In 1926, Alelaida "Mama" Cuellar's tamales were a massive hit at the county fair. Two years later, they opened their first restaurant in Kaufman, TX. The 11th opened in Six Flags Over Texas and is credited with introducing Mexican food to the American masses. In 1940, Mama Cuellar's children opened the first El Chico Cafe in Dallas, TX. Susan was my outstanding service professional for the meal. I asked Susan for an order of their Chorizo Tacos, a Grande Pollo Burrito and a side of chips and salsa. Susan brought my order out in no time and after snapping a few pics, I got to work. I always wonder if cooks smell the ingredients before they start using them OR do they smell them, realize they are not so fresh anymore, and think the dining public won't notice? Either way, this cook deserves strong jobation for this dish. The Chorizo meat was not good; it wasn't rancid, but if you opened the walk-in, I wouldn't be surprised if it was seen beating up the tomatoes as it was undoubtedly turning bad. Moving on to the Grande Pollo Burrito - the hero of this meal. Even though the chicken was a tad on the rubbery side (my guess is heated up in the microwave, but I could be wrong), the rice, beans and other fillings were excellent. Our server was attentive and other servers grabbed stuff for us. A fourth star is coming if they can figure out the seasoning on the potatoes.
