Well this is embarrassing. It took a friend visiting from out of town to learn that Bird Dog Baking…read morehad a permanent home on a prominent corner of Ypsi... for years. Even worse, it's amazing. And I'm not one to gush over bakeries. And this bakery does it all. Naturally leavened breads, sweet pastries, savory baked goods, and great coffee all in a clean, well lit, charming, and friendly space. While I have had BDB's rye teacake at Argus in the past, I had not delved deeply into their full line of products. This changed last week when I popped in and fell in love with their buckwheat financier, spelt scone with braised collards, cheddar, and bacon, and their Ypsi sour loaf. Here's the bottom line: the flavors and textures are just freaking fabulous. Across the board. Financiers, scones, and bread all share the same praise. Remarkable crunchy crusts, juxtaposed with tender interiors, and flavor that just goes on and on. Brand new fan. Well worth the drive out to Ypsi. I think I found my new favorite hangout with those big big windows, easy weekday parking, and free wifi. My hope is to get there early enough sometime to get a hot baguette out of the oven, or some other loaf when it is still warm. Hot bread and good butter is the best food combination on Earth. I'm ready to throw down in defense of those words. I suspect when I get that timing figured out, Bird Dog Baking might be able to squeeze its way into the top spot of my greatest culinary experience of all time. But I'm a simple man, with simple tastes... even if I have almost impossibly high standards. Oh yeah, they also are seriously into local grains, using a wide variety of lesser known grains, and all kinds of other super cool and nerdy food stuff. But you don't have to know any of that to fall in love with the spot and the culinary team behind it. Just go, eat, and enjoy.

But would I go out of my way to come back for another cinnamon pastry or pain au chocolat? The answer is yes, if a couple things were improved. The pastries themselves I found to be a bit dry, but they had decent flavor. The cakes/mini desserts were good, though personally I am not a big fan of cream, so they weren't my favorite. I asked for my pastry to be warmed, but when I got it was barely over room temperature. But the BREAD. The bread was DELICIOUS. It had a perfect bake and fluffiness, and it was bursting with flavor. I recommend the zaatar or leek and cheese loaf. Both were amazing. I could definitely eat an entire one The drinks are also great as well. We got a black coffee and iced matcha and both tasted good. Overall, if you are looking for a cafe/patisserie with amazing ambience, kind employees, decent pastries, adorable cakes, delicious bread, and great drinks, I would certainly recommend Cannelle to you.

Next time I do think I will try the honey wheat bread as it might accompany the veggies a little better than the Rye bread did. They have beverages available as well as specialty coffees and coffee drinks. I had no idea they served breakfast but it appears they have about four different breakfast sandwich choices. Ok- get ready for all the goodies! There are four types of muffins, six kinds of cookies including a couple of my favorites raspberry filled shortbread and oatmeal chocolate chip walnut! They all sound delicious they also have something called a Trek Bar and I think it's some kind of a health bar maybe with extra protein or something. The case of macarons was beautiful , multicolored rows of well labelled flavors. We each made some selections and ordered some drinks. Our hosts ordered a large French press pot to share. I had time to speak with staff about the last k of space for baking and how they arrived at so many flavors. They do not bake onsite but receive frozen shipments from the main bakery in Grand Rapids as handiest the Holland, Michigan store. They defrost enough each for each day so they never run out of flavors. They were some of best I have ever had. Nothing like what you might find in the bakery section of a grocer. This is an historic residential building retrofit with a nice conversion to retail without losing its charming brickwork. I will definitely return when next in Ann Arbor.

I'm also confused by the macaron flavors, as they aren't tea-inspired. I would go to TeaHaus over this extension, as their tea is good and they have seating. Gelato - very dense and milky. A medium (2 scoops) is $4. I tried the strawberry green tea and an earl gray with lavender shortbread, and both mostly just tasted like milk - the flavors are accurate, but they're very weak and difficult to detect. The caramel and black tea with sea salt had a mild caramel taste but no salt. They do offer samples. Macarons ($2.25 each) - flavors are good but shells need work. They're really big (about 2.5" in diameter), and the rotating flavors are often fun and creative. Le Bon Macaron has better shell quality, but the flavors here are better. Compared to when I first tried them 3 or 4 years ago the macarons have improved, but out of the ones I tried recently only one (chocolate malt in July) was decent. Quality is really hit or miss depending on the batch you happen to get. -raspberry key lime (August) - really sugary with a weak lime flavor -bubblegum (July) - tasted very much like bubblegum but the shells were very crunchy and overbaked, and there were huge air pockets -superman (July) - too chewy and soft -brown butter pecan (July) - good flavor but shells were dry and too crunchy, and the buttercream was very stiff and buttery
