The fried soft shell crab in a bao bun with green papayo slaw, coconut mayo and cilantro nam prik was sweet, perfect crunch and memorable. Two for two with one dish left. The cold spicy sesame noodles with seasoned chicken, granny Smith apple slivers, arugula, cashews and nanami togorashi, a perfect closing dish for an exceptional meal. While we waited, we dispensed water for ourselves from the soda fountain. I was a little confused upon receiving my black garlic ramen, as I thought the black garlic oil would be more prominent. I was assured that I had the right bowl. My husband enjoyed his chashu rice bowl. I had a small bite and the pork was tender and well-seasoned. The paitan broth was very umami indeed.
