The rices (white with Jerk, black forbidden with Atlantic) confirmed and celebrated what Chef JJ Johnson wrote in his must-have book The History of Rice. This is to say there is no rice like FIELDTRIP rice: soft, sturdy, sweet, savory, herby, attaches to sauce and protein and vegetables when you want it to, remains on its own when you simply want to enjoy it by itself. The plantains and greens that accompany are ridonkulous icing on the salmon sundae. If you aren't a fan of Brussels sprouts, you likely have good reasons. And, you owe it to yourself to order Crispy Brussels. Besides being cooked so they are toothsome, textured, and still sweet, they're quartered or sixthed, which makes them easier to enjoy and perfect carriers for the crispy bits that top them. I appreciated that they have an option to order a side of mole sauce, so that I could order one mole as my main dish and another as well in order to compare. I went with the mole poblano, which seems to be the most classic option and a side of the harder to come by mole blanco. There is a variety of protein options, including chile relleno, but I went with chicken. The mole comes with a large portion of rice and beans, a few tortillas, and two large drumsticks smothered in rich, chocolate brown mole. On my first taste, I immediately noted the bitterness. The rich bitter flavor of dark chocolate is intense in this dish. As I ate, my mouth adjusted to the bitterness level and I was able to taste the symphony of chilis used in this dish. The flavor is so rich and full and complex. The various chilis and spices used combine in such a way that it's difficult to pick out any one specific ingredient, like trying to listen to one instrument in a full orchestra. The flavor is so complex and temporal, changing as you eat each bite. The mole blanco is also insane. When tasting this for the first time, I reacted to the richness initially. Despite being vegan, it coats the palette in fat immediately the way something containing heavy cream does. On my first taste I thought there was no way I would finish this, as it was sooo dense and heavy. However, the fat melts away just as fast as it came and the earthy and nutty flavors of the mole come through, followed by the mild heat of the warming, complex blend of spices in this dish at the very end of the tasting experience The food here is remarkably complex and must be expertly prepared in order to give such a temporal eating experience.
