Any time that we are in Lincoln and Chacos isn't sold out we eat here. Service is always friendly and amazing and Nick is an awesome dude. Ambience is casual and we've never had any problems dressing super casual. This past visit we had just finished playing a doubleheader and were covered in ball field dirt. Felt welcomed regardless as always! My wife and I like the Hatch Mac Burrito, I always change the protein on every visit which are chicken, pork and brisket. I would like to start this with saying this was from the Omaha Muchachos before they closed! Either way either location, the food was always fantastic, everything was always quick and hot! The first time we went they were SLAMMED, they actually turned people away because they needed to get through their orders already taken before taking more! Happy we got in before them! The Hatch Mac quesadilla and burrito was fire, we always got "all the toppings", which had a lot of flavor that brought the meat and mac n cheese together as one. GUT BOMB HEADQUARTERS. We had the Pipeline burrito. Half the world's protein must have been in a tortilla that measured four feet across. Seriously. It was a good burrito but not a great one, at least for me. I like 'em squishy with lots of sour cream and cheese. I stopped here four days ago following the husker football game. We went on the recommendation of a friend, but I have to say I wasn't overly impressed. The staff seemed very friendly and we were getting our food to go to eat in the car, so we didn't stay too long. I ended up going with the burrito bowl with brisket. The brisket was good but it tasted pretty standard. It didn't have a lot of extra flavor which I was hoping for. The queso was decent but I wish there would have been a little bit more of it. I think the worst part of it all was that my rice was undercooked. There were lots of little bits of crunch in there that really threw the dish for me. I really did enjoy the avocado crema though! Perhaps I should've gotten all of the works to give the bowl little bit more flavor that it was ultimately lacking? Overall, I thought this place was fine and would maybe give it another try. I was finally able to sneak into this hidden gem here near downtown Lincoln! First of all, the owner Nick is really cool to talk to! Very down to earth people here as expected, with great service. The inside decor is really cool and vibrant on entrance! The outside front looks cool too! Well, getting down to the food and drink now... I ordered the Brisket Breakfast Burrito with Avocado crema sauce inside! Awesome mouth-watering best brisket Burrito I have ever tasted yet!!! I made my first trip to Muchachos two weeks ago. My friend and I got there right before the dinner rush. The two lovely gals at the bar gave us great advice on what to order and made sure we were well taken care of. I ordered the hatch mac burrito with pork and my friend got the chicken nachos. Full disclosure - I am picky about my mac n cheese and theirs was delicious! The meat was incredibly tender and flavorful. The chilis were the perfect amount of heat for this dish. And the burrito itself is MASSIVE so you definitely get your money's worth. Neither of us had ANY problem inhaling our food. The only issue was remembering to come up for air. To my amazement, I ate that whole dang burrito. This place is such a hidden gem and it's easy to see why it's getting so much positive attention! Nick, the owner, is one of the nicest, most hardworking guys you will ever meet. He knows his stuff and I cannot wait til they open their Omaha location. I'm a big fan of the food! But the service, is stellar. I had a pretty good first experience at Muchacho's because they made sure to celebrate my birthday with me with a free drink. It made me feel very welcome. We kicked off our evening here because we heard about a secret menu item we just had to try! The Hatch Mac Tortas was good. The Torta is a lot of bread but it's delicious. So delicious. Toasted, crunchy, but soft. And I believe they are made locally. When you order this, it's not offered all the time. It's a secret menu item. And it comes with a lot of questions. Do you want this or this or this... Lots of things. The answer is yes just do them all. If you try to do it on the side, it just complicates things and doesn't give you the true experience. The mix of flavors is bomb (and a little spicy), but the amount of stuff added compliments the meat (mac!) and dryer bread. I shared this with my friend and ordered a taco on the side for only $.99 because it was Taco Tuesday. Do this, and get at least two tacos, they are SO good. The pork is juicy and tender. Very delicious tacos. I honestly preferred the tacos over the Mac torta. The space is small (and well decorated), and if you haven't been out much lately, it can feel especially small as people start filling in. But that is not a knock against Muchachos, that means this place really does have quality, delicious food and we need to continue to support them, so they can outgrow that space. After you order your food, you go down the hall to get your food back where the kitchen is. The restroom is tucked in their too. It's an interesting space, but they make it work well. I will be back! Lincoln's favorite food truck has finally opened a brick and mortar store! Located in the old Method Coffee House, The owner has poured his heart in the making this a great spot for smoked meat, New Mexican cuisine, coffee, and drinks. They've also partnered with Meta Coffee to serve a Muchacho's inspired coffee. When I picked up my lunch today, Mike from Meadow coffee was roasting beans in the kitchen. The space has been successfully modified to accommodate dining in, with low tables and chairs. They've kept the bar and the taps. I had a pork taco, hatch mac & cheese with brisket and red sauce, and a cuppa coffee. Everything was dynamite. I ordered a "freakin buttload of nachos" for myself and three of the people I went there with. When I received the food and sat down to eat with my friends, we realized that the nachos only had about a singular chicken breast cut up and sprinkled over a decent amount of chips. In other words they simply were skimpy and the food was not great. The environment was nice and seating wasn't too bad, but would not get the buttload of nachos again. My favorite spot for nachos! I usually get the large nachos with "the works" with half beef brisket and half chicken! It's huge and two people will fill up if you can finish it. Staff is very friendly! I love Karina, she is awesome! They also have some good coffee drinks.. I had a cinnamon roll drink once and I loved it. Finally got to try Muchacho's recently! I had been hearing good things since their food truck days. We stopped in to get some food to go to take with us to a brewery. The menu is kind of a BBQ-New Mexican fusion. We got the hatch mac burrito and the nachos to share, both with chicken as they were out of pork for the day. The meat was perfectly smoked and very tender. The hatch mac burrito was messy but very good with just a little kick from the mac! The to-go packaging was on point, as the salsas, avocado, queso, etc were all on the side of the nachos so they didn't get soggy in transit. Muchachos has one of the top three burritos I've ever had in my life. Taking a bite into the hatch mac burrito (with pork) - was literally a flavor-orgasm in my mouth. I'll definitely be back to try the hatch Mac with brisket and their smoked breakfast burritos. We enjoyed a side of chips and queso with the burritos and that was a great addition. I had first learned about this place from a YouTube video I'd seen, so I visited on my birthday, and it was great! The second time I visited, they had just opened--which is never a great time to eat at most places. The brisket chili Mac was ok, but not as good as the first time. More gristly meat. Just not great. Also, and I can't blame them for this necessarily, because every food place must deal with this, but I almost sat on the largest, most magnificent specimen of a cockroach I have ever witnessed. Muchachos may be relatively new to the food truck scene, but it's an absolute home run. Everything I've had there is delicious. The family that runs it is extremely friendly, and they're creative with their offerings. The restaurant calls its cuisine Mexican/BBQ fusion, an interesting concept that not many restaurants are trying - but more definitely should. You can typically find the truck at the Haymarket farmers market on Saturday mornings in Lincoln, though it also pops up in various spots throughout the week (follow its Twitter and Facebook accounts for details). It serves tacos and tostadas with brisket, pulled pork, and chicken, though it also experiments with other items such as breakfast tacos and mac and cheese. Wanting to try everything, I got tacos with brisket and pork and a chicken tostada. The brisket was delicious, adding a nice smoke to the flavor of the meat. The flour tortilla was a tremendous delivery device, and the spicy slaw and green salsa brought just enough heat to complement the meet without taking over the dish. The pork didn't stand out quite as much as the brisket, but it more than held its own. My only complaint with the tacos was they were a bit light on the meat, but that wasn't the case at all with the tostada. The chicken which was perfectly tender and had a brilliant spice to it. The smoky refried beans were the star of the dish, the spackling that pulled the chicken, slaw and cheese together with the crunchy tortilla to deliver perfect bite after perfect bite. My entire meal was put together within minutes, and it came out fresh and hot. Everything about this experience was spectacular. If you happen to run into the baby blue Muchachos truck at an event, absolutely try it out. But I encourage you to go one step further, check out the social media accounts, and seek out this truck. I promise you it's worth it. Really good tacos!! I got 1 chicken & 1 pork. I also got a strawberry marg-basic but good! I was unaware that you pick up the food way in the back after you order, so they had to say my name a few times. Ha. The music was fun & upbeat and employees were fun and friendly. This place is amazing! I've been here twice since they opened a few weeks ago. The first was for lunch. I had the nachos with brisket. The brisket was perfect. I had the full-sized portion (I'm a big eater) and it was almost too much. Then I just returned from my second trip, which was for breakfast. I had the large taco, with brisket. I scarfed it down before taking a picture. It was delicious. Here is the bad news. Their downtown location is two blocks from my office.
