Yum! As we strolled along the streets of Dingle we stumbled on this little ice cream spot and came to realize they had won many awards so we had to try it out. The sea salt ice cream they make at this location is made with the ocean water right outside their door! They boil it down to just get the salt and make a mighty fine sea salt ice cream. So I got the Sticky Toffee special for €6.50 and instead of two scoops of brown butter, the server instead upon my request substituted the Dingle Gin ice-cream instead. I really savored the taste and texture and cant wait to go back - have the flavours already picked out too (honey and lavender in case anyone is curious).
