The proprietor is such a sweet and friendly person. The chit-chat while I decided on what to order felt like far more than service industry pleasantries, I really feel like this woman is putting herself out there to make human connections with her food. The staff was really nice and helpful, which I appreciated! I ordered the catfish dinner with collard greens and baked beans, and my boyfriend ordered the ribs with mac and cheese and potato salad. Now let's get into the food! The mac and cheese was seasoned really well, but I do wish it had been a little creamier. The potato salad was pretty good, and the baked beans were just that, baked beans. Nothing bad about them, but nothing that really stood out either. The collard greens were seasoned well and had good flavor, but unfortunately, they were room temperature. I personally prefer my greens served hot. The ribs were good! I personally prefer grilled ribs over smoked, but if you enjoy smoked ribs, these might be perfect for you. I do think they could've used a little more seasoning, but overall, they were good. Now the catfish was good too! It was fried hard with a cornmeal breading, and I LOVE my fish fried hard! I personally prefer a mixed breading over straight cornmeal, but I still enjoyed it. Drinks are served by the can or bottle, and a drink is included with the meal. I went with a Diet Pepsi. The portions were good, which is always a plus, especially when you're going out for a good soul food meal! Overall, I'd give Soulful Cocina a 3 out of 5 stars. I want to be clear that this isn't a negative review, just my honest experience and personal preferences. The food was good, the portions were generous, and the staff was genuinely kind and helpful. There are just a few things I feel could use a little improvement, especially when it comes to temperature, texture, and seasoning. Nothing was necessarily terrible, but nothing really blew me away either. Birria is one of my favorites but it's a little hard to find due to how labor-intensive it is, so I was so happy to see their post on Facebook about serving birria! Then, when I was already planning to go soon, they advertised a truly irresistible special, two birria tacos and NOODLES IN BIRRIA CONSOMMÉ (!!!!!) for $8. I was overcome with excitement! When I pulled up, a few minutes before they opened, there were already half a dozen cars with people in them sitting and waiting for the window to open. That's an awesome sign. Ordering was quick and painless, they are still taking cash in these times. However, I was a little surprised that their listed prices didn't include tax- I've found that to be pretty standard for food trucks so that making change is simplified. All three of us got the same noodle/taco deal and it took about 25 minutes between ordering and receiving our food. A little slow for a good truck but not outrageously so, and I'm happy to wait for quality. Each meal came with extra lime wedges, radish, cilantro and onion, grilled onion quarter, and a grilled jalapeño. We drove home to eat so it wasn't piping hot by the time we got to it but the tacos were not soggy and everything was still delicious. The cup of noodles is maybe a 20 oz styrofoam and the tacos are standard taco size instead of tiny street taco so between these, we were all super full afterward.
