This is a newly opened noodle shop currently in its soft opening. I walked in with an "it's worth a shot" mindset, and ended up pleasantly surprised.
Humans first domesticated wheat in the Fertile Crescent (modern-day Middle East). The birth of noodles dates back roughly 4,000 years, with the world's earliest physical evidence discovered at the Stone Age Lajia ruins in Minhe, Qinghai, China. For thousands of years after wheat was first domesticated, humans had not yet mastered the techniques of flour fermentation or pulling and cutting noodles; wheat grains were mostly boiled into porridge or steamed whole, resulting in a rather poor texture. Noodles only truly reached the everyday table during the Song Dynasty (10th-13th century AD). As urban commercial culture flourished and flour-milling techniques matured, noodles broke through class barriers, leading to the rise of noodle shops, diverse noodle dishes, and their widespread popularity as a daily staple for ordinary households.
The ambiance is fantastic. The walls are lined with advertisements for their signature items--exceptionally well-designed, with clear themes and comfortable color palettes that instantly whet your appetite. The tables, chairs, and overall dining area are impeccably clean. The staff are warm and welcoming, providing bilingual service, guiding us through the ordering process, and making thoughtful recommendations--all with genuine smiles, easily surpassing industry standards.
Today, we ordered the Beef Short Rib Noodles and the Braised Beef Noodles. Braised beef noodles typically fall into two categories: Sichuan/Taiwanese-style (dark, rich broth), which emphasizes heavy oils, rich sauces, numbing spicy flavors, or a deep, sweet-and-spicy profile; and Suzhou/Zhejiang-style (lighter/amber broth), common in Southern China, which focuses on preserving the natural taste of the ingredients with light soy sauce, Shaoxing wine, and a touch of sugar for a clean, non-greasy soup base. This shop serves the latter. The flavor isn't overly heavy, the seasoning is perfectly balanced, and the beef cuts are large, tender, and deeply flavorful. You can customize the noodle thickness, and they are hand-pulled and cooked to order in generous portions--offering absolute value for money.
The two cold side dishes--chicken feet and beef shank--were also outstanding. I really hope this spot continues to thrive. read more
