I like churros. I've had them a few times before. Some plain, some filled with dulce de leche or dipped in nutella. But they never made a lasting impression on me. Until I had Mignon's churros today.
I noticed the truck parked near the McCord museum as I was heading home from work. The huge letters on the truck intrigued me. Walking closer, I got a whiff of warm, divine, sugary vanilla. Churros!! I had a 10$ in my wallet and decided to give it a try. I was the only one in line, and ordered a cone of churros for 7.75$ (a bit expensive). Fresh churro dough was immediately dropped into a vat of oil and not even two minutes later, golden, crispy churros were rolled in sugar and presented to me. What a smell! What a sight! It was crispy on the outside, yet undescribably soft, moist and chewy on the inside. The dough was actually slightly salty, a perfect match with the sugar coating. In no way were these oily or heavy. Perfectly made, perfectly perfect.
