I'm really disappointed with the filet mignon I purchased. What should be a smooth, uniform, center-cut filet came out looking uneven, shredded, and poorly trimmed. The pieces were inconsistent in shape and thickness, and you can clearly see ragged knife work and excess connective tissue that shouldn't be there in a premium cut. A true filet should be clean, round, and tightly trimmed, but these looked more like end scraps pressed together rather than proper medallions. For the price of filet mignon, I expect professional butchering--not rough cuts that cook unevenly. Definitely not the quality I paid for, and I won't be purchasing this cut from here again. read more

I have been a customer at Mema's for many years. The level of customer service just isn't the same there anymore since the change of ownership. I recently purchased a steak there that was prepackaged. It looked a little weird and I asked them about it and the guy told me everything was fine. I went to open the package and it was putrid. This is the place for fine cuts of meat that your local grocery stores may not have. My ribeye steaks were cut to my preferences instead of predetermined sizes sitting in a display case. The pork chops were as incredible as my steaks. The meat market sits in a small shopping plaza which could make it easy to miss. Meat Masters is a very clean small to moderate size shop with adequate staff. They are friendly and patient with first time customers with many questions. I may not have been born in Texas but I came here to start grilling as fast as I could. Meat Masters offers a wide variety of freshly butchered meets and sausages. They have expertise to help you select the right cut and will give you cooking tips to make the delivery a success. On my last trip all I knew in advance was I wanted to cook a chunk of beef on a spit for Christmas dinner. The butcher, Marvin, invited me behind the counter and showed me a cut of top round he had. While at the butcher's block he cut it to the size and fit I wanted. He added advice how to cook it too. Having served for or five successfully cooked dinners thanks to Meat Masters it has become my go to place for meat before a dinner party. Do you have dogs? I have two German Shepherds and never forget to grab the pups a couple of fresh bones and a pig's ear for four. The butcher will cut the bones up too according to your instructions. Sausages! Sausage is one of the major food groups in my family: chocolate, peanut butter, Mac n cheese and sausages. Meat Masters offers boudin, Italian, crawfish and many other types. I called ahead asking if they sold bones to make broth and they said they did. When I arrived in the afternoon, the man I spoke with on the phone remembered me and helped me get everything. He grabbed the bones, gave recommendations on how much to get, weighed and bagged them, and even cut them down smaller for me! All I had to do was tap my card and say thank you. Both men working were very kind and patient. The price was great. The customer service was awesome. The place smells so good when you walk in too. I will definitely be back!! read more

Still trying to find a butcher shop in the third largest city in the US. Looked at their website, no mention of USDA grades of beef. Just a bunch of marketing BS about a breed. Certified Angus is absolutely meaningless in regards to carcass quality. Angus cattle are great, so are Hereford, Shorthorn and Charolais, just to name a few quality carcass breeds. The animal must be at least 51% black in hide to be certified Angus. This means nothing in regards to marbling of the beef carcass. When beef is devoid of marbling, it is devoid of flavor. The only measure of marbling is the USDA grade. read more

I have been here several times and enjoy their meat. The last time I went and will go again, was today. I walked in and they were having a very friendly conversation with a couple of regulars which is fine. I was greeted with a not so warm what can I get you. Another regular walked in and everyone in the back greeted them like family. It seems I was rushed out of the door, I had handed the butcher some frozen sausage to be included in my order which I never received. I felt like I was rushed out of the door. marvin, today was disappointing. Yea. I know I'm a bit of a hindrance always asking to see the cut first before I buy, that's fair. I'm a picky eater, I live to eat. But here's the thing. I've always really liked this place, found y'all a bout a year and a half ago, and always made sure to return at least once or twice a month, at the very least. I came for christmas last year, and I came for my birthday, great porterhouses for myself each time. And each time you ask me for my name, never bothering to remember it, and that's alright. I wait tables, and houston/katy is a huge place. Here's the thing. There was nothing to be said tonight that couldn't be said out loud. I'm not as well of as your many other customers, but I do try to support this place where I can. But that shouldn't mean i'm any less of a customer, and if you don't like tending to all sorts of customers, then this line of work really isn't for you. You don't pick your customers, your customers pick you. You've always been the place for me to get my steaks, but after tonight, I'm immensely glad I live in houston, where options for all sorts of vendors are plenty. We bought a prime rib roast for Christmas. The guys in the shop were very helpful with advice on smoking it as well as storage until we were ready to cook it. They even removed the bones and then trussed them to the roast! Totally impressed. The roast was on of the best I have every had. Wish they were a little closer to my house, I would be buying steaks on a regular basis. I will definitely be making a trip soon for steaks!! read more

The owner and Eric are super nice and friendly. I went in today for the first time and was met with friendly smiles and helped immediately. I told them I was interested in their freezer pack and some deli meat. Eric was making some tamales and let me try some. Delish! They were jalapeño cream cheese. I believe it was around $11 for a dozen. I will be going back for some of their meat tamales, they were in the process of making them when I arrived. As the owner was packing my freezer pack Erin was cutting the deli meat. I ordered one pound of turkey deli meat for $7.99. He asked me how I wanted it cut and I said thin. He did a perfect job. I paid around $57 for everything including tax. That included 3lb ground chuck 3lb chicken tenders 3lb pork chops 3 ny strips 1 lb turkey deli meat 1 dozen jalapeño cream cheese tamales I dont think I will ever be buying meat from the grocery store again. I recommend the Picanha! Its easy and delicious! Just check youtube. Score the fat, season only with rock salt (dont get creative), grill to desired doneness. It just beat out Rib Eyes on my list. I also got the chicken fajitas and everyone love them too. These are old school butchers. They know their meat and cuts, help with questions, and greet you by name. I came for a bone in Rib eye and they didn't have it, so they convinced me to get the bone out. One of the best steaks I have ever had at home and could rival some restaurants. Sooo juicy and tender and my stomach didn't feel weighed down after we ate like it does with cheap meat. Smaller butcher shop farther down s. Fry from I-10. Great selection of meats for how compact the place is. I've tried out a lot of butcher shops around Houston and drive to Katy area from Houston because this is by far the best shop I've come across. It's a more personable type of place. I feel assured buying my steaks here or any other cut because they're knowledgeable. I can ask any of them where the meat came from and when they got it. They have a wider selection of animal to choose from. Fish to wild game to cattle. They've even given me a sample of ground lamb to try! Now for how the meat tastes cooked. Frickin awesome!!!! You know when you buy a ribeye from your average grocery store and you go through the whole 9 of marinating and prepping and then cooking? And when you eat it, yeah it's alright but it's not anywhere close to "taste of Texas" quality? Well you won't have that feeling with the product from here. I can buy my bone in or boneless ribeye, NOT marinate it, and prep it that day, and then cook, and it will still taste 10x better than an heb or Kroger steak. All it needs is a little olive oil, some salt and pepper, and that's it. It's so good you don't have marinate it. It's still way more tender than anything else I've tried. If you're coming from Houston, more than worth the drive! If you're in Katy/cinco ranch area, oh what a gem you have!!!!! read more

Could there be better meat anywhere else. Probably not. Custom cuts. We wanted 1.5 inch ribeyes. We didn't get there early enough to be able to get 6 ribeyes so we were offered thick sirloins. I have never had a better sirloin. The ribeyes were great too but I could definitely live on Meat Master's sirloins (especially if I had a limited meat budget.) read more

What a wonderful find, after moving to the Katy/Richmond area. Marvin the owner pleasantly greeted me after I drove by and saw that they carry fresh seafood. I went in and checked out to see what they had available. All fish is frozen in sealed freezer packs, but it was my luck that he was receiving Wild Scottish Salmon on Monday. I placed my order and returned today and picked up a beautiful piece for our Veteran's Day dinner. I also purchased free range, cage free eggs. The meat looked amazing and he has such a passion for his business and customers. A very hospitable business owner that will only provide quality products for his customers.
