oat milk/cinnamon really caught me off guard - I really enjoyed it (wish I got another to go). I've been wanting to try different roasters for espresso at home and I enjoyed my visit here. Really cute store with the roasting operation in the back. It's more of a storefront than just a coffee shop but it's set up to deliver both. Easily found street parking right outside. It was a weekday and I had the whole place to myself. The barista was friendly and helped me pick out the right beans and prepared a delicious shot for me. Had a shot of their Midnight beans. Got a to-go latte for my wife and she was very happy with it. Their espresso bean packaging is well designed with a resealable bag and an easy opening tab. Roasting date conveniently printed on the label. Definitely adding them to my rotation. read more

I came to this charming coffee shop recently and was quickly greeted by a barista. Noble Coyote is located in the expo park neighborhood with street parking available. Expo park has a couple of local businesses on that strip as well, including a restauraunt. Noble Coyote Coffee Roasters has a bright and cheery atmosphere. I've visited this shop a few times over the past year and the drinks have always been high quality - from brewed coffee to specialty lattes. The baristas are friendly and always craft a yummy beverage, and I love their fun, seasonal offerings! I usually visit early on Saturdays (since they're closed Sundays) so can always find street parking, but I also believe there is a lot nearby. I found this spot after trying to get matcha from another location that had temporarily closed due to the state fair. It was my first stop leaving the airport and I had no idea where I was in the area. I walked over to this place and was immediately greeted as I entered. The barista was super kind and answered questions that I had about the store and their homemade syrups. They make matcha using a the traditional chawan aka matcha bowl and that warmed this matcha girl's my heart to see! I ordered a dirty matcha since I had an early flight and it was soooo good! The seating is minimal but the vibe is warm. Tons of items to buy/take home, too. A cop even came in to grab a coffee and handed out stickers. Seemed to be a regular, which I always love to see at establishments because that means something if someone goes out of their way to constantly support. read more

I was driving by here on the way home during a break and decided to stop in. I ordered an ice matcha with a splash of vanilla for my sister and I ordered a cardamom spice latte for myself. 1st, Kaylee (sorry if I spelled that wrong) was very helpful and patient with me. I I tried both of them I liked the green matcha the best, it had a good taste. I also like the cardamom but if you don't have a broad palette and are picky this might not be for you. It has a strong after taste that some might not like. I liked it and thought it was a great recommendation. I liked the inside of the store it also had a good ambiance to it, I could see my self hanging out and doing some work inside or catching up with a friend. Definitely will be back and recommend if you're in the area. Only downside is they don't serve food so if you're trying to eat, don't come hungry! read more

Noble Cayote is a breath of fresh air! It's a quaint, modest-sized coffee shop with simple coffee menu items, an eclectic crowd of customers, and beans that are roasted in house. When I came in on a Wednesday afternoon, parking was ample, and I settled into a spot at the communal table inside (if I had to guess, there's probably a max of 10 seats in the shop- some by the window and the other half of seating at the communal table). The decaf oat milk cortado with local honey and cinnamon was one of the best cortados I've had in Dallas (the beans, which they roast in house, gave the espresso in the drink a bright and slightly zesty but not overly acidic taste which paired beautifully with the cinnamon and honey). Alas, I've finally found my go-to coffee shop in Dallas! read more

I was on the fence about picking up their Ethiopia Guji Sasaba however after she let me smell the beans and explained the process that goes into developing the characteristics of this coffee, I'm so glad I picked it up. Pretty cool coffee shop, I liked the vibes a lot. There was a roastery in the back; they roast their own coffee beans every Tuesday and Thursday! The barista was really nice! She made me a vanilla bean latte-- it was decent. Not the best latte I've ever had, but I could taste the coffee beans and they were on point. Make sure to tell them to make it extra hot-- I don't know why coffee shops make Luke warm coffee and not hot. Its frustrating. I told them to heat it up and they did so that was nice! Btw, parking is horrible if you come at a busy time (which was apparently 8:30 am on a Friday morning, granted, it was the first day of the fair.) It took me 15 mins to find parking and I kept having to check if my car would get towed. Definitely going to come again and try their masala chai, since the barista recommended that. read more

This little mom and pop coffee bean company takes the prize for the best coffee in Dallas. They sell their beans at numerous stores in Dallas and 5-10 coffee shops are now brewing their beans. They do not have their own coffee shop, so you have to be willing to brew at home or find some of their coffee in one of the shops to try it. Your other option is to find them at one of the several farmer's markets that they have a stand at. (Check their facebook page because they are great about updating the page as to where they will be!) They are always willing to let you sample the coffee there and they sell it by the cup too. Also if you are a coffee nerd like me, don't be shy at the farmer's market, they are equally excited to have coffee nerd conversations. **Also as a note they do take credit card at the farmer's market.** They have the perfect mix of freshness, time, and technique that produces exceptional coffee. All of their beans are fair trade and sustainably sourced. Their beans range between $12-$15 for 12 ounces of beans. Maybe a little pricey compared to grocery store beans but entirely worth it. So now for the breakdown. I have tried the following beans: Ethiopia Limu: The most recent beans I have tried. These beans have a sweet cherry taste to them at first. They end with a dark chocolate finish. I would give it an A. Barking Dog Espresso: My least favorite of the blends that I have tried. It does have a chocolate finish as well but just not my favorite ---A-. That said it might be my favorite compared to many other roaster's best brews--it has some steep competition. "DRC" Congo: My favorite of the beans I have tried so far. A rich chocolate start with a fruity floral end. This one can be hard to find. A+. Rwanda: This had more of a floral start to it if I remember correctly. I would rank it third place after the Ethiopia and the DRC. Those are the four I have tried so far, excited to keep sampling! read more

Incredible. My husband and I love this place. My husband got the iced masala latte and I got it hot and we both loved it. I initially got the bergamot drink which I didn't like (I'm not sure why I got it, I never get cold drinks) and the owner was kind enough to not only let me try the bergamot syrup but also change it out for me for free. Our drinks were wonderfully made and they make drinks with non-dairy milk with no additional charge, and they even have vegan bars. They are doing curbside delivery during the pandemic which is huge, and they took our orders outside. Will 100% be back!! read more

Due to the COVID-19, Noble Coyote was only accepting curbside orders. I placed my order online which was very easy to navigate on their website and set my time for pick up. They notified me when it was ready and I pulled up in the front and a friendly lady immediately came out with my order. I ordered a bag of Cafe Momentum's whole beans and it was freshly roasted the day before. Talk about fresh! I came home and made my own coffee with my french press and shared it with my fiance. It was by far one of the BEST cups of coffee we've have had. I immediately followed them on Instagram, shared it on my Instagram story, and will be attending their online course on how to make pour-over coffee. I highly recommend Noble Coyote. It smells heavenly. This is the only coffee I buy anymore. I've lived in the neighborhood for years and waited impatiently for this place to open! I emailed Marta last year because the store front wasn't open or had hours. She and Kevin went out of their way to open the locked doors on roasting days and I'm forever grateful!! I buy two bags at a time of the hand-picked, same day (often) roasted beans and can't wait to get home to start the coffee-makin' process. The Barking Dog is my favorite, I'm not much to speak on "chocolate-y notes" or what have you but, y'all, this stuff is damn good. I use an espresso machine and get just the right extraction of goodness. Cafe Momentum is a great one, too. I say this with bias because I love Cafe Momentum and what it stands for, unbeknownst to me until Kevin told me their story. Marta and Kevin support and are deeply involved in the community and I absolutely adore that. These are good people, people. Finally, the Ethiopian. I have never liked Ethiopian. That's rather mild; I was absolutely adverse to Ethiopian coffee, never had a good one, thought the beans were awful by nature. Kevin changed that for me with their Grade 1 Yirgacheffe and I have never eaten my words more. I keep a constant supply of this stuff on hand. Love love love. Noble Coyote is amazing coffee beans, sought out, poured over, and roasted by some amazing people. Go visit them! read more

2016 Yelp 100 Challenge Review #98 I came here needing to get some coffee and was in the area. I got some tacos from Taco Joint but their coffee is no bueno. So since this place was nearby my destination I decided to try it. They were so nice even before I got inside. I called ahead because I couldn't find parking. It was Fair season so everything was to capacity. I called and they told me I could park in the center lane with my hazards. They watched my car and allowed me to run in and grab two Americanos. It was pretty good and I would definitely come back. I don't like everybody's coffee but I could definitely come back for another cup of joe. read more
